This is a simple weeknight recipe my grandma passed along to me. I grew up on a farm where my father was a beef producer, so we always had ground beef in the freezer. Number Of Ingredients 11

1 pound lean ground beef
1/4 cup chopped onion
2 tablespoons chopped green pepper, optional
3/4 cup crisp rice cereal
1 teaspoon salt
1/4 teaspoon pepper
1 egg
1/3 cup ketchup
3 tablespoons brown sugar
1 teaspoon dried mustard
Additional ketchup, optional

Steps:

  • Preheat oven to 375°. Coat metal muffin pan with nonstick spray. In medium mixing bowl, combine beef, onion, green pepper if desired, cereal, salt, pepper and egg. Set aside., In small bowl, stir together ketchup, brown sugar and mustard until smooth. Pour half of ketchup mixture into meat and mix until thoroughly combined. Form meat mixture into six balls and place in muffin cups. Spoon remaining ketchup mix over meatballs. Bake for 30 minutes. Remove from pan with spoon and serve.

6 ounces spaghetti
1 ½ tablespoons olive oil
cooking spray
1 ½ cups grated Parmesan cheese, divided
1 ½ cups tomato-based pasta sauce
12 (1 ounce) cooked meatballs

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally until cooked through but firm to the bite, about 7 minutes. Drain and toss in a bowl with olive oil; refrigerate until cooled, about 15 minutes.
  • Preheat oven to 375 degrees F (190 degrees C). Spray 12 muffin cups with cooking spray.
  • Toss cooled spaghetti with 1 cup Parmesan cheese. Divide spaghetti between the 12 prepared muffin cups, arranging noodles in each cup to create "nests" for the meatballs.
  • Top each "nest" with 1 tablespoon pasta sauce, 1 meatball, and 1 more tablespoon pasta sauce, respectively. Sprinkle remaining Parmesan cheese over the tops of each meatball "nest."
  • Bake in the preheated oven until pasta and meatballs are heated through and cheese melts, 20 to 25 minutes. Cool slightly before transferring muffin bites to a serving platter.

1 2/3 to 1 3/4 pounds ground sirloin
1 medium onion, cut into chunks
2 ribs celery from the heart of the stalk, cut into 2-inch pieces
1 green bell pepper
1 large egg plus a splash of milk, beaten
1 cup plain bread crumbs
2 tablespoons grill seasoning (recommended: Montreal Steak Seasoning by McCormick)
1 cup smoky barbecue sauce
1/2 cup tomato salsa
1 tablespoon Worcestershire sauce
Vegetable oil or extra-virgin olive oil
Micro-way-cool Bacon and Green Beans, recipe follows
Smashed potatoes and cream cheese, recipe follows
6 slices microwave ready-crisp bacon
One 16-ounce bag frozen green beans
A drizzle extra-virgin olive oil
Salt and pepper
2 1/2 pounds small red potatoes or baby Yukon gold potatoes
1/2 cup half-and-half or whole milk
8 ounces plain cream cheese or veggie cream cheese, cut into pieces
10 chives or 2 scallions, chopped or snipped with kitchen scissors
Salt and pepper

Steps:

  • Preheat oven to 450 degrees F.
  • Put ground beef into a big bowl. Put onion and celery into a food processor. Cut the bell pepper in half, rip out the seeds and throw them into your garbage bowl. Cut the pepper into a few pieces and add to the food processor. Pulse the processor blades to finely chop the vegetables into very small pieces then add them to the meat bowl. Add egg, beaten with milk, bread crumbs and grill seasoning to the bowl. Next, mix together the smoky barbecue sauce, the salsa and the Worcestershire sauce. Pour half the sauce mixture into the bowl with the meatloaf mix. Mix the meatloaf together with your hands. Wash up. Brush a 12-muffin tin (1/2-cup each) with vegetable oil or extra-virgin olive oil. Use an ice cream scoop to help you fill meat into a each tin. Top each meat loaf with a spoonful of extra sauce. Bake about 20 minutes. Cut open 1 muffin to test that the middle is cooked through. While meatloaf muffins bake, make green beans in the microwave. Serve meatloaf with Smashed Potatoes and Cream Cheese on the side, too.
  • Place bacon between paper towels and microwave 60 seconds on high. Cool bacon and chop or crumble up.
  • Place green beans in a bowl and drizzle with extra-virgin olive oil, salt and pepper. Cover the bowl loosely with plastic wrap and microwave green beans on high for 5 minutes, stir and cook 5 minutes more. Remove wrap and top green beans with crumbled bacon.
  • Boil potatoes until tender, 15 minutes. While the water boils and when the potatoes are cooking, you can be working on the meatloaf recipe.
  • When the potatoes are tender, drain them and return them to the hot pot to let them dry out a bit. Mash potatoes with half-and-half or milk using a potato masher. Add in the cream cheese and smash until the cheese melts into the potatoes. Then add chives and scallions and season with salt and pepper, to your taste.

