1/2 lb bacon
2 tablespoons reserved bacon drippings
1/2 cup un-popped popcorn (kernels)
1 teaspoon sea salt (not table salt)
3 tablespoons brown sugar
2/3 cup pure maple syrup (not pancake syrup)
3 tablespoons butter
1/2 teaspoon vanilla extract
1/2 teaspoon baking soda

Steps:

  • Cook bacon in a skillet until crispy, and once cooled, crumble it up. Reserve the bacon drippings.
  • In a medium (2 quart) saucepan combine 2 tablespoons of bacon drippings and three kernels of popcorn; place on a tight-fitting lid and cook over medium heat. When you hear the three kernels pop, it is time to add the rest of the popcorn inches Gently shake the pot as the popcorn cooks and pops. When you hear less than one pop every one to two second, turn off the heat and let the pan sit for one minute. On a large baking sheet (13X18) coated with cooking spray, spread out the popcorn and sprinkle with salt.
  • Preheat the oven to 250 degrees. In a medium pot (2 quart) combine brown sugar, maple syrup, and butter. Cook over medium heat, stirring frequently. Sugar mixture should be boiling and will start to thicken when it is ready after about 6-9 minutes. Turn off the heat, and quickly stir in the vanilla and baking soda; the mixture will turn lighter in color and will become foamy.
  • Evenly pour the sugar mixture over the popcorn. Sprinkle with the bacon bits. Place the pan into the oven and cook for 30 minutes, stirring every 10 minutes. Let the popcorn cool and harden, break into pieces and store in an airtight container.

8 cups pc maple and bacon popcorn
1/3 cup pc cranberries sweetened dried fruit
1/3 cup pecans, toasted and roughly chopped
1/4 teaspoon salt
5 tablespoons unsalted butter
3 cups mini marshmallows

Steps:

  • Toss popcorn, cranberries, and pecans in large heatproof bowl; sprinkle with salt.
  • Melt butter in large microwave-safe bowl on high for about 40 seconds. Stir in marshmallows; microwave on high for 1 minute and 15 seconds, stopping once halfway through to stir. Stir until mixture is melted and smooth.
  • Pour marshmallow mixture over popcorn mixture, folding with rubber spatula until well-combined. Let cool enough to handle.
  • Oil hands; form mixture into 15 evenly-sized balls, pressing firmly.

1 tablespoon vegetable oil
½ cup unpopped popcorn
6 tablespoons butter
5 cups miniature marshmallows

Steps:

  • Grease a 9x13 inch baking dish. Set aside.
  • Add vegetable oil to a 4 quart saucepan, and heat over high heat. When oil is hot, add popping corn. Keep pan moving constantly. When corn stops popping, remove from heat. Put popcorn in prepared pan.
  • Melt butter In a medium saucepan over low heat. Stir in marshmallows and cook until melted, stirring constantly. Pour marshmallow mixture over popcorn and mix with spoon to coat evenly.
  • Let mixture cool slightly. Smear butter on your hands or spray with non-stick cooking spray. Mix popcorn with your hands so that it is evenly coated.
  • Form popcorn into 8 balls.

3 cups mini marshmallows
3 tablespoons raspberry gelatin powder, dry (may use any flavor)
3 quarts popped popcorn

  • In a saucepan, melt butter.
  • Add marshmallows and stir until melted.
  • Mix in gelatin powder.

Yield About 2 dozen 1 1/2-inch mallows

Number Of Ingredients 15

The bloom
4 1/2 teaspoons unflavored powdered gelatin
1/2 cup cold water
The syrup
2/3 cup sugar
1/2 cup Grade A dark or Grade B maple syrup*
1/4 cup light corn syrup
1/4 cup water
1/4 teaspoon salt
The mallowing
1/8 teaspoon ground cinnamon
1/2 cup (about 1 1/2 ounces) finely chopped candied bacon**
1/2 cup Classic Coating, plus more for dusting
*The key to getting real maple flavor is using a dark amber Grade A or Grade B syrup, which are bolder than lighter Grade A varieties.
**To make candied bacon, lay 6 or 7 bacon slices on a wire rack set over a sheet pan lined with foil. Combine 1/4 cup light brown sugar with 1/8 teaspoon ground cinnamon. Rub over both sides of bacon. Bake at 350°F until deeply caramelized, 30 to 35 minutes. Let cool before chopping into bits.

Steps:

  • Lightly coat an 8-by-8-inch baking pan with cooking spray.
  • WHISK TOGETHER the gelatin and cold water in a small bowl. Let it soften for 5 minutes.
  • STIR TOGETHER the sugar, maple syrup, corn syrup, water, and salt in a medium saucepan. Bring it to a boil over high heat, stirring occasionally, until it hits 240°F. Be prepared to lower the heat as needed-this syrup likes to bubble up. Microwave the gelatin on high until completely melted, about 30 seconds. Pour it into the bowl of a stand mixer fitted with the whisk attachment. Set the mixer to low and keep it running.
  • WHEN THE SYRUP reaches 240°F, slowly pour it into the mixer bowl. Increase the speed to medium and beat for 5 minutes. Increase to medium-high and beat for 3 more minutes. Add the cinnamon, increase to the highest speed, and beat for 1 minute more. Quickly fold in the bacon bits. Pour the marshmallow into the prepared pan. Sift coating over top. Let it set for 6 hours in a cool, dry place. Use a knife to loosen the marshmallow from the edges of the pan. Invert the slab onto a work surface. Cut it into pieces and dust them with more coating.

1/2 cup butter
3 cups brown sugar
1 cup Karo syrup
1 (14 ounce) can eagle brand sweetened condensed milk
1 tablespoon vanilla
4 -6 quarts popped corn

Steps:

  • bring to boil butter, sugar, syrup.
  • add condensed milk- boil 5 minute.
  • remove from heat and add vanilla.
  • strain seeds from popcorn.
  • pour hot mixture over popcorn and mix.
  • grease hands and make balls out of mixture.
  • *extra note;
  • To remove the seeds, I usually take two bowls and lift out the popcorn by the hand fulls and shaking it, then dumping it into the extra bowl. When I get to the bottom, there lies most of the seeds. I just discard them and go on with the rest.
