DAD'S MASHED POTATO SALAD

6 medium russet potatoes, peeled and cut into 2-inch large chunks
3 /4 cup (1 1/2 sticks) unsalted butter, cut into small pieces
1/2 teaspoon kosher salt, or to taste
1/4 teaspoon freshly ground black pepper
Pinch freshly ground nutmeg
1/4 cup warm half-and-half
1 cup plus 2 tablespoons Miracle Whip
1/4 cup yellow mustard
3/4 cup finely chopped celery
3/4 cup finely chopped onion
2 cups finely chopped sweet pickles
1/4 cup sweet pickle juice
1/2 cup plus 1 tablespoon sugar
5 hard-boiled eggs, peeled and finely chopped
2 tablespoons chopped fresh flat-leaf parsley

Steps:

  • Cover the potato chunks with cold water in a large saucepot. Bring to a boil and cook until the potatoes are fork-tender. Drain and return the potatoes to the pot. Add the butter, salt, pepper and nutmeg. Mash with a potato masher or electric hand mixer (essentially you are making mashed potatoes), adding warm half-and-half as needed until the potatoes are smooth and creamy. You should have a little over 6 cups of mashed potatoes.
  • Add the Miracle Whip, mustard, celery, onion, pickles, pickle juice, and sugar, mixing after each addition. Stir in the eggs until combined. Chill at least 1 hour or make the night before and refrigerate. Sprinkle with the chopped freshly parsley before serving.

6 Yukon Gold potatoes
1 small sweet onion, diced
3 hard-cooked eggs, chopped
½ cup diced celery
¼ cup chopped sweet pickles
salt and ground black pepper to taste
1 cup mayonnaise
⅓ cup sweet pickle juice
1 teaspoon prepared yellow mustard

Steps:

  • Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain and transfer potatoes to a large bowl.
  • Mash potatoes with a potato masher. Stir in onion, eggs, celery, pickles, salt, and black pepper. Mix mayonnaise, pickle juice, and mustard in a separate bowl; pour over potatoes and mix well. Cover and refrigerate at least 1 hour before serving.

3.3 lbs./1.5 kg. potatoes (floury)
1/2 lbs./250 g. endive (curly)
10.5 oz./300 g. bacon (smoked)
2 cups/475 ml. milk
2 tbsp. butter
Pinch of nutmeg (freshly grated)
Salt and white pepper to taste

Steps:

  • Wash and peel the potatoes and cut into similarly sized pieces for even cooking. In a large soup pot, boil the potatoes in salted water for 20 minutes.
  • Meanwhile, wash the head of curly endive thoroughly under cool running water to get rid of all soil - you wouldn't want that gritty texture in your finished dish. Trim any coarse stems and discard any brown leaves. Spin the salad leaves dry using a salad spinner. With a sharp knife, cut the curly endive into thin strips.
  • Fry the bacon in a frying pan, until just crispy. Drain on kitchen paper and crumble into small pieces. Warm the milk in a small saucepan.
  • Drain, shake and dry the potatoes with kitchen towels before mashing with a potato masher or ricer. Working quickly, add the warm milk and butter. Season to taste with nutmeg, salt and white pepper.
  • Mix the raw curly endive through the cooked mashed potato mixture. Add the bacon, mix again, and serve piping hot. Tips:

Everybody loved Mom's mustard potato salad. Hers was different than most because she always used mashed potatoes. A few years ago we discovered that it tastes just as good when using instant mashed potatoes. This is so easy, and it will keep for several days in the fridge. 8 servings instant mashed potatoes (prepare according to package instructions)
2 tablespoons onion flakes
6 hard-boiled eggs, chopped
1 teaspoon salt
1/4 teaspoon pepper
2 tablespoons prepared yellow mustard
1 tablespoon vinegar
1 cup relish sandwich spread (Kraft Original Sandwich Spread)
1/2 cup sweet pickle relish

Steps:

  • Add onions to liquids for instant potatoes. Cook according to package instructions.
  • While potatoes are still warm, add the remaining ingredients. Mix well.
  • This dish can be served warm or cold.
  • If this is too "whangy" for your taste, cut the vinegar and mustard in half.

