3/4 cup graham cracker crumbs
1/2 cup finely chopped macadamia nuts
2 tablespoons sugar
1/4 cup butter, melted
1 envelope unflavored gelatin
1/4 cup cold water
2 packages (8 ounces each) cream cheese, softened
1 jar (7 ounces) marshmallow creme
1 can (14 ounces) whole-berry cranberry sauce
1 cup heavy whipping cream
SUGARED CRANBERRIES:
1 envelope unflavored gelatin
1/4 cup cold water
1 package (12 ounces) fresh cranberries or frozen cranberries, thawed
2/3 cup superfine sugar
Orange slice and orange peel strips, optional

Steps:

  • In a small bowl, combine the cracker crumbs, nuts and sugar. Stir in butter. Press onto the bottom of a greased 9-in. springform pan. Place on a baking sheet. Bake at 350° for 10 minutes or until lightly browned. Cool on a wire rack., In a small saucepan, sprinkle gelatin over cold water; let stand for 1 minute. Heat over low heat, stirring until gelatin is completely dissolved; cool slightly., In a large bowl, beat cream cheese and marshmallow creme until smooth. Beat in cranberry sauce. Add cooled gelatin; mix well. , In a small bowl, beat cream until stiff peaks form. Fold into cream cheese mixture. Pour over crust. Refrigerate for 8 hours or overnight., In a microwave-safe bowl, sprinkle gelatin over cold water; let stand for 1 minute. Microwave on high for 1-2 minutes, stirring every 20 seconds, until gelatin is completely dissolved. Whisk until slightly frothy., Lightly brush mixture over all sides of berries. Place on a wire rack over waxed paper; sprinkle with superfine sugar. Let stand at room temperature for up to 24 hours (do not refrigerate or the sugar will dissolve)., Just before serving, carefully run a knife around edge of pan to loosen. Spoon sugared cranberries over cheesecake. If desired, top with orange slice and orange peel strips.

½ (10.5 ounce) package marshmallows
½ cup milk
1 (8 ounce) package cream cheese, softened
1 egg yolk
½ lemon, juiced
1 cup heavy cream
1 (9 inch) prepared graham cracker crust

Steps:

  • In a saucepan on low heat, combine marshmallows and milk. Cook until marshmallows are melted, and mixture starts to boil. Remove from heat.
  • In a large bowl, beat cream cheese until smooth. Stir in egg yolk. Fold in 1/3 of the melted marshmallow mixture, then quickly fold in remaining marshmallow until no streaks remain. Stir in lemon juice.

1 3/4 cups animal cookies, crushed
1/3 cup butter, melted
For the FILLING:
14 ounces of Marshmallow fluff
16 ounces cream cheese

To DECORATE:
Sprinkles, marshmallow Peeps, Jelly Beans

Steps:

  • Spray a 9″ spring form pan with non-stick cooking spray. Mix cookie crumbs and melted butter together with a fork, and press tightly into the bottom of the pan.
  • Beat whipping cream until stiff peaks form. Set aside.
  • Cream together cream cheese, lemon juice and marshmallow fluff with your mixer.
  • Gently fold in whipping cream until it's incorporated.
  • Spread over crust. Chill for a minimum of 3 hours.
  • Remove from pan. To put sprinkles on the sides, gently touch the back of a spoon to the cheesecake, then dip in sprinkles, repeat around the edges.

1 package (about 40) regular sized Marshmallows
3/4 Cup Milk (I used 2%)
2, 8 oz. packages cream cheese, softened.
1 tub whipped topping.

Steps:

  • In a large bowl or the bowl of an electric stand mixer, beat the cream cheese. Really whip it. On the stove, in a medium saucepan, melt the marshmallows and milk together over medium-low heat. This takes supervision, intermittent stirring, and about 10 minutes. Remove from heat and let cool. Add to the cream cheese and beat to combine. Fold in the whipped topping until thoroughly combined. *I switched to my dough hook and just mixed on low. Pour into prepared crust.

