Got this off the web somewhere and modified it. It's the best barbecue sauce we've ever had, hands down! Adjust the cayenne to taste, we like it HOT!

1/2 cup dark brown sugar, firmly packed
2 tablespoons chili powder
1 tablespoon black pepper
2 teaspoons sage
1 teaspoon ground allspice
1 teaspoon garlic granules
1 teaspoon salt
1/2 teaspoon ground cloves
1/2 teaspoon cayenne
1 cup white vinegar
1/2 cup honey
2 tablespoons Worcestershire sauce
2 tablespoons soy sauce
1 (32 ounce) bottle ketchup

Steps:

  • Combine all dry ingredients in a nonreactive saucepan. Blend in the vinegar, honey, Worcestershire sauce, and the soy sauce. Bring the mixture to a boil.
  • Stir in the ketchup, being careful that the mixture doesn't pop and splatter. Reduce the heat and simmer for 30 minutes, stirring occasionally.
  • If canning, pour sauce into warm sterilized jars and process in a water-bath canner for 5 minutes. Otherwise, put into containers with tight-fitting lids and store in refrigerator.

Memphis BBQ sauce works as glaze and coating to preserve the natural juices and flavors of the meat. All the sauce does in enhance the meat and make it even more addictive to eat.

1 cup ketchup or tomato paste
3 TBSP Worcestershire sauce
3 TBSP mustard, yellow
1/2 cup white vinegar
1/4 cup brown sugar
Onion powder to taste
1 TSP Paprika
1 TSP Cayenne pepper
½ crushed salt and pepper mix

Steps:

  • After combining all ingredients, and whisking enough to mix them well, add them to a saucepan.
  • This sauce is best eaten warm.
  • All ingredients will have a different consistency and water content that gets released upon cooking.
  • All of this becomes balanced after you heat up all the ingredients over medium-low heat.
  • Keep stirring for 10 minutes on low heat.
  • Immediately remove the sauce from the heat and let it cool in a separate container.
  • Refrigerate the sauce if not using right away.
  • Reheat upon using.
  • Memphis BBQ Sauce is sweet, sticky, and smokey.
  • Pair your Memphis BBQ plate with a side dish of a mild flavor that does not distract from the key ingredient.

  • 1. Heat a saucepan over medium heat, then add the fat. Once the fat has coated the pan and begins to shimmer, add onion and cook until soft and translucent, about 6–8 minutes. Add the garlic and continue to cook over medium heat until the onion has started to brown and the garlic has started turning crisp, about 3 minutes more.
  • 2. Add the brown sugar and cook, stirring frequently until the sugar melts and starts to form a glaze, about 2–3 minutes.
  • 3. Stir in the apple cider vinegar, ketchup, paprika, mustard, salt, and pepper. Bring to a simmer and cook for 3–5 minutes, or until the sauce has thickened slightly, then add the Worcestershire sauce and simmer for 1 more minute.
  • 4. Transfer the sauce to a blender and blend at high speed until the sauce is smooth and takes on an orange hue, approximately 1 minute. Be careful, as hot liquids are liable to splatter in a blender. Pulse once or twice before proceeding to a full blend. Transfer to an airtight container and allow to cool to room temperature. Store in a refrigerator for up to 1 month.