Just do not leave it out any longer then you would regular potato salad. Served warm, it goes great with ham or fried chicken.

5 red potatoes
5 Yukon Gold potatoes
2 tablespoons butter
salt and pepper to taste
½ cup mayonnaise

½ cup sour cream
1 stalk celery, finely chopped

1 green bell pepper, chopped

Steps:

  • Cube potatoes, if desired you may peel them. Place potatoes in a large saucepan and cover with water. Cook over medium heat until potatoes are tender. Drain and place cooked potatoes in a large bowl.

1 tablespoon vinegar
2 tablespoons sugar
1 cup Miracle Whip
1 small onion, chopped

Steps:

  • Peel cut and cook potatoes as for mashed potatoes.
  • When done drain well, mash.
  • Add relish, chopped onion, celery, salt and pepper.
  • In small bowl mix vinegar and sugar, mix until sugar is dissolved, add Miracle whip and mix well.
  • Pour into mashed potatoes, mix throughly If the potatoes seem too dry add more Miracle whip.
  • Fold in eggs.
  • Refrigerate overnight.

My husband loves his mom's endive dressing, so I asked her to share the recipe with me. When I make this salad, I usually serve it with boiled potatoes and sliced smoked ham.

1/2 pound bacon strips, diced
1 medium onion, chopped
2 tablespoons sugar
1-1/2 teaspoons cornstarch
1/2 teaspoon salt
2 tablespoons cider vinegar
1 cup milk
1 egg, lightly beaten
3 bunches curly endive, torn (about 12 cups)
3 hard-boiled large eggs, sliced

Steps:

  • In a large skillet, cook bacon over medium heat until crisp. Remove to paper towels; drain, reserving 1 tablespoon drippings. Set bacon aside. Saute the onion in the drippings until tender. Add the sugar, cornstarch, salt and vinegar; stir until smooth. Gradually stir in the milk until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat. , Stir a small amount of hot mixture into egg; return all to the pan; stirring constantly. Bring to a gentle boil; cook and stir 2 minutes longer. Remove from the heat., In a large salad bowl, combine the endive, hard-boiled eggs and reserved bacon. Add desired amount of warm dressing; toss to coat. Refrigerate leftover dressing.

Cooked endive is comfort food, and like raw endive in a salad, it goes very well with walnuts and walnut oil.

1 pound Belgian endive (about 6 endives), quartered lengthwise
Salt to taste
1 pound red potatoes, quartered
1/4 cup broken walnut pieces
2 tablespoons chopped flat-leaf parsley
1 teaspoon fresh thyme leaves, chopped
2 tablespoons walnut oil
1/2 cup grated Gruyère cheese (2 ounces)
Freshly ground pepper to taste

Steps:

  • Preheat the oven to 400 degrees. Oil a two-quart baking or gratin dish. Bring a large pot of water to a boil. Fill a bowl with ice water. When the water comes to a boil, salt generously and add the endives. Blanch for two minutes, and transfer to the ice water. Cool in the ice water, then drain and dry on paper towels. Cut crosswise into thirds, and transfer to a bowl.
  • Steam the quartered potatoes for 10 to 15 minutes until tender. If the potatoes are large, cut the quarters in half. Add to the bowl with the endives, along with the walnuts, parsley, thyme, walnut oil and half the Gruyère. Season with salt and pepper, and toss everything gently together. Turn into the prepared baking dish, making sure to scrape all of the contents of the bowl into the dish. Sprinkle the remaining Gruyère over the top.
  • Place in the oven and bake 20 to 25 minutes, until the edges of the vegetables are browned and the gratin is sizzling. Remove from the heat and serve hot or warm.
