Hazelnut Crunch Cake with Mascarpone and Chocolate image

Provided by Giada De Laurentiis

Categories     dessert

Time 2h

Yield 8 servings

Number Of Ingredients 11

1 box chocolate cake mix
1 cup (about 4 1/2-ounces) hazelnuts, toasted and skinned
2/3 cup sugar
1/3 cup water
Two 8-ounce containers mascarpone cheese, room temperature
1 cup cream
3/4 cup powdered sugar
1 teaspoon vanilla extract
1/4 cup bittersweet chocolate chips
1 tablespoon sugar
1 teaspoon orange zest

Steps:

  • For the cake:
  • Preheat the oven to 350 degrees F.
  • Butter and flour two 8-inch cake pans. Prepare the cake mix according to package instructions. Divide the batter between the 2 cake pans and bake according to package instructions. Remove from the oven and let cool on a wire rack.
  • For the crunch:
  • Place the toasted nuts close together in a single layer on a parchment-lined baking sheet. Combine the sugar and water in a small saucepan over medium-high heat. Stir the sugar mixture until dissolved. Bring to a boil and let cook until the sugar is light brown, about 8 minutes. Let the bubbles subside then pour the caramelized sugar over the nuts. Place the baking sheet in the refrigerator and let the sugar nut mixture cool until hard, about 30 minutes. When the sugar nut mixture is hard and cool, top with another piece of parchment paper and pound into small pieces, or place the sugar nut mixture on a cutting board and cut into small pieces. Set aside.
  • For the filling:
  • Put the mascarpone cheese, cream, powdered sugar, and vanilla into a large mixing bowl. Using an electric mixer whip the cream mixture to soft peaks. Fold the Crunch mixture into the whipped cream.
  • For the topping:
  • Place the chocolate, sugar and zest in a food processor. Process the mixture until the chocolate is finely ground.
  • To assemble the cake:
  • Put 1 cake on a serving plate. Top with 1-inch of the whipped cream crunch mixture. Top with the second layer of cake and continue frosting the entire cake with the remaining whipped cream crunch mixture. Sprinkle the top and sides of the cake with the ground chocolate. Serve.

NO-COOK CHOCOLATE MASCARPONE CAKE

No-cook Chocolate Mascarpone Cake image

Had some mascarpone cheese left and didn't want to let it get so old that I would have to throw it away. Couldn't sleep and thought this "concoction" could be nice. Must say it was a success.

FLOURLESS HAZELNUT MASCAPONE CHOCOLATE CAKE (GLUTEN-FREE)

Flourless Hazelnut Mascapone Chocolate Cake (Gluten-Free) image

It gets more moist and tastes better if you make the cake on the day before, wrap with plastic wrap and store at room temperature overnight. For heart shape dusting, draw a big heart on a piece of parchment paper using a pencil and cut the heart out. Place the heart in the center of the baked cake and dust cocoa powder around it. Discard the heart paper and place the remaining paper on the cake aligning with the heart shape. Dust powdered sugar to create a white heart in the center.

Time 1h30m

Yield 1 9 inch cake, 8 serving(s)

Number Of Ingredients 13

1/2 cup unsalted butter
7 ounces dark chocolate, broken into smaller pieces (2 bars)
8 ounces mascapone cheese, at room temperature
1 cup coconut sugar
3 eggs
1 teaspoon vanilla extract
1 tablespoon rum (optional) or 1 tablespoon brandy (optional)
3/4 teaspoon salt
1/2 teaspoon cinnamon
cocoa powder, for dusting
powdered sugar, for dusting
whipped cream, and (optional) or ice cream (optional)

  • Add hazelnut meal, salt, and cinnamon and mix well.
  • Bake for about 40 - 45 minutes. Set aside and cool.
  • When the cake is cooked, remove the pan and place the cake on a cake plate.
  • Dust cocoa powder and powdered sugar using a stencil (see note above).
  • Infuse love and serve with whipped cream and/or ice cream if desired.

CHOCOLATE MASCARPONE LAYER CAKE

Chocolate Mascarpone Layer Cake image

This is probably my favorite cake recipe of all time. Light, delicious, and rich, just not so easy to make. Garnish with fresh fruit or chocolate swirls.

Time 5h45m

Yield 12

Number Of Ingredients 19

1 teaspoon unsalted butter
1 ⅛ cups chopped dark chocolate
1 cup unsalted butter
1 tablespoon instant coffee
5 large eggs, separated
⅓ cup brown sugar
1 pinch salt
5 tablespoons warm water
2 tablespoons cocoa powder
1 ⅛ cups chopped dark chocolate
⅞ cup light cream
5 ounces mascarpone cheese
1 tablespoon white sugar
1 pinch salt
1 cup chopped white chocolate
2 teaspoons gelatin powder
3 tablespoons water
⅞ cup light cream
5 ounces mascarpone cheese

