CHEESE AND TOMATO BAKED RAVIOLI
Steps:
- Pre-heat the oven to 200°c
- To make the sauce, fry the onion and garlic in a splash of olive oil until soft and translucent then add the tomatoes, stock, Balsamic and sugar.
- Bring the sauce to a simmer then reduce the heat and allow to simmer for 10 minutes until reduced and thickened slightly. Season to taste.
- In the meantime, blanche the ravioli in plenty of salted water for a minute then drain and set aside.
- To assemble the bake, layer the blanched ravioli with the tomato sauce and sliced mozzarella.
- Place in the oven and bake for 10-15 minutes until golden and bubbling.
- Remove from the oven once baked and allow to cool for 5 minutes.
- Garnish with fresh basil and serve.

Steps:
- Sauce-In a saucepan, or crock pot, combine all ingredients.
- Heat until boiling.
- Cover, reduce heat and simmer at least 30 minutes, until flavours are well blended.
- Noodles- Mix together.
- Knead for 10 minutes or until dough is elastic.
- Add more water or flour accordingly.
- Filling- Mix all ingredients together.
- Roll out dough, cut into small rectangles, or circles.
- (I use a hunky bill's perogy maker and fill the pouches as directed.) Fill pockets with filling.
- Seal the edges with a little bit of water and pinch closed.
- (Or add a second layer of dough on to your perogy maker and use rolling pin to seal edges.) Cook in boiling water for 15 minutes.
- Serve with prepared sauce.
- Especially good with garlic bread and sprinkled with parmesan cheese.

- In a medium bowl, combine the ricotta, mozzarella, Parmesan, egg, basil, nutmeg, and salt and pepper to taste.
- Place 1 rounded teaspoon of filling in the center of each wonton wrapper.
- Brush the edges of a wonton wrapper lightly with water.
- Fold the wrapper in half, making sure all the filling remains inside.
- Seal the edges by pinching.
- Continue with the remaining filling and wrappers.
- Add salt to large pot of boiling water.
- Gently add the ravioli, and cook for about 3 minutes, or until tender, stirring gently.

- Preheat oven to 350 degrees.
- Place 1/2 of the ravioli in a greased 8x8 glass dish.
- Pour half of the sauce on and stir until mixed well.
- Make sure ravioli are spread evenly over dish.
- Place pepperoni slices in a single layer over ravioli and sauce.
- Sprinkle parmesan cheese evenly over entire dish.
- Place remaining ravioli in single layer on top of cheese.

CHEESE RAVIOLI WITH VEGETARIAN " MEAT" SAUCE
I often use vegetarian crumbles as a replacement for recipes that call for ground beef. This is my attempt to mimic the meat sauce my mother's mother would make for her lasagna and ziti. This tomato sauce is really easy to put together, and can be used with ANY pasta. (I just happen to have a weakness for cheese ravioli!)

- Cook ravioli in boiling salted water for 6-7 minutes.
- In the meantime, heat olive oil over medium heat, and sauté onions and garlic and crushed red pepper until soft, about 5-6 minutes.
- Add basil, oregano, and meatless crumbles and sauté another 5-6 minutes more. The crumbles should be thawed, and get a little color on them as they mix with the garlic and onions.
- If the pan seems to get dry, add 1/4 cup of water so the crumbles don't stick.
- Add salt and pepper to taste.
- Finally, add the jar of tomato sauce and mix together.
- Cover with a lid, and let simmer on low for another 10 minutes.
- Toss sauce with cooked ravioli, and serve with grated cheese.

- In a large frying pan, brown up the beef, garlic and onion with the seasonings on medium high heat until done. Place beef in food processor if you like for finer beef. Fold in the cheese and mix. Place 1 wrapper down and run egg wash along the edges. Put a teaspoon of filling in the middle and top with another wrapper and seal the edges together. Boil for 4 minutes in lightly salted water.
- Preheat oven 450°F.
- In a roaster, add the grape tomatoes and the cloves of garlic (leave on the skin), coated in olive oil and roast in the oven for 20 minutes.
- Take the garlic out of the skins and mash it with some salt in a bowl. Take some of the water your pasta is cooking in and stir the garlic into the water with a fork to break it up.
- Add the tomatoes and mash it all up. Add in seasonings mix well, but really you add in any herbs you prefer. Slowly add in some water, how much water you add will determine how thick you want your sauce!

- Season raw meat with oregano, basil and salt to taste.
- Brown in microwave (3 minutes on HIGH, chop and stir, another 3 minutes on HIGH).
- Drain meat.
- Pour sauce over browned meat.
- Microwave on HIGH for 3 minutes.
- Bring water to a brisk boil in large pot.
- Slowly add ravioli to boiling water. Add salt if desired.

- Prepare (or reheat) tomato sauce and spread in bottom of a large, shallow baking dish. Preheat oven to 350 degrees F.
- Cook the pasta in boiling salted water for 3 minutes. Drain, rinse with cold water, and turn into the dish with tomato sauce.

- Tomato sauce: Boil water in a pot, add the tomatoes. After about a minute, when the skin starts to turn, peel tomatoes. Dice into quarters and remove the seeds from the center. Dice flesh into cubes. Heat oil in a sauce pan and add the diced onions and clove of garlic (peeled and diced). Simmer on low heat for 5 - 8 minutes until soft, but do not brown. Put in the chopped tomato flesh (or canned tomatoes), increase heat to medium and cook for 15 to 20 minutes. Mix the sauce until it becomes smooth then season with salt and sugar to liking.
- Ravioli Dough dumplings: Sift the flour on a cutting board or counter top, make a hollow in it and add salt and fresh basil. Gradually add water and knead dough, scooping flour into the hole. Do add enough water to the dough so it is pliable enough and easy to press. Knead the dough for about 15 minutes until pliable and elastic (use mixer hook if needed). Wrap with a kitchen cloth. In the mean time prepare the filling; dough should be done in about 15 - 30 minutes (after which the dough is soft yet).
- Filling: shred mozzarella into small pieces (or use store bought shredded mozzarella) and combine with the ricotta cheese, mascarpone cheese, parmesan cheese, basil and garlic.
- Cut off a piece of dough and roll them into thin patties. Use a glass to cut out circles or a pizza cutter to cut straight squares, put the about 1 teaspoon of filling into center, fold and press edges with fork to seal dough. Set on floured counter top until step is done.
