CHEWY SUGAR COOKIES

I love sugar cookies that are crisp on the outside and very chewy on the inside. Do not try to roll these cookies out, they are meant to be shaped or dropped. This recipe can easily be made into snickerdoodle cookies by rolling the dough in cinnamon-sugar before baking.

2 ¾ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
1 ¼ cups margarine
2 cups white sugar
2 eggs
2 teaspoons vanilla extract
¼ cup white sugar for decoration

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). In a medium bowl, stir together the flour, baking soda, and salt; set aside.
  • In a large bowl, cream together the margarine and 2 cups sugar until light and fluffy. Beat in the eggs one at a time, then the vanilla. Gradually stir in the dry ingredients until just blended.
  • Wrap dough with plastic wrap and chill for 30 minutes to 1 hour.
  • Roll the dough into walnut-sized balls and roll the balls in remaining 1/4 cup of sugar. Place cookies 2 inches apart onto ungreased cookie sheets and flatten slightly.
  • Bake for 8 to 10 minutes in the preheated oven, until lightly browned at the edges. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

3 1/2 cups flour
1 1/4 teaspoons baking soda
1 1/2 teaspoons baking powder
3/4 teaspoon salt
1 1/4 cups unsalted butter
1 1/4 cups dark brown sugar
1 cup sugar
2 tablespoons sugar
2 large eggs
2 teaspoons vanilla extract
1 (10 ounce) bag ghiradelli chocolate chips

Steps:

  • Preheat the oven to 350 degrees.
  • Combine flour, baking soda, baking powder and salt. Mix to combine and set aside.
  • Using paddle attachment on mixer, cream butter and sugars together just until blended.
  • Add eggs, one a time, mixing well after each addition.
  • Add the vanilla.
  • Put mixer on low speed, and add in dry ingredients.
  • Mix until just combined. Do not overmix.
  • Stir in chocolate chips by hand gently.
  • It's best to make bigger cookies for the right texture - so I would recommend using 4 Tablespoon size scoop to form your cookies.
  • Place on cookie sheet and bake for 15-17 minutes. I like mine to look a little undercooked in the middle, then let them finish cooking on the cookie sheet for a few minutes while they cool. Then move them to a cookie rack or plate to keep cooling.
  • If you are freezing these cookies: Form into balls, and freeze on a cookie sheet. After frozen remove and add to a ziploc freezer bag. They will last for about a month in the freezer. To bake just take out and bake as directed, adding a few extra minutes of baking time.

4 cups sifted all-purpose flour
2 1/2 cups sugar
1 1/2 cups nonfat dry milk powder
5 1/2 teaspoons baking powder
1 1/2 teaspoons salt
1/2 cup butter or 1/2 cup margarine, melted
1 egg, lightly beaten
1 teaspoon vanilla
1/2 cup butter or 1/2 cup margarine, melted

1 cup semi-sweet chocolate chips
1/2 cup coarsely chopped walnuts (optional) or 1/2 cup pecans (optional)

Steps:

  • In a large bowl, combine all the ingredients.
  • Sift the mixture twice.
  • Store in a tightly covered, labeled container for up to 3 months in a cool, dry place.
  • For Sugar Cookies use: Preheat the oven to 350°F.
  • In a large bowl, combine all ingredients.
  • With lightly floured hands, shape the dough into 1" balls; arrange them about 2" apart on 2 lightly greased 13" X 9" baking sheets Bake for 12-15 minutes or until golden.
  • Let cool for 1-2 minutes on the baking sheets; using a spatula, transfer to wire racks to cool completely.
  • The cookies can be stored in a tightly covered container at room temperature for up to 1 wk.
  • For Chocolate Chip Cookies use: Preheat the oven to 350°F.

  • Stir in chocolate chips and nuts, distributing them well.
