CLASSIC SYRIAN BAKLAVA
Classic Syrian Baklava

- Make syrup: In a medium saucepan over medium heat, bring granulated sugar and 1 cup water to a boil, stirring occasionally. Add lemon juice. "It helps prevent crystallization," Al Mousa explains. Reduce heat to an active simmer and cook, stirring occasionally, until slightly thickened and reduced to a scant 1 3/4 cups, 10 to 12 minutes. Remove from heat, stir in 1 tsp. orange blossom water, and let syrup cool.
- Preheat oven to 350°. Make filling: In a large bowl, combine superfine sugar, remaining 2 tsp. orange blossom water, and 1/3 cup syrup. Add walnuts and stir until well blended. Set remaining syrup aside. Brush a rimmed baking sheet with a bit of the butter.
- Unroll filo. As you work, "keep it covered with a kitchen towel if you feel it's drying," Al Mousa advises. Lay 1 sheet filo in pan and brush generously with butter, making sure to cover all the dough. Repeat until you've used 14 sheets (any air bubbles that form will work their way out).
- Spoon filling over filo, spread evenly, and press mixture all over with back of spoon. "This way it won't fall apart when you eat it." Lay a sheet of filo on top and press it firmly with flat hands. Brush generously with butter, then repeat layering, pressing, and buttering with 5 more sheets. Layer and butter remaining 6 sheets, flattening them with your hands (no need to press).
- With a knife, trim shaggy filo edges flush with sides of pan (leave edges in pan for snacking later!). Using knife and a ruler, score filo at opposite long ends to mark 6 equal strips; then cut along score lines, using the ruler as a guide. Repeat on a diagonal, making 12 strips 1 1/2 in. wide to create diamonds.
- Bake, rotating pan twice for even browning, until filo is deep golden and crisp, including down into cuts, about 35 minutes. Using a soup spoon, evenly coat hot baklava with 1 to 1 1/4 cups of reserved, room-temperature syrup. "If the baklava has cooled or the syrup is hot, it won't be crunchy, it will be soggy," warns Al Mousa. (How much syrup is a matter of taste-some people like it sweeter.)
- Sprinkle center of each diamond with a generous pinch of pistachios. Let baklava cool in pan on a rack at least 1 hour. Re-cut if needed before serving, and cut bigger pieces in half if you like. *Find orange blossom water at grocery stores with baking and cocktail supplies, and at international markets. Find ghee at supermarkets and Indian grocery stores, and samneh at Arabic markets; a blend of butter and oil is the most economical, but all-butter tastes the best. At grocery stores, check packages of frozen, paper-thin filo dough carefully for size (you want sheets about 12 by 17 in.), and buy more than 1 box, as the quantity of sheets per pound varies by brand. To help prevent cracking, thaw in the refrigerator overnight, not on the counter. MAKE AHEAD: The syrup and the baklava, up to 1 week, airtight at room temperature.

BAKLAWA - SYRIAN VERSION OF BAKLAVA
This is similar to the Greek dessert, Baklava, but not as syrupy. It is the Syrian version. My DH is the one who makes this as I have no patience for the phyllo dough, and he does it really good!!!

- Butter baking pans thoroughly.
- Place 1 lb.
- of dough in pan, brushing butter between each sheet.
- Do not butter top sheet.
- Combine ingredients for nut filling and spread evenly on last layer.
- Place the other 1 lb.
- dough over nut filling, brushing each layer with butter between each sheet.
- Cut in diamond shapes.
- Pour remaining butter over top.
- Bake in a preheated oven@ 400 degrees for 15 minutes.
- ,then reduce heat to 325 degrees for 45 minutes.
- *NOTE:Keep dough covered with damp cloth or plastic while using to prevent dough from drying out.
- SYRUP:.
- Mix sugar and water and boil over medium hear for 15-20 minutes Add lemon juice and rose water before removing from heat.
- Let syrup stand for 10 minutes before pouring over cold Baklawa.

- Position a rack in the lower third of the oven; preheat to 350 degrees F. Combine the nuts, cinnamon and ground crackers in a bowl.
- Brush a 9-by-13-inch baking dish with some of the butter. Layer 10 pieces of phyllo in the dish, brushing each piece with butter before adding the next (keep the remaining dough covered with a damp towel). Sprinkle a quarter of the nut mixture over the dough. Layer 4 pieces of phyllo on top, brushing each with butter before adding the next; sprinkle with another quarter of the nut mixture. Add 4 more phyllo pieces on top, brushing each with butter, then add another quarter of the nut mixture, 4 more pieces of phyllo with butter, and the remaining nuts.
- Layer the remaining 10 pieces of phyllo on top of the nuts, brushing each with butter; brush the top piece with extra butter. Cut into the baklava to make strips, about 1 1/2 inches wide. Then make diagonal slices, about 1 1/2 inches apart, to create a diamond pattern. Bake until golden, about 1 hour.
- Meanwhile, make the syrup: Bring the sugar, honey and 1 1/2 cups water to a boil in a saucepan over medium heat and cook, 10 to 15 minutes. Add the lemon juice and boil 2 more minutes, then let cool slightly.
- Pour the syrup over the warm baklava; let soak, uncovered, at least 6 hours or overnight. Garnish with nuts.
BAKLAVA

