1 1/4 pounds fresh or frozen yucca
1 teaspoon salt
4 tablespoons unsalted butter
6 to 8 garlic cloves, minced
1/2 cup white vinegar
1/2 teaspoon freshly ground black pepper
1 bunch Italian parsley, leaves chopped

Steps:

  • Wash and peel the fresh yucca or thaw the frozen. Place in a small saucepan, and add water to cover and 1/2 teaspoon of the salt. Bring to a boil, reduce to a simmer and cook, covered, until tender, about 30 minutes. Drain in a colander and set aside to cool.
  • Preheat the oven to 350 degrees . When the yucca is cool enough to handle, pull each root apart and remove the large fibrous veins near the center, keeping the flesh in large chunks.
  • Melt the butter in a large skillet over medium-low heat. Cook the garlic until tender but not brown. Add the vinegar, the remaining 1/2 teaspoon salt and the pepper. Bring to a boil and add the yucca. Stir and mash with a wooden spoon until a lumpy mixture is formed. Transfer to a baking dish. Cover and bake 10 minutes. Garnish with the chopped parsley and serve immediately.

6 pounds whole yucca (fresh or frozen), peeled and cut into 3-inch sections (about 5 pounds trimmed weight or 5 pounds frozen chunks)
1 tablespoon salt
1/2 cup extra-virgin olive oil
2 small Spanish onions, sliced into thin rings
12 cloves garlic, finely minced or mashed to a paste with mortar and pestle
1/4 teaspoon ground cumin
1/3 cup bitter orange juice or a mixture of lime juice and orange juice (reduce amount if a less tart taste is desired)
Salt and freshly ground black pepper

Steps:

  • Place the yucca in a large 6-quart pot. Cover with 5 quarts cold water. Add the salt and bring to boil over high heat. Lower heat to medium and cook covered until it feels tender when pierced with a fork but still keeps its shape, about 30 minutes. Be careful not to overcook because yucca can turn into a gooey paste. Turn the heat to low and leave the yucca in the hot water until ready to serve.
  • For The Mojo Sauce: While the yucca cooks, prepare the mojo sauce. Heat the olive oil until fragrant in a medium frying pan over medium-high heat. Saute the onion rings until lightly golden. Add the garlic and the cumin and saute, stirring for a few seconds, until golden. Pour in the bitter orange juice. Season with salt and pepper, to taste. Very quickly, drain the yucca in a large colander and transfer to a decorative serving platter. Cover with the mojo sauce and serve piping hot.
  • In Cuba and the Hispanic Caribbean, yucca con mojo is served alongside rice and beans and roast pork

4 lb fresh yuca (also called cassava; preferably 2 inches in diameter) or 3 lb frozen
1 3/4 to 2 1/4 cups hot milk
2 garlic cloves, minced
1 tablespoon fresh lime juice
2 teaspoons salt

Steps:

  • Trim ends from fresh yuca and peel remainder, removing all waxy brown skin and pinkish layer underneath.
  • Cut yuca into 3-inch-thick pieces.
  • Boil yuca in salted water to cover by 2 inches until tender and starting to fall apart, 50 minutes to 1 1/4 hours.
  • Drain and transfer to a cutting board. Carefully halve hot yuca pieces lengthwise and remove thin woody cores. Return yuca to pot with 1 3/4 cups milk, garlic, juice, and salt. Coarsely mash yuca, adding additional milk if desired, and serve immediately.

2 whole red snappers (about 3 lb.), cleaned
1 cup KRAFT Zesty Italian Dressing, divided
1/2 cup finely chopped cilantro
1 lb. yuca (cassava), peeled, cut into chunks
1 cup thin onion slices
1/2 cup HEINZ Distilled White Vinegar
3 cloves garlic, minced

Steps:

  • Place fish in large resealable plastic bag. Add 1/2 cup of the dressing and the cilantro; seal bag. Turn bag over several times to evenly coat fish. Refrigerate 30 min. to marinate. Meanwhile, place yuca in large saucepan. Add enough water to cover. Bring to boil on medium-high heat. Reduce heat to medium-low; simmer, uncovered, 20 min. or until yuca is tender. Meanwhile, marinate onions in vinegar in small bowl.
  • Preheat oven to 425°F. Drain onions; discard marinade. Heat remaining 1/2 cup dressing in small saucepan on medium heat 1 min. Add onions and garlic; cook and stir 5 min. or until onions are tender. Remove fish from marinade; discard marinade. Place fish in greased shallow roasting pan.
  • Bake 7 min.; turn over. Bake additional 5 min. or until fish flakes easily with fork.
  • Spoon drained yuca onto large serving platter. Mash slightly with fork, breaking up the larger pieces. Top with the onion mixture and fish.

This is a staple of Cuba and of course, now of Miami. When you are preparing this recipe be sure to remove any "woody" parts from the center. You can use the frozen yucca or cassava, in place of the fresh. Just follow the package directions but add salt and lime juice to either.

1 teaspoon salt
1 lime, juice of
6 garlic cloves, mashed
1 teaspoon salt
1/3 cup fresh lemon juice
1/2 cup olive oil
1 onion, chopped fine

Steps:

  • Place yucca in saucepan; until yucca is just covered, add salt and lime juice and bring to a boil.
  • Reduce heat, cover and simmer until tender--about 30 minutes.
  • Drain and keep warm.
  • Mash garlic cloves into salt with mortar and pestle (or use food processor).
  • Add garlic, lemon juice, and onions to olive oil in a separate pan, heat until bubbling, then pour over yucca.
  • Toss yucca & sauce "lightly" cooking to saute over medium heat; till barely brown but not CRISP!
  • Serve.
