Moira Hodgson rooted this classic out of Claudia Roden's terrific cookbook, "Everything Tastes Better Outdoors," and brought it to The Times in 1987: a flourless orange and almond cake that goes beautifully with blueberries or peaches, and is the perfect thing to carry along on a picnic. Extremely moist, it consists of two seeded oranges (peel and all), ground almonds, sugar and eggs - and no flour. Baked in a hot oven, it will be done in just about an hour or so, longer if the orange pulp is extremely wet. Opening the oven door to check will not harm it.

2 large oranges
6 eggs
1/2 pound ground almonds
1/2 pound sugar
1 teaspoon baking powder

Steps:

  • Wash the oranges and simmer them, unpeeled, in water to cover for 2 hours. Cool, cut them open and remove the seeds. Puree the oranges, including the peel, in a food processor.
  • Heat oven to 400 degrees. Beat the eggs in a food processor or large bowl. Add the remaining ingredients, including the orange puree, and mix thoroughly. Pour into a buttered and floured cake tin, with a removable base if possible.
  • Bake for 45 minutes to 1 hour, or until a knife inserted in the center comes out clean. Cool in the pan before turning out.

Number Of Ingredients 15

1 1/2 pounds russet potatoes (about 2 large)
Kosher salt
2 1/2 tablespoons granulated garlic
3 teaspoons freshly cracked black pepper
1 1/2 teaspoons ground cumin
1/2 teaspoon ground cinnamon
1/4 teaspoon fenugreek
1/8 teaspoon turmeric
5 grinds nutmeg, freshly grated on a zester
1 large egg
3 scallions, sliced
1/3 cup unbleached all-purpose flour
Canola oil, for frying
3 tablespoons chopped fresh cilantro
1 lemon, cut into wedges

Steps:

  • Preheat the oven to 375 degrees F.
  • Add the potatoes to a pot and cover with 6 cups water. Season well with salt. Bring to a rolling boil over high heat and cook the potatoes until easily pierced with the tip of a sharp knife, about 9 minutes. Drain and cool, about 10 minutes. Peel and set aside.
  • Combine the granulated garlic, 4 teaspoons salt, the black pepper, cumin, cinnamon, fenugreek, turmeric and nutmeg in a small mixing bowl. Set aside.
  • Once cooled, crush the potatoes gently; the texture should be course and crumbly. Place into a bowl.
  • Thoroughly combine the egg, scallions, 1/4 cup of the flour and the spice mix in a bowl. Add to the potatoes and stir to combine. Season the remaining flour with 1 teaspoon salt and some pepper. Form the potatoes into 2 1/2-ounce patties. Sprinkle the tops and bottoms with the seasoned flour.
  • Set a large nonstick pan over medium-high heat and add 3 tablespoons oil. Once hot, fry the patties, in batches if necessary, on the first side until golden brown, about 3 minutes. Flip and place into the oven until crispy on both sides and hot through, another 3 minutes. Remove from the oven and cool slightly.
  • To serve, arrange the patties on a serving dish. Garnish with cilantro and serve with lemon wedges.

If you love coconut macaroons, you will love this dish. This recipe is incredibly easy.This recipe yields a very moist cake that is traditional in the Jordanian/ Palestinian region.This recipe is different than the traditional harissa (also known as basbousa) which is made has semolina or cream of wheat as the main ingredient. I love coconut macaroons which this reminds me of, but in a cake like form.This is always a hit when i have company.If you cannot find unsweetened coconut, use regular sweetened and reduce sugar and use about 1 1/2-1 3/4 cup for the batter.

2 cups sugar
6 eggs
2 cups corn oil
1 1/2 cups milk
2 tablespoons baking powder
1 dash vanilla
1 teaspoon lemon juice
2 cups flour
4 cups of shredded unsweetened coconut (usually found in middle eastern stores)
2 cups water
2 cups sugar
1 dash vanilla

Steps:

  • First make syrup by boiling water and sugar for about 5 to 10 minutes depending on how heavy you may want it but it shouldn't be any thicker than pancake syrup in consistency.
  • *You may also add a tsp of rose water or orange blossom to it to give more of a traditional middle eastern dessert taste (I personally can do without it so that's why my recipe doesn't call for it under the ingredients).
  • When done with that process set syrup aside to cool.
  • Start on the Harissa by combining sugar,eggs,oil,milk,vanilla,lemon juice and mix them together until blended.
  • Then add flour and baking powder to mixture and blend well.
  • Lastly you want to STIR coconut into batter.
  • Then its time to add to greased and floured pan (never a bundt pan)-- an oblong pan will do.
  • Bake for about 30 minutes at 350°F or more until a light/medium golden brown.
  • When cake is done and still hot pour syrup all over cake in pan.
  • You don't have to use all the syrup but at least 3/4 should be used on the cake.
  • Let cool, then cut in slanted squares.
  • Then remove each piece onto a tray.
  • You can garnish with a little shredded coconut on top for presentation.

2 teaspoons extra-virgin olive oil
1 large onion, finely chopped
1 teaspoon ground cinnamon
1 teaspoon ground coriander
1/4 teaspoon red pepper flakes
1 1/2 teaspoons kosher salt
Freshly ground black pepper
2 cloves garlic, minced
1/4 cup chopped flat-leaf parsley
1 pound ground lean chicken
1/4 cup plain yogurt
3 tablespoons pomegranate molasses, for brushing (see Cook's Note)
4 whole wheat buns, toasted
1 tomato, thinly sliced
1 English cucumber, thinly sliced
1 small red onion, sliced
Lettuce

Steps:

  • Heat the olive oil in a skillet over medium heat, add the onion, cinnamon, coriander, pepper flakes, 1/2 teaspoon kosher salt and season with pepper. Cook until onions are tender, about 5 minutes. Stir in the garlic and parsley and cook until garlic is fragrant, about 1 more minute. Transfer to a large bowl and let cool slightly. Stir in the chicken and yogurt until the onion are evenly mixed. Season with 1 teaspoon kosher salt and some pepper. Shape into 4 1/2-inch thick patties.
  • Cook in a nonstick skillet over medium heat until browned and cooked through, about 5 minutes on each side, or until an instant-read thermometer inserted into the sides of the burgers registers between 165 and 170 degrees F. Brush burgers with the pomegranate molasses and set aside to rest for 5 minutes. Serve on toasted buns with fixings.

Sieve in dry ingredients and ½ tsp sea salt, beat to just combine, then transfer to a large bowl and stir in light fruit mixture and apricots to combine. Divide among six 9cm-square cake tins, buttered and lined with baking paper, filling to 1cm below rim (there may be a little mixture left over). Cover tops tightly with a double layer of baking paper and tie with kitchen string, then cover with foil and bake until an inserted skewer withdraws clean (1-1½ hours). Stand in tins for 10 minutes then turn out and drizzle with rum. When completely cool, cakes can be wrapped in foil and stored in an airtight container for up to 3 months (see note).
  • For orange-blossom meringue, stir sugar and 180ml water in a small saucepan over medium-high heat until sugar dissolves, bring to the boil and cook until syrup reaches 116C on a sugar thermometer (8-10 minutes). Meanwhile, whisk eggwhite and a pinch of salt in an electric mixer until soft peaks form (2-3 minutes), then, whisking continuously, gradually add sugar syrup and whisk on high speed until bowl is just warm to touch. Gradually add butter, whisking to combine before adding more, then beat until well combined (4-5 minutes; if mixture curdles, keep whisking until mixture comes back together). Add orange-blossom water and whisk to combine. Spoon meringue over tops of cakes and stand until set. Serve topped with cedro, clementine and pistachios.