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Lightly grease a springform pan with butter.
  • Place dark chocolate and butter in top of a double boiler over simmering water. Stir frequently, scraping down the sides with a rubber spatula to avoid scorching, until chocolate is melted, about 5 minutes. Remove from heat. Stir in coffee and let cool slightly, about 5 minutes. Whisk egg yolks into the chocolate.
  • Whisk egg whites, brown sugar, and salt in a separate bowl until peaks are the consistency of firm snow. Fold into the chocolate mixture. Pour into the pan and smooth the top.
  • Bake in the preheated oven until firm, about 20 minutes. Cool for 1 hour.
  • Prepare the second layer while the first layer is cooling. Mix water and cocoa powder together in a bowl. Melt dark chocolate in top of a double boiler over simmering water, about 5 minutes. Remove from heat.
  • Whisk cream, mascarpone cheese, sugar, and salt together in a bowl. Add cocoa powder mixture and melted chocolate. Pour over the first layer. Refrigerate until set, at least 30 minutes.
  • Meanwhile, prepare the top layer. Melt white chocolate in top of a double boiler over simmering water, about 5 minutes. Remove from heat.
  • Dissolve gelatin powder in water; let stand for 5 minutes. Heat in a double boiler until melted, 2 to 3 minutes. Mix into the melted chocolate.
  • Whisk cream until soft peaks form. Add mascarpone cheese and mix until smooth. Fold in the chocolate-gelatin mixture. Pour over the second layer. Refrigerate cake until firm, at least 3 hours.

CHOCOLATE CAKE WITH MASCARPONE AND PRALINE

Chocolate Cake with Mascarpone and Praline image

Categories     Cake     Chocolate     Nut     Dessert     Bake     Vegetarian     Almond     Hazelnut     Gourmet

Number Of Ingredients 18

For praline
1/2 cup whole blanched almonds
1/2 cup hazelnuts
3/4 cup sugar
1/4 cup water
For cake
3 ounces fine-quality bittersweet chocolate (not unsweetened)
1/3 cup unsweetened cocoa powder (not Dutch process)
5 tablespoons unsalted butter
1/3 cup vegetable oil
2/3 cup water
1 cup plus 2 tablespoons sugar
1 large egg
1 1/4 cups all-purpose flour
2 teaspoons baking powder
1/3 cup well-shaken buttermilk
8 ounces mascarpone cheese (about 1 cup) at room temperature
1 1/2 tablespoons sugar

Steps:

  • Make praline:
  • Preheat oven to 350°F.
  • In a baking pan toast nuts in one layer in middle of oven 10 minutes, or until almonds are lightly colored and hazelnut skins are blistered. Wrap nuts in a kitchen towel and let steam 1 minute. Rub nuts in towel to remove any loose hazelnut skins (do not worry about skins that do not come off) and cool completely.
  • Line a baking sheet with foil. In a small heavy saucepan bring sugar and water to a boil, stirring until sugar is dissolved. Boil syrup, without stirring, washing down any sugar crystals that cling to side of pan with a pastry brush dipped in cold water, until it begins to turn golden. Swirl pan until syrup is deep golden and remove from heat. Stir in nuts and pour praline onto baking sheet, spreading evenly. Cool praline completely and break into pieces. Transfer praline to a sealable plastic bag and with a rolling pin coarsely crush.
  • Make cake:
  • Preheat oven to 300°F. Generously butter a 9-inch round cake pan (at least 2 inches deep) and line bottom with wax or parchment paper. Butter paper and dust pan with flour, knocking out excess.
  • Finely chop chocolate. In a small saucepan combine cocoa powder, butter, oil, and water. Bring mixture to a boil, stirring until smooth, and remove pan from heat. Add chocolate and sugar, whisking until smooth, and transfer to a bowl. Cool chocolate mixture completely and whisk in egg. Sift flour and baking powder over chocolate mixture and whisk until just combined. Whisk in buttermilk and pour batter into cake pan, spreading evenly. Bake cake in middle of oven 45 to 50 minutes, or until a tester comes out clean, and cool in pan on a rack 5 minutes. Run a thin knife around edge of pan and invert cake onto rack. Discard paper. Cool cake completely and transfer to a plate. In a bowl stir together mascarpone and sugar. Spread mixture over top of cake and generously sprinkle with praline.

NO-BAKE CHOCOLATE CHEESECAKE

No-bake chocolate cheesecake image

What could be more decadent? A crushed chocolate digestive biscuit base is layered with two types of creamy chocolate then topped with Maltesers and chocolate buttons - and no oven needed

Provided by Becky Bowen

Categories     Dessert, Treat

Time 30m

Yield Serves 12-14

Number Of Ingredients 13

130g butter, melted, plus extra for the tin
300g chocolate digestive biscuits
150g milk chocolate
150g dark chocolate
250g mascarpone
300g cream cheese (don't use a low-fat variety)
50g icing sugar
25g malted milk drink powder (we used Horlicks)
25g hot chocolate powder
1 tsp vanilla extract
300ml double cream
150g Maltesers (100g chopped, 50g whole), plus a handful to decorate
100g chocolate buttons, roughly chopped

Steps:

  • Butter and line a 23cm springform cake tin. Blitz the biscuits in a food processor to form fine crumbs, then add the butter and blitz again. Tip the biscuit mixture into the tin and press down firmly with the back of a spoon. Chill in the fridge while you make the filling.
  • In separate bowls, melt the milk and dark chocolate over pans of gently simmering water. Alternatively, melt in the microwave in 30-second bursts, stirring between each interval until melted. Set aside to cool.
  • Use a hand whisk to mix the mascarpone, cream cheese, icing sugar, malted milk drink powder, hot chocolate powder and vanilla extract until smooth. In a separate bowl, whisk the cream, then fold into the mascarpone mixture. Add half the mixture to each of the chocolate bowls, stirring until well combined. Stir half the chopped Maltesers, whole Maltesers and buttons into the milk chocolate mixture; stir the rest into the dark chocolate mixture.
  • Spoon the dark chocolate mixture onto the biscuit base. Top with the milk chocolate mixture and smooth over the top. Chill overnight. Decorate with Maltesers before serving.
