Simple, light and delicious fruit salad. Perfect for breakfast as it uses up the bananas and apples on hand. For a different dish every morning, change up the fruits and yogurt. Diabetic Exchanges: 2 fruit. This came from Taste Of Home Simple & Delicious. I have not tried this, just posting for easy finding.

2 large apples, cut into 3/4-inch-inch cubes
2 medium firm bananas, sliced
2 teaspoons lemon juice
6 ounces fat free reduced sugar raspberry yogurt
1/4 cup raisins
1 tablespoon sunflower seeds

Steps:

  • In a large bowl, combine apples and bananas. Sprinkle with lemon juice; toss to coat. Stir in the yogurt, raisins and sunflower kernals.
  • Serve immediately.

Fresh Fruit Salad with Honey Vanilla Yogurt image

Number Of Ingredients 10

2 cups plain yogurt
2 tablespoons good honey
1/2 teaspoon pure vanilla extract
Seeds scraped from 1/2 vanilla bean, optional
1/2 orange, juiced
1 banana, sliced
1/2 pint fresh blueberries
1/2 pint fresh raspberries
1 pint fresh strawberries, hulled and cut in half
1 bunch seedless green grapes, halved

Steps:

  • Combine the yogurt, honey, vanilla extract, and vanilla bean seeds in a bowl and set aside. Combine the orange juice and banana slices in a separate bowl. Add the berries and grapes and gently mix the fruit mixture together. Spoon the fruit into serving bowls and top with the yogurt.

Grandma used to reseve the juice from all canned fruits and would add them to kool aid for the kids.

2 (8 ounce) cans pineapple chunks, drained (reserve juice)
2 (11 ounce) cans canned mandarin oranges, drained
1 (4 ounce) jar maraschino cherries
1 large banana, sliced (optional)
6 ounces banana cream pudding and pie filling mix or 6 ounces lemon pudding, NOT INSTANT
3 cups water (with reserved juice)

Steps:

  • Drain pineapple and reserve juice, add enough water to it to equal 3 cups liquid.
  • Place all fruit into bowl.
  • Stir juice/water into the pudding in a sauce pan and cook over medium heat until transparent. Cool and cover the fruit.
  • ** Do not use instant pudding.

Look for ripe, sweet-smelling fruit for this simple fruit salad with kiwi, mango, pineapple, grapes, orange and berries. It's a lovely, light summer dessert

2 kiwi
1 mango
150g pineapple
100g grapes
400g mixed berries , we used strawberries, raspberries and blackberries
1 large orange
2 tsp honey (optional)

Steps:

  • Prepare the fruit with a small serrated knife. Cut the top and bottom off the kiwi, stand it up on one of its flat surfaces and cut away the skin, keeping the knife as close to the skin as possible. Slice in half, following the core through the centre, then cut each half into slices. Put in a bowl and repeat with the other kiwi.
  • Carefully cut the skin off the mango and slice off each cheek, running your knife as close to the stone as you can. Cut each piece into slices. Remove any remaining fruit from the stone in long thin slices. Add the mango to the kiwi.
  • Top and tail the pineapple, then in a similar way to the kiwi, cut away the skin. Use your knife to go around the pineapple, taking out the divets or eyes, two to three at a time, you'll be left with a spiral pattern weaving around the outside of the fruit. Take of a circular slice, roughly 150g, quarter, remove the core then cut into chunks. Add to the bowl.
  • Halve the grapes and add to the rest of the fruit along with the berries, you may want to slice or halve strawberries if they're large. Remove the peel from the orange using the same method as the kiwi and pineapple. Holding the orange over the bowl of fruit, remove the orange segments by carefully cutting between the membrane and the fruit. The pieces should fall out into the bowl along with any juice. Squeeze the membrane over the fruit to extract the juice, add a drizzle of honey, if you like. Mix everything together and leave in the fridge to macerate for 30 mins, if you have time.

WINTER FRUIT SALAD

Make the most of autumnal fruits in this refreshing and nourishing salad - make a batch and eat during the week

600g good-quality ready-to-eat dried fruit (such as prunes, pears, apricots, figs cranberries)
3 tbsp clear honey
1 vanilla pod , split lengthways
1 Earl Grey tea bag
1 tbsp fresh lemon juice
mascarpone or Greek yogurt, to serve

Steps:

  • Tip the fruits and 700ml/11⁄4 pints cold water into a large saucepan. Add the honey and vanilla, scraping the seeds from the pod into the pan. Bring to the boil. Stir well, lower the heat and simmer for 10 minutes until slightly syrupy.
  • Take the pan off the heat and stir in the tea bag. Leave to infuse for 10 minutes.
  • Discard the tea bag and vanilla pod, tip the fruits and liquid into a non-metallic bowl and pour over the lemon juice. Stir, then leave to cool. Cover and chill until ready to serve.

My family first sampled baked fruit years ago while dining out. They liked it so much I decided to create my own version. The result was this attractive and tasty dish.

Number Of Ingredients 9

1 can (16 ounces) apricot halves, drained
1 can (16 ounces) pear halves, drained
2 cans (15 ounces each) plums, drained and halved
1 can (29 ounces) peach halves, drained
1 can (8 ounces) pineapple slices, undrained
1/3 cup packed brown sugar
1 tablespoon butter
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cloves

Steps:

  • In a greased 13-in. x 9-in. baking pan, starting at the 9-in. end, arrange rows of fruit in the following order: half of the apricots, pears and plums, all of the peaches, then remaining apricots, pears and plums. , Drain pineapple, reserving 1/2 cup of juice. Lay pineapple over fruit in pan. In a saucepan, combine the pineapple juice, brown sugar, butter, cinnamon and cloves. Cook and stir until sugar is dissolved and butter is melted. Pour over fruit. , Bake, uncovered, at 350° for 20-25 minutes or until heated through.
