MY MARY'S ITALIAN MACARONI SALAD



My Mary's Italian Macaroni Salad image

Number Of Ingredients 9

1 1/2 pounds tri-color fusilli
1 (8-ounce) bottle Italian dressing
1/2 pound prosciutto, cubed
1/2 pound mozzarella, cubed
1/2 pound provolone, cubed
1 can black olives
3 plum tomatoes, diced
3 stalks celery, diced
1 carrot, grated

Steps:

  • In a large pot of boiling salted water cook macaroni until al dente. Drain and let cool in a large bowl. Add remaining ingredients and toss well. Serve cold or at room temperature.

Whenever I entertain, this appears on my table...it never fails to win me rave reviews. Most folks seem to prefer this sweeter version to traditional Caesar salad.

1 hard-boiled large egg
2 to 4 tablespoons mayonnaise
2 tablespoons lemon juice
1 garlic clove, minced
3 tablespoons red wine vinegar
1 to 3 teaspoons sugar
1 teaspoon Worcestershire sauce
1/2 teaspoon salt
1/4 teaspoon ground mustard
1/4 teaspoon pepper
1/2 cup olive oil
1 large bunch romaine, torn
3/4 cup Caesar-flavored salad croutons
1/4 cup grated Parmesan cheese
1 can (2 ounces) anchovy fillets, optional

Steps:

  • Place the first 10 ingredients in a blender or food processor; process until egg is chopped. Add oil and blend until smooth. , In a large bowl, toss romaine, croutons and Parmesan cheese. Add dressing; toss to coat. Top with anchovies if desired.

BLOODY MARY SALAD

From Culinary Tour magazine. Chicken broth can be substituted for the vodka if you wish. This is fun to serve to guests because they are each given a "shot glass" of dressing for pouring over the salad! No ID required.

1 tablespoon olive oil
1 tablespoon shallot, finely minced
1/4 cup vodka (or 1/4 cup stock)
2/3 cup spicy vegetable juice (V8 juice, 5.5 ounce can)
2 tablespoons Worcestershire sauce
2 tablespoons red wine vinegar
1 teaspoon Dijon mustard
1 teaspoon sugar
1 teaspoon prepared mustard
1 teaspoon horseradish
1/2 teaspoon celery seed
1/2 lemon, juice of
salt, to taste
pepper, to taste
8 ounces cooked medium shrimp (1 cup approximaetly)
2 cups tomatoes, diced
1 cup celery, thinly sliced
1/2 cup English cucumber, diced
1/3 cup pimento stuffed olive, cut in half
1/4 cup red onion, sliced
3 tablespoons fresh parsley, chopped
1 tablespoon olive oil

Steps:

  • DRESSING: In a saucepan over medium-high, heat the olive oil. Saute the shallots until soft about 2-3 minutes.
  • Deglaze the pan with vodka; simmering until almost all evaporated. Add the V8 juice, Worcestershire sauce, vinegar, mustard, sugar, horseradish, celery seed, and fresh lemon juice.
  • Boil the mixture for 5 minutes. Season with salt and pepper to taste. Remove from heat and chill. Dressing can be prepared several hours in advance.
  • SALAD: Toss remaining ingredients together and season with salt and pepper.
  • Divide the mixture among 4 plates, arranging on each plate a shot glass filled with the salad dressing, placed to the side.

MARY'S POTATO SALAD

This is my Mother-in-laws recipe for potato salad and it is the only potato salad I have ever liked. Just to warn you I have never tried to make this myself yet, but after it is posted I am going to cut it down a little and try it myself.

8 lbs boiled potatoes
1 dozen hard-boiled egg
3 celery ribs
6 teaspoons salt
2 teaspoons pepper
16 ounces sour cream with chives (Top the Tater works best)
45 ounces mayonnaise
2 teaspoons mustard
2 pints half-and-half cream
1/2 cup vinegar

Steps:

  • Dice up your potatoes, eggs, & celery.
  • Mix together sour cream with chives, salt, pepper, mayo, mustard, half & half, and vinegar in a bowl.
  • Add mixture to potatoes, eggs & celery.
  • Refrigerate for a couple of hours, until cold.
  • Enjoy!
