SPICY SAUSAGE & CABBAGE SOUP
My BF and I decided to improvise in the kitchen tonight and came up with this wonderful soup. It has a bit of a kick but awesome flavor. We both stuffed ourselves. All measurements are estimated, we were having too much fun throwing things in the pot. :)

Steps:
- In a large pot, saute cabbage and onion in butter and olive oil on HIGH heat until onions start to soften.
- Add remaining ingredients EXCEPT rice and bring to a boil.
- Once boiling, reduce heat and cover. Simmer until sausage is done and cabbage is tender.
- Add rice and return heat to HIGH. Simmer uncovered until rice is cooked.

MARY'S HOT & SPICY SAUSAGE & CABBAGE SOUP
A spicy tomato soup with sausage and cabbage. This is my own creation and very easy to make. The full amount of cayenne makes it quite hot so start low if you don't eat cayenne frequently.

Steps:
- Slice the sausage, onion, celery and place in 6 quart pan. Add the diced tomatoes and tomato juice.
- Boil first 6 ingredients until onion and celery are tender.
- Add salt, cayenne, splenda and garlic. Adjust to taste preference. If soup is too thick, add a cup of water.
- Add cabbage and cook just until the cabbage is tender--will only take 5-10 minutes.
SPICY SAUSAGE & CABBAGE SOUP
Steps:
- Heat oil over medium heat in a large pot. Add sausage, onion, and celery. Sauté for approximately 5 minutes, stirring frequently.
- Add bell pepper, stir, and sauté for an additional 3 minutes.
- Add cabbage, diced tomatoes, chicken stock, and Cajun seasoning (I like Tony Chachere's Original Creole Seasoning). If your sausage is already spicy start with less Cajun seasoning and taste before adding more.
- Stir. Bring to a boil. Reduce heat, cover, and simmer for 15 minutes.
- Salt and pepper to taste.
- Stir in green onion and cilantro a few minutes before you're ready to serve.

HOT SAUSAGE SOUP (AKA CINDY"S SOUP)
When I tell people about this soup they say, I don't know, it doesn't sound very good. But when they taste it they rave about it.. My husband would eat this all the time. Whenever he smells soup cooking he asks is that Cindy's soup.This soup came from a friend;s wife.. Not sure what magazine that this originally came from. This is comfort food at its best.

Steps:
- cook hot sausage, pepper, onion and garlic in 6 quart dutch oven until meat is cooked through and vegetables are tender.
- Drain off fat. Pat with paper towell to remove most of grease.
- Add water, undrained tomatoes, chicken broth, sugar, spices and worcestershire sauce.
- Bring to boil, reduce heat, cover and simmer 45 minutes.
- Stir in pasta.
- Cook uncovered 10 to 15 minutes until pasta is tender.
- Serve in bowls and enjoy.

- In a 3-qt. saucepan, saute onion in oil and butter until tender. Add carrots and celery; saute for 3 minutes. Add caraway; cook and stir 1 minute longer. Stir in the water, cabbage, sausage, tomatoes and brown sugar; bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until vegetables are tender. , Add the beans, vinegar, salt and pepper. Simmer, uncovered, for 5-10 minutes or until heated through. Sprinkle with parsley.

SPICY HOT CABBAGE SOUP
This soup was served in my college student union and was a hit with starving college students as it's big on flavor while using only frugal ingredients. I was never able to wheedle the recipe from the cooks, but this is a very close clone of it. It's a super diet recipe as it has a spicy kick that other cabbage soup recipes don't. I think diets fail more from lack of flavor than from hunger pangs! Also, it's the first soup I think of at the first sign of a cold as this one warms you from the inside out. With a toasted cheese sandwich and a hot cup of tea with honey, it's better than penicillin!

Steps:
- Chop veggies and add to a large soup pot along with tomatoes and juice.
- Add salt or salt substitute, pepper, and oil if desired.
- Add enough water to cover the veggies by an inch or two.
- Bring to a slow boil, then reduce heat to simmer and cook for an hour or until cabbage is very soft and translucent.
- Adjust pepper to desired level of heat. You want a nice "bite" to this.
- Serve in warmed bowls with homeade wheat bread and butter. Great for the sinuses and immune system!

Steps:
- In dutch oven or large stock pot cook sausage over medium heat; drain off fat.
- Add garlic and onions; cooking until the onions are clear and limp. Stir in tomatoes and break into pieces.
- Add broth, wine or water and basil. Simmer uncovered about 30 minute
