This is a modified Sunset recipe and I love it. The Scotsman in my life likens it to "Stovies" ..he also gives it two thumbs up. You can substitute ground turkey for the beef if you like. While you make the brown onion gravy, cook the potatoes; boil, bake, or microwave them. If you have cold leftover cooked potatoes, plain or mashed, reheat them in a microwave oven until steaming, then measure. You can make the gravy and assemble the pie through step 5 up to 1 day ahead; cover and chill. Uncover to continue; bake about 35 minutes if chilled.

1 lb extra lean ground beef
1/3 cup finely chopped parsley
2 tablespoons Dijon mustard
1 tablespoon all-purpose flour
1 large egg
1/2 teaspoon salt
1/4 teaspoon pepper
1 teaspoon garlic powder or 1 teaspoon onion powder
1/4 cup fat skimmed de-fatted beef broth
1/2 cup dry sherry
2 1/2 cups packed peeled hot cooked potatoes
2 tablespoons butter
2 ounces low-fat cream cheese, at room temp
1/4 cup swiss cheese or 1/4 cup parmesan cheese
paprika
2 cups onions
2 tablespoons butter
2 teaspoons sugar
3 tablespoons flour

Steps:

  • In a bowl, combine ground beef. parsley, mustard, flour, egg, salt, pepper, powder and beef broth. Blend with a fork.
  • In a 4-5 quart pan over high heat, bring brown onion gravy to a boil; add sherry and reduce heat to maintain a gentle simmer. Quickly shape the beef mixture into 1 inch balls and drop into gravy. When all are in, cover and simmer until meatballs are no longer pink in the center, 10-12 minutes. With a slotted spoon, transfer meatballs (some of the onions will come too) to a bowl.
  • Boil gravy over high heat, stirring often, until reduced to about 2 cups, apprx 10 minutes. Season to taste with salt and pepper. Remove from heat and remove half to be used another time. Return meatballs and any accumulated juice to gravy, mix gently.
  • Meanwhile, in a large bowl, with a mixer or potato masher, mash potatoes with 2 TBSP butter and the cream cheese until smooth. If desired add just enough beef broth to moisten potatoes to be able to squeeze them through a pastry bag. Add cheese, salt and pepper to taste.
  • Spray a shallow 3 1/2 to 4 quart casserole with cooking spray. Spread 2/3 of the potato mixture evenly over bottom. Add meatballs and gravy. Spoon remaining potato mixture decoratively around edge of meatball mixture or spoon into a pastry bag with 1 inch star or round tip and pipe around the edge. Sprinkle with paprika.
  • Bake pie in a 400°F oven until gravy is bubbling and potatoes are browned, 30-35 minutes.
  • Brown Onion Gravy:.
  • Peel and finely chop 2 cups onions In a 4-5 quart pan over medium high heat, stir onions in 2 TBSP butter (I used 1) until richly browned, 13-15 minutes. Add 2 tsp sugar and stir for 2 more minutes. Add 3 TBSP flour and stir until browned 1-2 minutes. Remove from heat and stir in 3 cups fat skimmed beef broth. Return to high heat and stir until boiling.

libby made this for the guys when they were out in the hay fields in the 40s thru 60s .she called it shepherd pie,which makes more sense that they took this into the field than the casserole that now bears the name lol she made everything from scratch and her meatball recipe is here if you want to make it the way she did,but im doing an easier version . she probably varied the veggies for what she had on hand but the filling has to be tight when it cools because they ate this by hand cold

2 pie crusts
1 1/2 lbs frozen meatballs
2 potatoes, large, cubed
1 cup peas, frozen
1 cup coleslaw mix
3 cups beef stock
1 onion, diced
3 tablespoons sour cream
2 tablespoons flour
1 tablespoon parsley

Steps:

  • put 1 pie crust in pie pan.
  • cook potatoes in beef stock with onion and parsley.
  • when soft mix the flour into the sour cream and add to stock will be thick you want it tight.
  • in bottom of pie shell add the defrosted meatballs add peas.
  • add coleslaw mix.
  • then add potato mixture over the top.
  • top with other pie crust.
  • bake 400 for 30 minutes until golden brown.

