MARINATED STEAK WITH ALFREDO PENNE PASTA
This is really two separate recipes but I make this as one dish because it all works so well together. It takes a little time but it's so worth it. Enjoy!

Steps:
- Place soy sauce, olive oil, lime juice, Worcestershire sauce, garlic powder, basil, parsley and roughly chopped garlic cloves in a blender or food processor. Blend on high for 30 seconds or until thoroughly mixed. Pour over steak, cover and marinate for 4 to 6 hours. Grill steak or pan sear it, whichever you prefer. It is delicious both ways.
- Cook penne according to package directions, salting the water liberally before boiling. Drain but do not rinse.
- In a large skillet melt butter over medium heat. Add minced garlic and saute for a few minutes, careful not to burn it. Add cream and milk, turn heat to medium high and simmer for 5 to 10 minutes. Lower heat and whisk in parmesan cheese and black pepper. Serve over penne and alongside marinated steak.

PASTA WITH TOMATOES, SALAMI AND SMOKED MOZZARELLA

- Toss the tomatoes in a large bowl with 2 tablespoons olive oil, the vinegar and a large pinch each of salt and pepper; set aside to marinate.
- Meanwhile, bring a large pot of salted water to a boil. Add the pasta and cook as the label directs. Reserve 1/2 cup cooking water, then drain. Add the warm pasta to the tomatoes along with the salami and 1/4 cup of the reserved cooking water; stir to combine.
- Add the remaining 1 tablespoon olive oil, the mozzarella, basil and parsley to the pasta; toss until combined and slightly saucy. Add the remaining reserved cooking water as needed to loosen, 1 tablespoon at a time. Season with salt and pepper.

- Heat a nonstick skillet over med-high heat; add in oil and mushroom caps.
- Season mushrooms with steak seasoning and saute 5 minutes on each side.
- Add in vinegar and coat the mushrooms in it.
- When the vinegar has evaporated, turn mushrooms cap side up and cover with sliced cheese.
- Turn off heat and cover pan with foil; let stand 2-3 minutes for cheese to melt.

- Cook pasta according to package directions and drain.
- Chop artichokes, and save the marinade in the jar.
- Mix the pasta with the artichokes, roasted peppers, mozzarella, spinach, and green chilies, stirring to mix well.
- In a small bowl, blend the artichoke marinade with the mayonnaise, Parmesan, pine nuts, garlic, and black pepper.

- Marinate steak for 2-4 hours or overnight.
- To prepare Smoked Mozzarella sauce sautee vegetables in olive oil until translucent, add tomato puree, wine, soy sauce, and reduce by a quarter. Add beef stock and bring to a boil. Whisk in smoked mozzarella and heavy whipping cream until thick and bubbly. Strain.
- In a large sauté pan on Medium High Heat, add oil until warm. Add escarole, garlic.
- And sugar and sauté 1 to 2 minutes. Add white wine. Braise the escarole until soft and all the wine is evaporated.
- Grill marinated steak to desired temperature. Slice.
- Add roasted peppers and 1 1/2 cups smoked mozzarella sauce. Simmer until thickened and toss is cooked pasta. Stir to coat. Add sliced marinated steak to the top and garnish with Parmesan cheese and green onions.
