- Gently stir the pineapple chunks in juice, Italian-style salad dressing, chicken, shrimp, green bell pepper, red bell pepper, sweet onion, mushrooms, and garlic together in a large bowl. Cover the bowl with plastic wrap; allow to marinate in refrigerator for 8 hours or overnight.

- In a small saucepan combine 4 tablespoons of the marmalade, water, soy sauce and optional hot sauce; set aside.
- If skewers are wooden, pre-soak approximately 30 minutes.
- Cut pineapple into 4 crosswise slices; core and cut each slice in quarters to make 16 small wedges.
- Peel and devein shrimp.
- Thread on 4 skewers the shrimp alternating with pineapple wedges. Brush some of the marmalade-soy sauce mixture on shrimp and pineapple.

- In a large, glass or ceramic bowl, mix together the pineapple juice, lime juice, olive oil, and brown sugar. Add the chopped onions and stir to mix. Add the pork, toss to coat, cover, and refrigerate for at least 4 hours or up to overnight, stirring several times during soaking.
- Trim and core the pineapple (or use commercially available fresh pineapple). Cut the fruit into 1 1/2 to 2 inch chunks. You will have about 4 cups of cubes, or about 18 cubes.
- Thread the pork, pineapple, peppers and onions on six 12-inch skewers. Each skewer should have approximately 6 cubes of meat and 3 cubes of pineapple. Discard the marinade.

- For the kabobs:
- In a large bowl or resealable bag, mix together the pineapple juice, olive oil, hot sauce and honey until thoroughly combined. Set aside 2 tablespoons of the marinade.
- Place the pork cubes in the marinade - let the pork marinate for at least 30 minutes, up to 2 hours.
- Preheat the grill to medium-high.
- Remove the pork from the marinade. Thread the pork onto skewers alternating with the pineapple and red bell peppers. Season with salt to taste.

- Heat a cast-iron grill pan or outdoor grill over medium-high heat.

- Whisk the oil, pineapple juice, soy sauce, rice vinegar, garlic and sriracha together in a bowl. Add the beef cubes and toss to combine. Cover and marinate in the refrigerator for a minimum of 6 hours, preferably overnight, tossing occasionally to ensure even flavoring.
- About 1 hour before serving, prepare the Spicy Ramen Slaw. Place the ramen noodles in a food storage bag (you can discard the seasoning packets or reserve them for another use). Using a rolling pin, gently crush the noodles into small pieces, then transfer to a large bowl. Add the cabbage, red bell pepper, pineapple, scallions and peanuts and toss to combine.
- In a separate bowl, whisk together the vegetable oil, pineapple juice, rice vinegar, soy sauce, sugar, garlic and sriracha. Pour over the ramen mixture and toss to combine. Set aside for about 45 minutes to allow the noodles to soften, tossing every 10 to 15 minutes to help distribute the flavors. During this time, feel free to add more vinegar, soy, sugar or sriracha according to taste.

- Oil the grill grates and grill the skewers for 3 to 4 minutes, turning once midway through cooking.
- To serve, plate a portion of the Spicy Ramen Slaw and top with a skewer of beef. Garnish with a sprinkling of crushed peanuts if desired.

- Peel and core the pineapple.
- Cut part of the flesh into 12 (1-inch) cubes and reserve.
- Coarsely chop the rest of the pineapple and place in a blender.
- Add the orange juice and ginger.
- Puree.
- Pour into a bowl or shallow baking dish.
- Cut the Marlin into 16 cubes.
- Add to the pineapple mixture, toss to coat, cover and allow to marinate in the refrigerator for 1 hour.
