Mediterranean ingredients flavor these little meatballs. Yogurt sauce with mint and lemon makesa refreshing accompaniment.

1 cup Greek yogurt (2 percent)
1 medium cucumber, peeled, seeded, and grated
3 tablespoons finely chopped fresh mint
1 teaspoon finely grated lemon zest, plus 2 teaspoons fresh lemon juice
Coarse salt and freshly ground pepper
1/2 recipe Ground-Meat Mix (about 1 3/4 pounds)
3/4 cup finely crumbled feta cheese
1 tablespoon finely chopped fresh oregano
1/4 teaspoon crushed red-pepper flakes
Extra-virgin olive oil, for hands and baking sheet

Steps:

  • Make the dipping sauce: Mix together yogurt, cucumber, mint, lemon zest and juice, and 3/4 teaspoon salt in a medium bowl; season with pepper.
  • Make the meatballs: Gently mix together meat, feta, oregano, and red-pepper flakes in a bowl; do not overmix. Form mixture into thirty 1 1/4-inch meatballs. (You may need to oil your hands to prevent mixture from sticking.) Slide 5 meatballs onto each of 6 metal skewers.
  • Preheat broiler, with rack in top third of oven. Lightly brush a rimmed baking sheet with oil. Broil skewers on baking sheet until just cooked through and deep golden brown, about 8 minutes. Serve with dipping sauce.

1 cup grated onion
1 garlic clove, minced
1 cup olive oil
1 cup day old bread, small diced and soaked in milk
1 pound ground beef or lamb
1 egg
1 tablespoon chopped fresh oregano leaves
1 tablespoon ground coriander
1 tablespoon ground cumin
1/2 teaspoon ground cinnamon
Pinch nutmeg
1 lemon, zested
Salt and freshly ground black pepper
Flour, for dredging
12 lemon wedges, for garnish
Mint leaves, for garnish

Steps:

  • In a medium skillet, sweat onion and garlic in 2 tablespoons of olive oil over medium heat until translucent, about 2 minutes. Let cool and set aside.
  • Wring the excess milk out of the soaked bread cubes.
  • Place all ingredients, except flour and garnishes, in a large mixing bowl and combine by hand until fully incorporated. Form into little meatballs (about 1-ounce each).
  • In a large skillet, heat remaining oil over medium heat. Dredge, or roll the meatballs in flour, and fry in the skillet until golden brown, about 5 minutes. Remove from the pan and place on paper towels to drain the excess fat.
  • Place on platter and garnish with lemon wedges and torn mint leaves.

3 Tbsp finely chopped fresh mint
1 teaspoon finely grated lemon zest
2 teaspoons lemon juice

fresh ground pepper

Steps:

  • Dipping sauce: Mix yogurt, cucumber, mint, lemon zest, lemon juice and 3/4 teaspoon salt in a medium bowl. Season with pepper. Meatballs: Gently mix together meat, feta, oregano, and red pepper flakes in a bowl, do not overmix. Form mixture into thirty 1 1/4 inch meatballs. (you may need to oil your hands to keep from sticking). Slide 5 meatballs onto each each of 6 metal skewers. Preheat broiler, with rack in top third of oven. Lightly brush a rimmed baking sheet with oil. Broil skewers on baking sheet until just cooked through and deep golden brown, about 8 minutes. Serve with dipping sauce.

24 frozen Italian meatballs, thawed
2 medium red onions, cut into 1-inch chunks
3 green bell peppers, cut into 1-inch chunks
3 Roma tomatoes, quartered
1 loaf Italian bread, cut into 1-inch cubes
1/2 cup Italian dressing
1 cup freshly grated Parmesan
Fresh parsley leaves, for sprinkling
2 cups marinara sauce, warmed

Steps:

  • Preheat a grill pan over medium-high heat.
  • Divide and skewer the meatballs, vegetables and bread evenly on 8 large skewers. Brush each of the skewers all over with the dressing.
  • Grill the skewers on all sides until there are grill marks on all the ingredients and the meatballs are heated through, 8 to 10 minutes.
  • Remove the skewers to a platter and sprinkle over the Parmesan cheese and parsley. Pour the warm marinara into a bowl and serve on the side.

