BAKED FISH IN MAYONNAISE AND MUSTARD
An old recipe I have in my fish collection that's simple, fast and tasty. I've also used this with Walleye and Bass fillets.

Steps:
- Preheat oven to 400°.
- Place fish in lightly greased shallow baking dish.
- Stir mayonnaise, mustard, onion, cayenne and dill weed in a small bowl until blended.
- Spread mixture on the fish.
- Bake at 400°F for approx 20 minutes or until fish flakes easy with a fork.
MAYONNAISE BAKED FISH
Really simple recipe that even pleases the non fish lovers among us! My favorite fish to use is tilapia, but any mild, white fish will work nicely.

Steps:
- Preheat oven to 400°F.
- Place fish, in a lightly greased 9x13 baking dish.
- In a bowl, combine mayonnaise, butter, onion, cheese, lemon juice, Old Bay, and pepper. Mix until a thick paste is formed.
- Spread mixture evenly over fish filets, then top with bread crumbs.
- Bake for about 10 minutes, or until fish is flaky.
- To finish cooking, place fish under the broiler, for another 2-3 minutes, or until fish is golden brown.

Steps:
- Preheat oven to 325.
- Line 8x10" dish with foil.
- Place fish in pan, sprinkle with seasonings.
- Use a pastry brush to sparingly coat tops and sides of fillets with mayonnaise.
- top with generous sprinkling of paprika.
- Bake uncovered for about 20 minutes, until fish flakes when touched with fork.
- Serves 4.
- Note: No need to turn while baking.
- any amount may be prepared by adjusting size of pan.

MAYONNAISE BAKED FISH RECIPE
Steps:
- Preheat the oven to 400°F.
- Spray a baking dish with non-stick cooking spray.
- Lightly brush the fish with the olive oil or melted butter.
- Mix together the rest of the ingredients, except the panko, to make a paste. Spread half on each fillet. Press half of the panko on evenly on top of each fillet.
- Bake for about 10 minutes, just until fish is opaque.
- Turn on the broiler and finish for 2 minutes, until panko is golden brown and mayonnaise has puffed a little.