I got this recipe from an Extension Homemakers cookbook. It is pretty easy to make, and everyone should have most of the ingredients on hand. It's quick and easy, and kids love them. You can top with anything including cheese.

1 tablespoon extra-virgin olive oil
1/2 cup finely chopped onion
1 clove garlic (finely minced)
1 1/2 pounds chuck ground beef
1/2 cup soft fine breadcrumbs
1 cup ketchup (divided)
1 teaspoon Worcestershire sauce
1 large egg (beaten)
1/2 teaspoon dried thyme
1/2 teaspoon dried oregano
1/2 teaspoon ground black pepper
3/4 teaspoon salt

Steps:

  • Gather the ingredients.
  • Heat the oven to 350 F. Lightly spray a 12-cup muffin pan with nonstick cooking spray or grease with shortening or melted butter.
  • In a medium skillet, heat the olive oil over medium heat. Add the onion to the pan and sauté until lightly browned and tender, about 3 minutes.
  • Add the finely minced garlic and cook, stirring, for 1 minute longer.
  • In a bowl, combine the ground beef with 1/2 cup of ketchup, breadcrumbs, beaten egg, Worcestershire sauce, salt, black pepper, oregano, and thyme.
  • Add the sautéed vegetables and mix until blended, being careful not to overmix.
  • Pack the meat mixture into the prepared muffin cups.
  • Bake the meatloaf muffins for 20 minutes.
  • Top each meatloaf muffin with about a tablespoon of the remaining ketchup. Return to the oven and bake for about 5 to 10 minutes longer.
  • Cook until an instant-read thermometer registers at least 160 F when inserted into the center of a muffin.

2 pkg seamless crescent dough
1/2 c marinara sauce
12 frozen meatballs, defrosted and halved
2 oz fresh parmesan cheese, finely grated

Steps:

  • 1. Preheat oven to 375. Unroll crescent sheet and cut into 24, total, rectangles. Set rectangles into wells of an ungreased, nonstick, mini muffin tin.
  • 2. Spoon 1 teaspoon of marinara sauce into each well. Top with 1/2 meatball and fold crescents over the top.
  • 3. Bake at 375 for 12 minutes. Top with grated Parmesan Cheese while hot. Serve immediately.

1 1/2 lbs ground beef
1 1/4 cups finely chopped onions
1 cup breadcrumbs
2/3 cup ketchup
1 dash hot sauce
1 dash Worcestershire sauce
2/3 cup finely chopped fresh parsley
3 large eggs, lightly beaten
1/2 teaspoon thyme
1 teaspoon salt
1/2 teaspoon pepper
barbecue sauce, for glaze

Steps:

  • Combine all ingredients in a large bowl& mix until well blended- do not over mix.
  • Place a 2 inch wide parchment strip across each mould of the muffin tin, coming up from each side by about 2 inches.
  • This will be used for unmoulding after they are cooked.
  • Using an ice cream scoop or a large spoon, generously fill each section of the muffin tin with meat, rounding the top to obtain a muffin shape.
  • Brush with BBQ sauce& bake in a preheated 350F oven for 15- 20 mins (or until meat thermometer reaches 160F), brushing occasionally with more BBQ sauce.
