VEGAN TACO PIE
This irresistible, decadent, and wholesome Vegan Taco Pie is bringing all the must haves of layer plant-powered goodness.

Steps:
- Preheat the oven to 400 F.
- Line the bottom of a small casserole baking dish (or an 8-inch spring-loaded cheesecake pan) with parchment paper.
- Place the cashews into a small bowl, cover with boiling water and soak for 15 minutes, or place the cashews into a small stockpot and boil for 10 minutes, drain off the water, then place them into a high-speed blender with all the remaining Sauce Ingredients and blend on high until smooth and creamy.
- While the cashews are soaking, make the Bean-Veggie Layer. Place the diced onions, bell pepper, and jalapeno into a non-stick skillet and sauté for approximately 8 to 9 minutes until tender. If the veggies start to stick splash a little water in the pan.
- Then add all the remaining Bean-Veggie Ingredients into the pan, saute, stirring constantly until heated through, approximately 3 minutes. Then remove from the stove and set aside.
- Place the tortillas onto a large baking sheet and place into a preheated 400 F oven and toast until lightly crisp, approximately 5 minutes, then remove.
- Place one 6-inch tortilla on the bottom of the spring-form pan, then take one 6-inch tortilla and cut it in half and place it on the sides to cover the bottom of the 8-inch spring-form pan (see notes below). Then take ¼ of the bean-veggie mixture and place it on top of the tortillas and spread into a thin layer. Cover the veggie layer with ¼ cup of the sauce, then repeat 3 more times, ending with sauce on top. Note: Don't worry if the sauce doesn't completely cover the entire veggie layers.
- Place the taco pie into a preheated 400 F oven and place a baking sheet over top (cookie sheet) to lock in the heat and bake for 20 minutes until heated through.
- Serve topped with shredded lettuce, chopped tomatoes, avocadoes and cilantro. Cut into wedges, enjoy!

- Preheat oven to 350 degrees.
- Cook pasta until al dente. Drain.
- Into a casserole baking dish add your elbow macaroni, black beans, corn, green pepper, tomatoes, tomato soup and taco seasoning mix. Stir the ingredients with a spoon.
- Sprinkle shredded cheese on top of the casserole.
- Add finely chopped up jalapenos on top. (optional)
- Bake for 30 minutes or until cheesy is bubbly.

- Heat oven to 400°F. Grease 9-inch pie plate. Cook ground beef and onion in 10-inch skillet over medium heat, stirring occasionally, until beef is brown; drain. Stir in seasoning mix (dry). Spoon into pie plate; top with chilies.

- In a small bowl, mash up black beans until they are a thick paste.
- In a frying pan, sauté the onion and pepper. Once cooked, add the veggie ground round and heat (do not overcook!)
- In a round casserole dish place one tortilla shell on the bottom. Spread the black bean paste over the shell then add some of the "meat" mixture. Top with cheese and another tortilla. Continue layer until bean and meat mixture is used up.
- On the top tortilla add the salsa and spread around. Sprinkle with cheese and green onion.
- Bake at 375 degrees for 15-20 minutes, or until cheese is melted.
- Serve with salsa and sour cream.
MEATLESS TACO PIE
I got the idea for this from a recipe in a recent issue of Parents. I changed the ingredients and preparation to suit my family's taste. Both kids and my husband loved it.

- Preheat oven to 425 degrees farenheit. Add the pintos, salsa, tomato sauce, garlic powder, and taco seasoning to food processor and process until mixture is creamy.
- Pour into a 2qt casserole and bake 30 minutes or until heated through.
- Meanwhile mix cornbread ingredients in a medium bowl, remove casserole and spoon cornbread mixture over top of bean mixture and return to oven to bake an additional 15 minutes or until top starts to turn golden brown.
- Remove from oven and serve with shredded cheese.
- The rest of my family does not like chunky food, thats why I did this in a food processor. If you like a chunky mixture (as I do), feel free to simply mix all ingredients and bake as is, without processing.

- Preheat the oven to 400 degrees F. Heat the vegetable oil in a large skillet over medium-high heat. Add the tortillas and cook, flipping a few times, until golden, about 3 minutes. Remove with tongs and transfer to a paper towel-lined plate to drain. Add the onion to the skillet and cook, stirring, until soft, about 3 minutes. Add the garlic and cayenne and cook 30 seconds. Add the pork and 1/4 teaspoon salt and cook, breaking up the meat, until browned, about 4 minutes. Stir in the tomatoes, chiles and corn. Bring to a simmer and cook until slightly thickened, about 3 minutes. Season with salt. Remove from the heat and stir in the cilantro. - Cook potatoes in boiling salted water until tender, about 20 minutes.
- Drain potatoes and mash as usual.

- Lay crescent dough flat on the bottom of a square cake pan and bake according to package directions.

This has always been my favorite taco pie. I lost the recipe and naturally searched for it on zaar, but to my surprise, there were no taco pie recipes using a pie crust. I finally found the recipe, so here it is.

Steps:
- Bake the pie crust according to package directions.
- Preheat oven to 350.
- Brown ground beef and drain.
- Add taco seasoning, following package directions.
- Mix the beans and the salsa in a bowl.
- Spread the bean mixture in the bottom of the baked pie crust.
- Add half the ground beef.
- Top with half the tortilla chips.
- Top with half the cheese.
- Repeat ingredient layering to make a second layer.
- Bake at 350 for approximately 20 minutes, or until the cheese is melted to your liking.
- Cool for 10 minutes to allow pie to set.
- Slice and top with whatever optional toppings you would like.
