This recipe has fed not only my own family, but many neighborhood kids! They come running when I make this supper. It's one of those things you throw together after work on a busy day because you know it works. -Julie May, Hattiesburg, Mississippi

3 cups uncooked egg noodles
1 tablespoon olive oil
1 package (12 ounces) frozen fully cooked Italian meatballs, thawed
1-1/2 cups beef broth
1 teaspoon dried parsley flakes
3/4 teaspoon dried basil
1/2 teaspoon salt
1/2 teaspoon dried oregano
1/4 teaspoon pepper
1 cup heavy whipping cream
3/4 cup sour cream

Steps:

  • Cook egg noodles according to package directions for al dente; drain., Meanwhile, in a large skillet, heat oil over medium-high heat. Brown meatballs; remove from pan. Add broth, stirring to loosen browned bits from pan. Add seasonings. Bring to a boil; cook until liquid is reduced to 1/2 cup, 5-7 minutes., Add meatballs, noodles and cream. Bring to a boil. Reduce heat; simmer, covered, until slightly thickened, 3-5 minutes. Stir in sour cream; heat through.

Comfort food! Easy to prepare and better to eat. Especially good on cold, wintery nights that requires something a little heavier.

Number Of Ingredients 18

1 lb ground turkey
1 egg
1/4 cup minced onion
1/2 cup breadcrumbs
2 minced garlic cloves
3 tablespoons butter
1 small onion, finely chopped
1 lb mushroom, caps only, thinly sliced
1/2 cup beef broth (I use Better Than Bouillon)
1 tablespoon Dijon mustard
1/4 cup heavy cream
1/2 cup sour cream
2 teaspoons flour
2 tablespoons minced fresh dill or 1/2 tablespoon dried dill
2 tablespoons minced parsley
1/4 cup white wine
salt & freshly ground black pepper
8 ounces medium egg noodles, cooked

Steps:

  • Heat large non-stick skillet over high heat and sear meatballs on all sides, for about a minute. Remove to a plate.
  • In a clean wide skillet, heat butter. Sweat onions and add mushrooms and sauté over medium heat until deep golden, about 20 minutes.
  • While this is cooking, blend broth, mustard, heavy cream and sour cream together. Lower heat.
  • Add flour and cook stirring for a minute.
  • Whisk in liquids, and any meat juices and simmer, without boiling until sauce thickens, about 5 minutes.
  • Return meatballs to sauce and heat, without boiling until meat is warmed through. Season to taste with salt and pepper.
  • Stir in dill, wine and parsley and spoon over noodles.

This is an easy, delicious recipe for weeknight meals. Use one batch of recipe #371193, frozen meatballs from the supermarket or substitute your own meatball recipe. Serve with egg noodles or mashed potatoes.

35 precooked meatballs
1 tablespoon vegetable oil
1 onion, chopped
3 cups mushrooms, sliced
1 teaspoon dried thyme
1/2 cup beef broth
1 tablespoon Dijon mustard
1/3 cup sour cream
2 teaspoons cornstarch

Steps:

  • In a large skillet, heat the oil over medium heat.
  • Cook the onion, mushrooms and thyme, stirring occasionally, until tender and the liquid is evaporated, about 8 minutes.
  • Stir in the beef broth and mustard and bring to a boil.
  • Reduce the heat and simmer for 5 minutes.
  • In a small bowl, whisk together the sour cream, 1 tablespoon water and the cornstarch.
  • Whisk into the sauce.
  • Add the meatballs and simmer until the sauce is thickened, about 2 minutes.

  • Melt the butter in a large non-stick pan over medium heat. Add the mushrooms, onions, salt, and pepper and cook them for 10 to 15 minutes or until the mushrooms have released their moisture. Add the garlic and cook it with the mushrooms and onions for a minute or so.
  • Sprinkle the flour over the top of the mushrooms and stir to coat them. Add the white wine and stir. As it simmers, scrape up all of the browned bits off the bottom of the pan.
  • Add th beef stock and mustard. Stir and then add the meatballs. Cover the pan and adjust the heat to medium. Simmer the meatballs for ten minutes or until they are warmed through.
  • Uncover the pan and take it off the heat. Add the sour cream and stir to combine. Serve the meatball stroganoff with noodles or rice. Garnish with chopped parsley or chives.