I love shepherd's pie, but I no longer eat red meat. I came up with this to fulfill my comfort food craving. It is vegetarian and vegan. Fiance and male guest both loved it.

1 1/2 lbs potatoes, peeled and roughly chopped
1 1/2 lbs parsnips, peeled and chopped
1/3 cup plain soymilk
1 tablespoon butter
1 teaspoon garlic, minced
salt
pepper
1 tablespoon olive oil
1 medium onion, chopped fine
1 medium carrot, chopped fine
1 cup mushroom, sliced
1 cup canned peas
9 ounces soy crumbles or 9 ounces quorn pieces
2 cups vegetable stock
4 tablespoons flour
2 tablespoons vegetarian worcestershire sauce
1 teaspoon dried ground sage
1 pinch crushed red pepper flakes
pepper

Steps:

  • Preheat oven to 350°F.
  • Boil potatoes and parsnips until tender. Drain. Using a potato masher, mash potatoes and parsnips. Add soymilk, garlic, butter and mash until smooth. Salt and pepper to taste. Set topping aside.
  • Heat oil in a medium-large pan. Add onion and carrot to pan and cook on medium heat until onions are soft. Add mushrooms and meat substitute and sauté for 4 minutes.
  • In a small bowl slowly mix the flour into the vegetable stock. Add vegetable stock mixture and peas to pan.
  • Mix in Worcestershire, sage, red pepper. Cook down to a gravy like consistency. Pepper to taste.
  • Transfer filling to a oven proof dish, spread the potato parsnip mash over it.
  • Bake uncovered for 30-35 minutes.

Saw a lot of great beefy brown-gravy based dishes here at the 'Zaar, but I have a really old recipe that I want to post here that is a little different, using bechamel or white sauce. It's closer to a potato covered meatloaf with a definite taste of parsley. I originally found this many years back in a generic recipe book whose title had something to do with "1001 Recipes" from around the world. I was skeptical the first time I made it but my family just loves it - I suspect it's one of those recipes that you either really love or don't like, nothing in between. Try this when you get bored with your regular shepherd's pie.

1 1/2 cups bechamel sauce (see note)
1 medium onion, minced
1 egg, beaten
1/4 cup cracker crumb (smash crackers in a small plastic bag)
1/4 cup fresh parsley, chopped (I like fresh best, but dried will work)
1 teaspoon salt
1 teaspoon thyme
1/4 teaspoon ground red pepper
1 teaspoon vinegar
1 lb ground beef (or lamb)
4 cups mashed potatoes
1/2 cup monterey jack cheese, shredded (orig. recipe called for kefalotyri but I've never found that, any cheese will work, but jack or font)
1 teaspoon paprika

Steps:

  • Start by making Bechamel Sauce: Melt 1/4 cup butter, then whisk in 3 tablespoons flour; cook for a minute, then slowly stir in 1 1/2 cups warm milk (can microwave milk a minute beforehand to warm it). Cook this, stirring constantly till it thickens and coats spoon. Set aside till ready to use.
  • Combine 3/4 cup of Bechamel Sauce with onion, egg, cracker crumbs, parsley, salt, thyme, red pepper, and vinegar.
  • Add this sauce mixture to meat and toss with two forks to mix lightly (don't overwork meat) Put this all into a casserole dish, level off top and make a slight indent with back of spoon (just like with meatloaf).
  • Bake at 350 degrees for about 30 minutes, occasionally using a spoon to remove fat that collects in the indentation.
  • Combine potatoes with remaining Bechamel Sauce.
  • Remove meat from oven, sprinkle with the cheese, top with potatoes. Sprinkle with the paprika. Bake an additional 20 minutes.
