MARTIAN COOKIES
We had a cooking class at Children's Hospital in Orange, CA. These were a favorite for the patients and adults. You should have been there to smell the wonderful scent of cookies right out of the oven and see the children's faces!!! I think these are called martian cookies because of the green flecks, and they are out of this world!!

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- In a large mixing bowl beat butter until soft, add sugar, and beat until fluffy. Add egg and vanilla, beat well.
- In a medium bowl stir together flour, cinnamon, baking soda, and salt. With mixer on low speed, gradually add four mixture to butter mixture, beat until well mixed. With a wooden spoon, stir in oats, zucchini, walnuts or pecans, chocolate and butterscotch pieces.
- Drop by rounded teaspoons about 2 inches apart onto ungreased cookie sheets. Bake for 10-12 minutes or until golden brown. Cool sheets and then cookies on a cooling rack. ENJOY!

- Heat oven to 400ºF.
- Cut zucchini lengthwise in half; scoop out centers onto cutting board, leaving 1/8-inch-thick shells. Place shells in 13x9-inch baking dish.
- Chop zucchini flesh. Melt 1 Tbsp. butter in large skillet on medium-high heat. Add onions and chopped zucchini; cook and stir 3 min. or until onions are crisp-tender. Add tomatoes and bacon; cook 2 min. Stir in cheese. Spoon into zucchini shells.
- Melt remaining butter in same skillet. Add panko crumbs; cook and stir 3 min. or until golden brown. Sprinkle over filled shells.
- Bake 15 min. or until heated through.

- In saucepan of lightly salted boiling water, cook onions for 10 minutes.
- Drain and transfer to 6-cup casserole.
- Mix together ketchup, water, honey, butter, mustard, salt and pepper; pour over onions.

MARTIAN COOKIES (ZUCCHINI & LOTS OF OTHER STUFF!)
I found these online many years ago. I think they are called martian cookies because of the green zucchini flecks. My husband loves them and has asked for them repeatedly, but I had lost the recipe. I haven't made them in awhile and therefore the serving size is approximate.

- Add the eggs& vanilla and beat it all well.

- Mix first 5 dry ingredients together.
- Beat egg, add milk, sour cream, melted butter and vanilla. Combine with dry ingredients only until blended.

LOTS OF CHOCOLATE BROWNIE WITH PEANUTS
This brownie is made with both milk chocolate, dark chocolate and cocoa powder. very chocolatery! Found this recipe some time ago in a Swedish food magazine. The brownie is chewy and the peanuts makes it crunchy.

Steps:
- Heat the oven to 350F (175C).
- Put a piece of parchmentpaper in a 9x9 inch (24x24 cm) baking form.
- Melt the milk chocolate in the microwave or au bain Marie, cool slightly.
- Cream butter and sugar until fluffy and light.
- Whisk the eggs in a separate bowl.
- Add eggs and melted chocolate to the creamed butter
- Mix well.
- Sift cocoa and flour and add to the batter.
- Mix until incorporated but do not overmix.
- Chop the dark chocolate, mix with the salted peanuts and add to brownie batter.
- Mix slightly.
- Bake the brownie in the middle of the oven for about 35 minutes.

- In a medium bowl, combine flours, sugar, baking soda, and cinnamon. In a large bowl whisk together oil, water ,honey, vanilla and eggs.

Steps:
- Chop finely the onion.
- Slice the zucchini (not to thick).
- Saute the zucchini with the onion, garlic.
- Add all your seasonings.
- Saute this for a few minutes in a pan sprayed with butter pam.
- Do not saute too long as you do not want the zucchini soft.
- Add the tomatoes and simmer few minutes.
- Remove from heat and serve on plates adding parmesan cheese on top.