1/3 cup honey
3 tablespoons Dijon mustard
2 tablespoons finely chopped onion
2 tablespoons apple juice
Dash cayenne pepper
1 egg
1/4 cup dry bread crumbs
1 tablespoon minced fresh parsley
1 teaspoon Italian seasoning
1/4 teaspoon salt
Pepper to taste
1 pound ground beef
1 block (1-1/2 ounces) Monterey Jack cheese, cut into 12 cubes
12 small mushrooms, stems removed
1 medium green pepper, cut into pieces
1 medium sweet yellow or red pepper, cut into pieces
1 medium onion, cut into wedges

Steps:

  • In a saucepan, combine the first five ingredients. Bring to a boil. Reduce heat; simmer, uncovered, for 5-7 minutes or until onion is tender and sauce is slightly thickened. Remove from the heat; set aside. , In a large bowl, combine the egg, bread crumbs, parsley, Italian seasoning, salt and pepper. Add beef and mix well. Divide into 12 portions. Place a cube of cheese in each mushroom cap; shape each meat portions round a mushroom. , On six metal or soaked wooden skewers, alternate meatballs, peppers and onion wedges. Grill, uncovered, over medium heat for 3 minutes on each side. , Grill 10-12 minutes longer or until meat juices run clear, turning occasionally. Brush with reserved glaze during the last 2 minutes.

I spent a lot of time in Greece and this was by far my favorite dish. I love it served on a hot pita with marinated onions, tomatoes, and feta cheese; all topped with garlicky tzaziki sauce. I'm not sure where I got this recipe, but I've been making it for years with great success. Serve with fried calamari and French fries. Make a lot of tzaziki so there is plenty for dipping. Time to prep does not include the very important marinade time.

1 cup olive oil
1/4 cup lemon juice
1/2 cup dry red wine
1 garlic clove (minced)
2 bay leaves
1/2 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons dried oregano leaves
3 lbs lamb
4 tomatoes (cut into wedges)
2 onions (cut into strips)
1/2 lb feta cheese (cubed)
1/2 cup olive oil
1/2 cup red wine vinegar
1 garlic clove (crushed)
2 tablespoons dill (chopped)
1 teaspoon dry oregano
1/2 teaspoon salt
1/2 teaspoon pepper
2 cups yogurt
1/2 cup cucumber (peeled, seeded, grated)
2 garlic cloves (minced)
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon dried mint
1 tablespoon lemon juice
12 pita breads
2 tablespoons olive oil
1 teaspoon paprika

Steps:

  • For the marinade: Combine first 8 ingredients.
  • Cut lamb up into 1/2" thick, 1" wide, 3" long strips.
  • Pour marinade over lamb and chill overnight. Turning occasionally.
  • For the veggies: Combine the next 10 ingredients and let chill over night.
  • Skewer meat. If using wooden skewers, soak for an hour in water first. About 8 slices per stick.
  • Prepare grill. Add wood chips. Any type will do.
  • Grill until meat is done, brushing often with marinade. Meat should be brown around the edges, but still a little pink in the center. Don't dry the meat out.
  • Serve with warm pita. Guests should wrap a warm pita round the meat and pull the skewer our, then top their "taco" with marinated veggies, feta, and tzaziki.
  • For the tzaziki: Place the yogurt in cheese cloth. Twist to bind and squeeze the yogurt. Place in colander over a bowl to drain for an hour or so.
  • Peel and slice a cucumber down the middle, and spoon out the seeds.
  • Grate the cucumber. Squeeze out as much juice as you can.
  • In a bowl, mix the yogurt, cucumber, garlic, oil, salt, mint, and lemon juice. Let chill a few hours (over night is best).
  • For the pita: Buy pita flat bread (whole breads without the pocket).
  • Mix olive oil with paprika.
  • Brush each piece on both sides with a little of the olive oil.
  • Place on hot griddle and warm thoroughly (about a minute or so on each side).
  • Serve warm.

1 small onion, chopped
1/2 cup packed fresh parsley sprigs
1/4 cup fresh mint leaves
1 tablespoon minced fresh oregano
2 garlic cloves
1 teaspoon lemon-pepper seasoning
1/2 teaspoon salt
1/2 teaspoon paprika
1/4 teaspoon ground cumin
1 tablespoon vegetable oil
Hot cooked couscous
1 cup plain Greek yogurt
2 plum tomatoes, cut into wedges
2 lemons, cut into wedges
3 tablespoons minced red onion
Fresh mint leaves

Steps:

  • Place onion, parsley, mint, oregano and garlic in bowl of food processor. Pulse until minced. In large bowl, combine herb mixture, lemon pepper, salt, paprika and cumin. Add lamb; mix lightly but thoroughly. With wet hands, shape into 16 balls. In a large skillet, heat 1 tablespoon oil over medium heat. Brown meatballs in batches; drain. Remove and keep warm. Serve meatballs over cooked couscous. Top with yogurt, tomato wedges, and red onion. Garnish with mint leaves and lemon wedges.