- Heat oven to 180C/160C fan/gas 4 and grease a 21cm x 21cm square cake tin with butter. Chop the nuts into small pieces using a food processor, taking care not to blitz them to a paste. Put them into a bowl, stir in the honey and a pinch of salt and set aside.
- Melt the butter in a pan over a low heat. Cut the first pack of filo pastry sheets in half (so that they fit the tin). Put one sheet in the tin and brush with the melted butter. Lay another sheet on top and brush with butter again, keep layering like this until the whole pack is used up.
- Spread the honey and nut mixture over the pastry and press it down lightly with the back of a spoon. Open the other pack of filo, cut in half and continue the layering and buttering process. When you reach the last sheet pour any remaining butter over the top to finish. Use a sharp knife to cut deep lines into the pastry to create either squares or diamond shapes then bake in the oven for 20 mins.
- Reduce the heat to 150C/130C fan/gas 2 and bake for a further 45 mins. While the baklava cooks put all the syrup ingredients into a saucepan and add 200ml water. Heat gently until the sugar has dissolved then boil the mixture for 8-10 mins or until it has reduced to the consistency of runny honey.
- When the baklava comes out of the oven, pour the warm syrup over the top, allowing it to run into the lines you have cut. Leave it to soak in and serve when it's completely cold.

GREEK PECAN BAKLAVA
You are in for a real treat when you try this, it's one of my favorite recipes for Greek baklava! it has brandy in the syrup which makes it special! You will need 3 pounds of pecans, roughly 1 pound of melted butter and whole cloves. It is not really necessary to insert a whole clove on top of each slice of baklava, I do so only on the holidays.

- In a saucepan combine 2 cups sugar, 1 cup water, liquid honey, brandy, lemon juice and cinnamon stick; bring to a boil over medium heat stirring constantly, boil for about 1 minute (or until the sugar is completely dissolved) then remove from heat; cool syrup COMPLETELY.
- In another bowl toss the chopped pecans with 1 cup sugar, cinnamon and cloves.
- Brush 2 (13 x 9-inch) baking pans with melted butter.
- Place 8 phyllo sheets in 1 pan, brushing EACH sheet with melted butter, then top with 2 cups pecan mixture.
- Place 3 phyllo sheets over the pecan mixture, brushing each sheet with melted butter, then top with 2 cups of pecan mixture.
- Repeat with 3 more phyllo sheets and then 2 cups pecan mixture.
- Top with 6 phyllo sheets, brushing all but the top sheet with melted butter.
- Repeat the procedure with remaining phyllo sheets and the pecan mixture for the second pan.
- Using a sharp knife cut layers diagonally into 3/4-inch diamonds; gently brush with remaining butter.
- Insert a clove in the center of each diamond.
- Bake in a 300°F oven for 1 hour.
- Remove from the oven and pour the prepared reserved syrup evenly over the baked baklava.
- Cool completely in the pans on wire racks.
- When cooled cut again diagonally; remove from pans and store in airtight containers at room temperature.
BAKLAWA (LEBANESE VERSION OF BAKLAVA)
I haven't made this yet, but plan to. The mazahar, or orange blossom water, can be purchased at any Middle Eastern or Greek specialty store. Keep in mind that this makes 60 servings. TIP: Syrup must either be cool and poured over hot baklawa or hot and poured over cooled baklawa. Never pour hot syrup over hot baklawa; it will make it soggy.

- Unwrap and carefully unfold thawed phyllo dough; cover with plastic wrap or wax paper and a damp cloth to keep the dough from drying out.
- FOR THE FILLING -- Grind the walnuts coarsely, mix with sugar and orange blossom water until well blended. Butter a 12 x 16 inch baking pan. Render the butter.
- FOR THE ASSEMBLY -- Layer one package of the phyllo sheets in the pan, buttering generously between each sheet with a pastry brush or cloth dipped in butter. Mix 2-3 tablespoons of water with the walnut mixture and put over the top of the last sheet, making sure to keep the layer of walnuts level.
- Repeat the same procedure with the second package of dough, buttering generously between each sheet, and butter the top. Cut into diamonds, dipping the knife into hot water as you go for easier cutting. Pour over any remaining butter.
- Bake at 350 degrees for 45 minutes to 1 hour (depending on your oven) or until bottom is done and top is golden brown. If top does not brown nicely, put the baklawa under the broiler for a few seconds, watching constantly, as it will burn very quickly.
- FOR THE SYRUP -- Mix sugar and water together and bring to a boil. Boil about 15-20 minutes. Remove syrup from heat, add lemon juice and orange blossom water. Stir and let cool.
- SHORTCUT -- Butter pan and place one whole package of phyllo dough in pan, butter top, and add nut filling. Place second package of phyllo dough over nuts and butter the top. Cut into diamonds and pour all the rendered butter into the pan, making sure it settles into all the cuts and around edges. Bake as directed above.

- Preheat oven to 325. Layer half of the sheets of phyllo one sheet at a time, in a greased 11x7x2 baking pan, brushing each sheet evenly with butter and folding ends over if necessary to fit into pan.
- Keep unused sheets covered with plastic wrap while assembling baklava to prevent drying.
- Mix 1/4 cup of the sugar and cinnamon; stir in walnuts.
- Sprinkle nut mixture evenly over buttered phyllo in pan.
- Layer remaining phyllo, one sheet at a time, over nut mixture, brushing each sheet evenly with butter.
- Cut diagonally into squares, cutting completely through all layers.
