Yield Makes about 2 1/2 cups

Number Of Ingredients 5

3 pounds (about 6) McIntosh apples, quartered and cored (not peeled)
Juice of 1 lemon
1 cinnamon stick (4 inches), broken in half
Pinch of salt
1 to 2 tablespoons light-brown sugar (optional)

Steps:

  • In a medium saucepan, combine apples, lemon juice, cinnamon, and salt. Cover, and cook over low heat, stirring occasionally, until the apples break down to a sauce-like consistency.
  • Remove from heat, uncover, and let stand until apples cool slightly. Using tongs or chopsticks, discard skins and mash apples for a chunky consistency. Use immediately, or store refrigerated, in an airtight container for up to 1 week.

PINK APPLESAUCE FOR LATKES

Pink Applesauce for Latkes image

The most coveted dish at any Hanukkah celebration is one piled high with sizzling latkes. Specially prepared for the Jewish holiday, the potato pancakes are panfried in oil until golden, then served with side dishes like this pink applesauce.

Provided by Martha Stewart

Categories     Food & Cooking     Quick & Easy Recipes

Yield Makes about 1 quart

Number Of Ingredients 7

9 red-skin apples (about 3 pounds), such as McIntosh, cored and quartered
1/2 cup apple cider, plus more as needed
1 large cinnamon stick
1/2 teaspoon ground ginger, plus more as needed
Pinch of freshly grated nutmeg, plus more as needed
1/4 cup sugar, plus more as needed
1 tablespoon freshly squeezed lemon juice

Steps:

  • In a wide, heavy saucepan over medium heat, combine all ingredients. Cook, stirring frequently and adding more cider as needed to prevent scorching, until apples are broken down, 50 to 60 minutes. Mash large pieces with spoon; add more sugar and spices, as desired.
  • Remove from heat; discard cinnamon stick. Serve warm or at room temperature with latkes. Refrigerate in an airtight container up to 3 days.

PINK APPLESAUCE

A food mill separates the apples from their peels, but allows the rosy color of the skins to remain in this simple pink applesauce recipe.

2 tablespoons water
1 teaspoon fresh lemon juice

Steps:

  • Place apples, water, and lemon juice in a medium saucepan. Cover, and cook over medium heat, stirring occasionally, until apples are very soft, 15 to 30 minutes. Pass apple mixture through a food mill fitted with a medium disk.

LEMONY PINK APPLESAUCE

Lemony Pink Applesauce image

Martha developed this recipe when she discovered that lemon juice reacts with red-skinned apples and turns them pink. Use the reddest apples you can find and adjusts the amount of sugar according to the sweetness of the apples.

Provided by Martha Stewart

Yield Makes approximately 4 cups

Number Of Ingredients 3

8 McIntosh apples, or other tart, red-skinned apples
2/3 cup freshly squeezed lemon juice (about 4 lemons)
1/4 cup sugar

Steps:

  • Quarter the apples, do not peel, and remove the seeds and cores. Place apples in a bowl, add the lemon juice, and toss thoroughly to coat.
  • Place the apples, sugar, and 1 cup water in a heavy saucepan. Cover pot, and let simmer over low heat, about 30 minutes, or until the apples break down to a saucelike consistency.
  • Remove pot from heat, uncover, and allow apples to cool slightly. Using a rubber scraper, gently push apples through a food mill or wire sieve. Discard the skins. Refrigerate until ready for use.

EASY PINK APPLESAUCE

Easy Pink Applesauce image

The liqueur gives this sauce a fruity flavor as well as its luscious pink color. Try it as a non-fat option for a cake topping as well as a side dish, or even breakfast or dessert! From Ellen Brown.

Provided by FLKeysJen

Categories     Apple

Time 2h15m

Yield 2 pints, 10 serving(s)

Number Of Ingredients 2

3 lbs mcintosh apples (one bag at the supermarket)
1/2 cup creme de cassis

Steps:

  • Peel, core and slice apples. (Since the peel is the healthiest part I said to myself you're the boss, applesauce, and went ahead and left on the peel but for texture/presentation like store-bought applesauce you may want to peel your apples.).
  • Place apples in your crockpot and pour the Crème de cassis over them.
  • Cook on low for 5-6 hours or on high for 2-3 hours, or until apples are very tender. Your home will smell WONDERFUL during this time.
  • For a chunkier sauce (my recommendation), mash apples with a potato masher. You can do this right in the hot crockpot. For a smooth sauce like store-bought versions, puree mixture in a food processor or blender.
  • Chill, tightly covered, until ready to serve.
