Garlic-Roasted Beef Sirloin Steaks with Asparagus and Hot Tomato Salad image

Here's a quick hot-roasted meal that's as ideal for entertaining as it is for a busy weekday. All you need to add are some tossed greens and crusty bread.

Yield makes 4 servings

Number Of Ingredients 10

Four 1 1/4-inch-thick sirloin steaks
1/3 cup extra virgin olive oil
2 large garlic cloves, minced
2 tablespoons chopped fresh rosemary, or 1 tablespoon dried, crushed
12 to 16 thick asparagus spears, trimmed
6 to 8 paper-thin slices prosciutto, cut in half lengthwise
4 plum (Roma) tomatoes, quartered
8 medium cremini mushrooms or small portobello mushrooms, halved
1 teaspoon kosher salt
1/2 teaspoon cracked black peppercorns

Steps:

  • Position the oven racks so that the top rack is 5 or 6 inches from the top of the oven. Place a ridged cast-iron grill pan on the top rack of the oven and preheat the oven to 500°F. Once preheated, set the oven to convection roast or convection broil at 500°F. Cover a shallow baking pan with foil and coat with nonstick spray for cooking the vegetables.
  • Combine the olive oil, garlic, and rosemary and brush the steaks with this mixture. Set aside.
  • Wrap the asparagus spears with the prosciutto and place them on the foil-covered baking pan. Brush them with some of the olive oil mixture.
  • Toss the tomatoes and mushrooms with enough of the olive oil mixture to coat all the pieces lightly and put them on the baking sheet with the asparagus. Drizzle the remaining olive oil mixture over all the vegetables and sprinkle with salt and pepper. Place the pan in the center of the oven and roast for 10 minutes.
  • Add the steaks to the preheated grill pan on the top rack of the oven. After 3 to 5 minutes turn the steaks and cook to your preferred doneness, 3 to 5 minutes longer. Remove the vegetables to a warm serving platter and cook the steaks until done to your liking.
  • Let the steaks rest for 5 minutes before carving. With a sharp knife, cut the steaks diagonally into thin slices.

2 pounds asparagus
3/4 cup olive oil
1/2 cup balsamic vinegar
1 tablespoon sugar
4 garlic cloves (minced)
1 1/2 teaspoons red pepper flakes

Steps:

  • Snap off the tough ends of asparagus and wash asparagus thoroughly.
  • Cook asparagus in boiling water for about two minutes, until it's bright green and just beginning to get tender. Drain.
  • Place asparagus in a large bowl of ice water to stop the cooking. Drain.
  • Lay asparagus in a 13" by 9" baking dish.
  • In a small bowl, whisk together the olive oil, balsamic vinegar, sugar, garlic, and red pepper flakes.
  • Pour over asparagus.
  • Cover dish with plastic wrap and place in the refrigerator.
  • Chill for about 8 hours.
  • Using tongs, remove asparagus from marinade and serve.

2 tablespoons balsamic vinegar
1 teaspoon grainy mustard

1 pound medium asparagus, trimmed
1 1/2 pounds flank steak
Equipment:
4 (10-inch) metal or wooden skewers (soak wooden skewers in water 30 minutes)

Steps:

  • Prepare a charcoal grill for direct-heat cooking over medium-hot charcoal (medium-high heat for gas).
  • Stir together oyster sauce, vinegar, mustard, and red-pepper flakes in a large bowl.
  • Thread about half of asparagus crosswise onto 2 parallel skewers, leaving space between. Repeat with remaining asparagus and skewers. Brush asparagus with some of glaze, then brush steak all over with remaining glaze and sprinkle with 3/4 teaspoon salt and 1/2 teaspoon pepper.
  • Oil grill rack, then grill steak and asparagus, covered only if using a gas grill, turning steak once and asparagus occasionally, until asparagus is tender and well browned in spots, 6 to 8 minutes, and steak is medium-rare, about 10 minutes.
  • Let steak stand on a cutting board 15 minutes; put asparagus on a platter and cover. Thinly slice steak across the grain.

1 tablespoon Montreal steak seasoning
½ pound thin asparagus spears, trimmed
1 teaspoon olive oil
salt and ground black pepper to taste
⅓ cup grated Parmesan cheese
½ jarred roasted red pepper, cut into six 1/2-inch strips
6 toothpicks
1 tablespoon grated Parmesan cheese, or to taste

Steps:

  • Butterfly or pound steak with a meat mallet to 1/4-inch thickness. Cut into 6 strips, approximately 2 inches wide by 5 inches long. Season both sides with Montreal steak seasoning and place in the refrigerator.
  • Preheat Panasonic Countertop Induction Oven to Medium-High on the "Grill" setting.
  • Place asparagus in a shallow dish; drizzle olive oil on top. Season with salt and pepper.