Steps:

  • Grease a 9 inch spring form pan.

  • Filling: Combine milk or cream and marshmallows in a saucepot over low heat, and melt.
  • Stirring all the while.
  • Remove and cool.
  • Beat cream cheese and lemon juice in a large bowl.
  • Blend in the cooled marshmallow/ cream mixture until smooth.
  • Fold in the whipped whipping cream.
  • Spoon into crust.
  • Chill 3 hours or until set.
  • Melt chocolate if desired and drizzle over the top of cake in a pretty pattern.
  • Serve.
  • If desired you may fold in along with the whipping cream, some fresh cut strawberries, or fresh raspberries... or fresh diced peaches, or pineapple...the choice is yours.
  • Then spoon into the shell and chill until set.
  • Serve.

300g crème-filled chocolate sandwich biscuits
75g butter, melted
180g white mini marshmallows (ensure vegetarian, if needed)
50ml milk
500g full-fat soft cheese
200ml double cream
1 tsp vanilla extract
2 egg whites
200g caster sugar
black writing icing or edible ink pen

Steps:

  • Tip the biscuits into a food processor and blitz to fine crumbs. Pour in the melted butter and blitz again to combine. Line the side of a deep 20cm springform or loose-bottomed cake tin with baking parchment. Tip in the crumb mixture and press it into the base and up the side of the tin using the back of a spoon. You should be able to press the mixture about halfway up the side, but don't worry if the edge is slightly uneven - this will add a spookily craggy effect to the cheesecake. Chill in the fridge while you make the filling.
  • Tip the marshmallows and milk into a saucepan set over a low-medium heat and stir until the marshmallows have melted. Leave to cool for a few minutes.
  • Tip the soft cheese, cream and vanilla extract into a large bowl and beat together using an electric whisk. Pour in the still-warm marshmallow mixture and mix again until smooth. Remove the chilled biscuit base from the fridge and scrape in the marshmallow cheesecake filling. Smooth the top and chill for at least 2 hrs. Will keep chilled for up to a day.
  • Heat the oven to 120C/100C fan/gas 1 and line a baking tray with baking parchment. Put the egg whites in a large, clean bowl with a pinch of salt and beat with an electric whisk until foamy - they should hold soft peaks when you lift out the beaters. Beat in the sugar 1 tbsp at a time until fully incorporated and the meringue is thick, shiny and holding stiff peaks.
  • Spoon the meringue into a piping bag fitted with a large round nozzle. Holding the nozzle directly above the lined tray, pipe little blobs to make the meringue ghosts. Bake for 1 hr 30 mins, then leave to cool.
  • When the meringues are cool, use an icing pen to draw faces on them. Carefully remove the cheesecake from the tin and put on a plate or cake stand. Arrange the ghosts on top just before serving. Will keep in the fridge for up to two days.

7 sheets leaf gelatine
500g strawberry , plus a few extra small ones, halved, to serve
100ml milk
250g tub ricotta
140g caster sugar
300ml double cream
200g bag pink and white marshmallow , snipped into quarters or use mini ones
icing sugar , for dusting
175g cold butter , chopped
200g plain flour
85g caster sugar
little sunflower oil , for the tin

Steps:

  • First, make the shortbread base. Heat oven to 160C/140C fan/gas 3. Rub the butter into the flour and sugar until the mixture makes a sticky dough. You can do this by hand or in a food processor. Press evenly into the base of a non-stick 26cm springform tin and smooth with the back of a metal spoon. Prick all over with a fork, then bake for 25-30 mins until pale golden. Cool, then carefully oil the sides of the tin using kitchen paper.
  • To make the filling, soak the gelatine in cold water for a few mins to soften. Meanwhile, purée the strawberries in a food processor or with a hand blender until very smooth, then rub through a sieve to remove all the seeds. Pour the milk into a small pan and warm gently. Squeeze the gelatine of excess water, add to the milk, then remove from the heat and stir to dissolve. Cool.
  • Stir the strawberry purée, gelatine mixture, ricotta and sugar together until smooth. In a separate bowl, whisk the cream until it softly holds its shape, then fold into the strawberry mixture with three-quarters of the marshmallows.
  • Carefully pour onto the cooled base and scatter over the remaining marshmallows. Cover the tin with cling film and chill until firm, preferably overnight. Cheesecake can be made 2 days ahead if kept chilled.
  • Carefully remove the cheesecake from the tin. Decorate with extra berries and finish with a dusting of icing sugar.

