Ingredients

3 cups rice, boiled
2 medium tomatoes, finely chopped
1/4 teaspoon turmeric powder
1/2 teaspoon chili powder
2 tablespoons oil
3 eggs, beaten
2 green chilies, finely chopped
3 tablespoons mint leaves, and
coriander leaves, finely chopped
1 large onion, finely chopped
2 tablespoons oil
salt

Steps:

Mix all the ingredients of omlette except oil and beat well. Heat oil in a pan, pour in the egg mixture and make an omlette. Fry both sides of omlette. Roll up the omlette and cut into small pieces.
Heat oil in a large saucepan. Add tomatoes and fry on medium heat till tomatoes are cooked. Add masala omlette, salt, chilli powder and turmeric powder. Mix well. Add boiled rice.
Stir and cover the pan and leave on low heat for 3 - 5 minutes.

Pour 3 cups water to a pot. Gently place the rinsed eggs and boil on a medium heat. Cover the pot & boil until you see cracks on the eggs. Turn off the stove and rest the eggs for 10 mins. Discard the water & keep the eggs immersed in cold water to cool down.
Heat a pan with oil. Add cumin, bay leaf, cloves, cardamoms and cinnamon. Allow them to splutter.