2 boneless strip steaks, or shell steaks, about 1-inch (2 cm) thick
salt, to taste
pepper, to taste
3 tablespoons canola oil
1 bunch asparagus

Steps:

  • Season the steaks on all sides with the salt and pepper.
  • Heat oil in a pan or a skillet over high heat until smoking.
  • Sear the steaks for about a minute to a minute and a half on each side, depending on the thickness of your steak for medium-rare. If you would like your steak rarer or more well-done, cook your steak shorter or longer accordingly.
  • In the same pan, cook the asparagus with salt and pepper until tender but still slightly crunchy. Remove from heat.
  • After the steaks have rested for about 5 minutes, slice, then serve with the asparagus!

1 boneless beef top sirloin steak, cut 1-inch thick (about 1-1/4 lbs.)
1 lb fresh asparagus, trimmed
1/4 cup balsamic vinegar
2 tablespoons olive oil
1 tablespoon chopped fresh basil
1 1/2 teaspoons dijon-style mustard
1 clove garlic, crushed
1/2 teaspoon sugar
1/2 teaspoon salt
1/8 teaspoon pepper

Steps:

  • In a small bowl, combine vinegar, oil, basil, mustard, garlic and sugar to make marinade. Place steak and 1/3-cup of the marinade in a sealable plastic bag. Close bag securely, turn to coat steak and marinate in refrigerator 15 minutes to 2 hours, turning occasionally. Cover and refrigerate remaining marinade.
  • Meanwhile, bring 1-inch of water to a boil in a large skillet. Add the asparagus and reduce heat to medium-low. Cover and cook 2-3 minutes or until asparagus is just crisp-tender. Drain asparagus and combine with the reserved marinade tossing to coat.
  • Remove the steak from the marinade and discard used marinade. Grill over medium heat or medium coals. Grill uncovered for 16-20 minutes for medium rare (145° F) to medium (160° F) doneness, turning once.
  • Season steak and asparagus with the salt and pepper. Carve steak crosswise into slices and serve with the asparagus.

Here is a wonderful steak marinade. Tastes great and is super easy to do. I top steaks with a large mushroom and caramelised onion. On the side fresh asparagus topped with garlic breadcrumbs and chopped eggs.

4 (200 -300 g) filet of beef, 200-300g each
1/2 cup dry red wine
1 tablespoon balsamic vinegar
1 tablespoon Worcestershire sauce
3 garlic cloves, crushed
2 tablespoons basil, finely chopped
4 large flat mushrooms
1 1/2 tablespoons olive oil
1 teaspoon garlic powder (approximate amount enough to sprinkle over mushrooms.)
1 teaspoon lemon pepper seasoning (Again approximate amount.)
20 g butter
5 -6 small red onions, sliced thinly
50 ml red wine vinegar
2 -3 tablespoons brown sugar
50 g butter
500 g asparagus, ends trimmed
2 garlic cloves, crushed
2 tablespoons honey
1/2 cup breadcrumbs
2 hard-boiled eggs, chopped finely
2 tablespoons parsley, finely chopped

Steps:

  • Combine all the marinade ingredients, add steaks cover and refrigerate several hours or overnight. (Preferably overnight turning occasionally).
  • Preheat oven to 200°C.
  • Place mushrooms in baking dish drizzle with oil, sprinkle with garlic and lemon pepper. Bake, uncovered for about 25 minutes or until tender.
  • Melt the butter in a pan and cook onion until soft and browned slightly. Cook stirring occasionally about 20 Min's or until onions are browned and mixture has thickened.
  • Cook the steaks on the BBQ, Under the grill of in a large pan until desired doneness. Depending on thickness cooking time will vary, generally, sear each steak 1-2 minutes a side, then cook for a further 4-5 minutes a side for medium rare.
  • To serve: Top each steak with a mushroom and a little caramelised onion with asparagus on the side.
  • Method for the asparagus:.
  • Melt half the butter and honey in a pan, add garlic and breadcrumbs, cook stirring until breadcrumbs are crisp.
  • Boil, Steam or microwave asparagus until just tender, drain.
  • Serve asparagus drizzled with remaining melted butter and honey, scatter breadcrumb mixture, chopped egg and parsley over the top.