2 tsp. grated lemon zest

I got this off the back of a bag of Jet Puffed Marshmallows. It's good, but needed a small change to make it really work. I'm posting the recipe in it's original form, but my advice is to increase the Nilla Wafers to 60 and the butter to 3/4 cup. The recipe as written, well, it doesn't actually cover the bottom of a 13x9 pan. Something happened in posting, it's supposed to be JetPuffed StrawberryMallows that are specifically called for. If you can't find the StrawberryMallows, substitute 10 oz plain marshmallows and 1/2 tsp strawberry flavoring/extract. It's seriously the best thing made from strawberries I've ever made, and I will make ANYTHING with strawberries in it.

2 pounds sweet potatoes, halved
CRUST:
1 cup crushed gingersnap cookies (about 20 cookies)
1 cup finely chopped macadamia nuts
1/4 cup butter, melted
FILLING:
3 packages (8 ounces each) cream cheese, softened
3/4 cup sugar
1/4 cup packed brown sugar
1/3 cup sour cream
1/4 cup heavy whipping cream
2 tablespoons butter, softened
2 teaspoons vanilla extract
1 teaspoon pumpkin pie spice
3 large eggs, room temperature, lightly beaten
MARSHMALLOW SWIRL:
1 jar (7 ounces) marshmallow creme
4 ounces cream cheese, softened

Bake until center is just set and top appears dull, 1-1/4 hours. Remove springform pan from water bath. Cool cheesecake on a wire rack 10 minutes. Loosen sides of pan with a knife; remove foil. 10 graham crackers
8 tablespoons butter, melted
16 oz cream cheese, softened
½ cup powdered sugar
2 teaspoons vanilla extract
3 cups mini marshmallow
4 oz white chocolate, melted
16 oz milk chocolate, or dark chocolate, melted
2 teaspoons coconut oil, optional

Steps:

  • In a freezer bag or food processor, crush the graham crackers to a sand-like consistency. Add the melted butter and stir until combined.
  • Transfer to an 8x8-inch (20x20-cm) baking dish lined with parchment paper and firmly pack it down to form the "crust." Freeze until the cheesecake mixture is ready.
  • While the crust is freezing, combine the cream cheese, sugar, and vanilla extract, and mix until smooth.
  • Spread the marshmallows out on a baking sheet lined with parchment paper. Broil the marshmallows for about 1-2 minutes, watching closely to make sure they don't burn. You want them to brown up a little though to achieve a "toasted" flavor.
  • Carefully scrape the marshmallows from the sheet into the cheesecake mixture. Mix thoroughly.
  • Transfer the toasted marshmallow cheesecake mixture into the baking dish on top of the crust and smooth until even.
  • Freeze at least 1 to 2 hours until the mixture is firm enough to cut. Remove the set cheesecake from the dish and cut into even square shapes, depending on how big you want your pops.
  • Dip each stick in melted white chocolate and place into each cut square, this will help secure the sticks into the cheescake. Freeze until solid, about one hour.
  • Microwave the milk (or dark) chocolate in 15 to 30 second increments to melt, stirring thoroughly each time. Add coconut oil if the chocolate seems too thick for dipping.
  • Dip the set pops into the chocolate and stand upright to set (a cardboard box or piece of styrofoam works best if you don't have a stand).
  • Decorate with the remaining white chocolate and crushed graham crackers.
  • Enjoy!
