DATE BARS
This is a recipe my mother made in the 1950's. I have tried many other date bar recipes but none compare to this one.

Steps:
- Combine the flour, soda, salt, oats, oleo, and sugar into a crumb-like mixture; spread 1/2 of mixture in a greased 13x9 pan.
- Combine the filling ingredients together, except the vanilla.
- Cook this mixture until thick.
- Cool. Now add the vanilla.
- Spread on crumb crust, put the other 1/2 of the oat mixture on top of the date mixture.
- Bake at 350°F for 45 minutes.

MARZIPAN BARS
My husband's grandmother made these lovely layered bars for us as our newlywed Christmas present.

- In a bowl, cream butter and brown sugar. Add egg yolk and vanilla; mix well. Combine flour, baking soda and salt; add to creamed mixture alternately with milk. Press into a greased 15x10x1-in. baking pan. Spread with jelly. , For filling, combine almond paste, butter, sugar, egg white and vanilla in a bowl. Beat in eggs. Add food coloring; mix well. Pour over jelly layer. Bake at 350° for 35 minutes or until set. Cool on a wire rack. , For icing, heat chocolate and butter in a small saucepan on low until melted. Add confectioners' sugar and enough milk to make a smooth icing. Stir in vanilla. Immediately spread over bars. Cover and store overnight at room temperature before cutting.

- Preheat oven to 375°F.
- Cream together butter and sugar until light and fluffy.
- Beat in eggs one at a time.
- Stir in vanilla.
- Mix together flour, baking powder, and baking soda; and gradually add to the creamed mixture.
- Fold in the dates and nuts.
- Spread the batter evenly in a greased 13x9 baking pan and bake at 375°F for 25 minutes or until golden.
- Cool in pan.
- Cut into approximately 24 bars.

MARZIPAN BARS
This is unlike any other marzipan bar recipe I have seen. This was given to me by my sister many years ago and I get asked for this recipe all the time. It is very pretty to look at as well as tasting wonderful.

- Line 8 x 8 pan with pie pastry and cover the pastry with layer of raspberry jam.
- Blend butter and sugar thoroughly.
- Add eggs and beat until light and fluffy.
- Add rice flour and salt and beat well.
- Color 1/2 mixture a pale pink and other half green.
- Put spoonfuls of each mixture alternately on jam to cover.
- Bake in 350° oven for 35 minutes.
- Cool and ice with frosting.
MARZIPAN DATE BARS
This is the third installment of my date bar experiments! I love dates and I love to see what I can make out of them! I put a layer of marzipan in these date bars and they turned out really good! I hope you like them!

Steps:
- Preheat oven to 350 degrees F.
- Cream butter and both sugars together in a large bowl.
- Add egg and vanilla then blend well. Next add flour, baking soda, and cinnamon.
- Add oats and dates and stir to blend.
- Press half the date mixture into an ungreased 8X8 glass baking dish.
- Roll the almond paste between 2 sheets of wax paper to form an 8X8 square.
- Place the almond paste on top of the date layer in the dish and press into place.
- Put the rest of the date mix on top of the marzipan layer and press it flat on top.
- Bake uncovered for 30 minutes. Let cool for 10 minutes or more before cutting.

- Butter a 13x9 inch metal cake pan, line with parchment paper.
- Set aside.
- In a small saucepan, bring rum to boil, stir in cranberries.
- Let cool.
- Meanwhile, in bowl, beat butter with sugar until fluffy.
- Beat in eggs, one at a time, beating well after each addition, beat in vanilla and almond extract.
- In separate bowl, whisk flour ground almonds, baking powder and salt, stir into butter mixture just until combined.
- Stir in sliced almonds, cranberry mixture and marzipan.
- Scrape into prepared pan.
- Bake in centre of 350° oven until golden and cake tester inserted in centre comes out clean, 45 minutes.
- Let cool completely in pan on rack.
- Dust with icing sugar.
- Cut into bars.
- Make ahead- Layer between waxed paper in airtight container, store for up to 4 days or freeze for up to 1 month.
DATE BARS
Similar to fig newtons but with dates! It uses honey to sweeten it instead of sugar which compliments the dates nicely. This recipe is from the American Wholefoods Cuisine cookbook.

Steps:
- Preheat oven to 350°F.
- Combine flour, oats, baking soda and salt. Stir in oil and honey until well blended together.
- Combine dates and water and simmer in a saucepan for about 5 minutes until soft and thick.
- Stir in honey.
- Pat only half of the crust into a greased 8x8 square pan making a thin layer all the way to the edges.
- Spread date filling over the crust smoothing it out so it covers all of the crust beneath it.
- Pat the remaining crust out on wax paper and transfer ontop of the date filling, remove wax paper.
- Bake for 20-25 minutes untili firm and golden.
- Cool in pan.
- Cut in small squares to serve. Enjoy!

- Preheat oven to 350F and grease a 13 x 9 cake pan very well.
- Sift the dry ingredients together into a large mixing bowl.
- Mix in the dates and coconut or nuts.
- In a separate bowl, beat the eggs until foamy and gradually add the brown sugar.
- Add wet mixture to the dry ingredients.
- Spread batter in prepared pan to a depth of about 1/2 inch.
- Bake for 30 to 40 minutes.
- When done, cut into 4" x 1" bars.
- Remove from pan while still warm.

My sister got a pan of these along with her birthday cake every year. Lucky her! (I didn't have it so bad. My mom always got me a bag of chocolate covered raisins on mine.) But this recipe is so easy, you really should make it more than once a year!

- Cook dates, sugar and water in heavy saucepan to the consistency of jam. Let cool.
- Cream shortening with the brown sugar.
- Sift flour, soda, and salt into the creamed mixture.
- Add oats and mix until well blended.
- Put half of oat mixture in a greased 13x9x2 pan.
- Press and flatten to cover the bottom.
- Spread with date filling.
- Cover with remaining oat mixture. Pat smooth.
