CARAMELIZED ONION AND GARLIC DIP

Number Of Ingredients 13

1/4 cup olive oil
1 teaspoon fresh thyme leaves
1 shallot, peeled and chopped
2 cloves garlic, chopped
1 large Spanish onion
1 Vidalia onion, finely chopped
3 cipollini onions, finely chopped
1 medium red onion, finely chopped
Salt and freshly ground black pepper
1 cup fat-free Greek yogurt
1 cup reduced-fat cream cheese
3 scallions, chopped (about 1/2 cup)
1 bunch fresh chives, chopped (about 3 tablespoons)

Steps:

  • In a large saute pan over medium heat, add the olive oil. Add the thyme, shallots, garlic and all the varieties of onions. Saute, stirring constantly. (Onions absorb oil quickly, so add more if necessary.) Continue to cook until the vegetables are lightly browned, about 15 minutes. Remove from the heat and season with salt and pepper. Let cool slightly.
  • In a medium bowl, add the yogurt and cream cheese and stir together. Add in the onions, scallions and chives. Stir well to combine.

  • Stir sourcream, mayo and sugar in a bowl.
  • Add remaining spices, stir till well combined.
  • Adjust seasoning to taste.

  • Cook onion and garlic on medium heat for 1 minute in olive oil in a Saute pan. Add onion and garlic mixture to large bowl and add mayo, sour cream, parsley, pepper, and salt. Eat.

16 ounces cream cheese, softened
1/2 cup garlic, minced
1/2 cup onion, minced
1/2 tablespoon Worcestershire sauce
mayonnaise, as needed

Steps:

  • Mix all ingredients except mayonnaise, being sure to get garlic and onion well incorporated. Now, use just enough mayonnaise to get mixture to dip consistency, remembering that when chilled, cream cheese will harden. Chill for at least 2-3 hours. If you are planning to kiss somebody, make sure both of you eat this dip, or have breath mints available! Prep time does not include chilling time.

4 Vidalia or other sweet onions
2 cups water
½ cup white vinegar
1 cup sugar
½ cup mayonnaise
1 teaspoon celery salt
saltine crackers

Steps:

  • Slice onions as thinly as possible, and place in a large bowl. In a small bowl, mix together water, vinegar and sugar; pour over onions. Cover, and marinate overnight in the refrigerator.
  • Drain completely, then mix in mayonnaise and celery salt. Chill 2 to 3 hours. Serve with saltine crackers.
