MARINATED GRILLED PORTABELLA MUSHROOM RECIPE

Marinated Grilled Portabella Mushroom Recipe image

Marinated Grilled Portobello Mushrooms are a hearty vegan and/or vegetarian option for summer barbecues, and this recipe is bursting with fresh, spicy and delicious flavors.*Please note that 6 hours of the prep time is marinating time.

Provided by Valentina K. Wein

Categories     Side Dish

Time 6h18m

Number Of Ingredients 8

2 large portobello mushrooms (about 3 ounces each)
1 tablespoon Tamari or soy sauce, (low sodium)
1 teaspoon lime juice
1 scallion (finely chopped)
1 teaspoon garlic (minced)
1 teaspoon chili paste ((I like Sambal Oelek))
¼ cup grape seed oil
salt and freshly ground black pepper

Steps:

  • Clean the mushrooms. Use a damp towel to gently wipe the mushrooms clean. Then use the dull side of a small paring knife to gently scrape off the gills from the underside of the mushroom. (This little extra step is important because this portion of the mushroom can become quite bitter when it's grilled.)
  • Make the marinade. In a small mixing bowl, combine the tamari or soy sauce with the lime juice, scallion, garlic and chili paste. Then gradually mix in the oil and blend until smooth.
  • Marinate. Place the two mushrooms in a large zip-lock bag and pour the marinade over them. Use your hands to ensure the marinade is evenly covering both sides of the mushrooms. Place the bag in the refrigerator to marinate for at least 6 hours, and ideally overnight.
  • Grill. The next day, when you're ready to cook, preheat your BBQ or stove-top grill. Remove the mushrooms from the bag, gently shaking any excess marinade back into the bag. (Save this for later!) Put the mushrooms on a large plate and season both sides with the salt and pepper. Place the mushrooms on the preheated grill -- if you don't hear a sizzle, take them off until it's hot enough! They will not grill and caramelize properly unless the grill is hot enough! Grill the mushrooms until they are nicely charred and tender, about 3 or 4 minutes per side.
  • Slice and serve. After the mushrooms have slightly cooled, cut them into then slices, place them on serving plate and drizzle with the remaining marinade. Unlike when you're cooking "real" meat, this is totally safe to do! The mushrooms can be served, hot, warm, room temperature or chilled in a salad!

Grilled Mushroom Skewers image

Provided by Food Network Kitchen

Categories     side-dish

Time 25m

Yield 4 servings

Number Of Ingredients 6

4 tablespoons unsalted butter
3 cloves garlic, minced
1 1/2 tablespoons soy sauce
36 cremini mushrooms with 2-inch caps, tough stem ends trimmed (about 1 1/2 pounds)
2 teaspoons fresh thyme leaves, chopped
Kosher salt

Steps:

  • Preheat a charcoal or gas grill to medium high. Swirl the butter in a small saucepan over medium heat until melted. Add the garlic and soften about 2 minutes. Stir in the soy sauce.
  • Put the mushrooms in a medium bowl, add the soy-garlic butter and toss until well coated. Thread the mushrooms on the skewers, putting 7 to 8 on each and leaving 3-inch handles at the ends.
  • Put the skewers on the grill with the handles resting on or just off the edge of the grill (for easier handling, since they will get very hot) and cover. Cook, turning the skewers every 2 minutes or so and brushing with the butter after every turn, until the mushrooms are slightly charred all over and softened, 8 to 9 minutes. Sprinkle with the thyme and parsley or lemon zest if using and season with salt. Alternatively, melt a little extra butter and add the thyme, parsley and/or lemon zest if using and drizzle over the mushrooms.
  • The sixth ingredient: Chopped fresh parsley or grated lemon zest, sprinkled over with the thyme; or you could melt a little extra butter at the end, add the thyme, parsley and or lemon zest and drizzle over.

GRILLED PORTABELLA MUSHROOMS WITH BALSAMIC MARINADE

Grilled Portabella Mushrooms With Balsamic Marinade image

I've used this recipe for years....unfortunately I've forgotten the original source. It's a great dish to offer at a barbecue instead of the same tired old veggie burger. The marinade is very tart and makes a lovely grilled portabella sandwich, but it would also be delicious sliced and placed on top of a nice leafy green salad. I'm posting the recipe as copied onto a piece of paper years ago, but you'll notice the dressing instructions are incomplete - sorry! I usually just grill or broil these and eat them on a bun with some red onion, lettuce, and Vegenaise (vegan mayo), if available.

Provided by groovyrooby

Categories     Vegetable

Time 20m

Yield 6 sandwiches, 6 serving(s)

Number Of Ingredients 15

1 cup balsamic vinegar
2 tablespoons olive oil
1 teaspoon dried basil
1/4 teaspoon kosher salt
1/4 teaspoon white pepper (I just use freshly ground black pepper)
2 garlic cloves, minced
6 portabella mushroom caps (about 1 1/2 lbs.)
cooking spray
1 tablespoon olive oil
1 1/2 cups sliced onions
1/4 cup mayonnaise
1 teaspoon bottled minced roasted garlic
6 whole wheat kaiser rolls or 6 hamburger buns
6 curly lettuce leaves
6 slices tomatoes

Steps:

  • Combine first 6 ingredients in a large zip-top plastic bag. Add caps to the marinade. Seal and marinate in fridge up to 24 hours.
  • Prepare grill or broiler.
  • Remove caps and discard marinade. Place caps on grill rack or broiler coated with spray. Cook 5 minutes or until tender.
  • Heat oil over medium-high heat. Add onion. Cover and cook ten minutes or until golden, stirring frequently. (at this point I assume you mix the onions and garlic into the mayo, but I've never actually used this step).
  • Assemble grilled portabella sandwiches with one cap per bun, plus any lettuce, mayo, tomato, onion, or other garnish that you like. Or slice the portabellas into strips and enjoy as a topping for a mixed green salad with onion, tomato, etc.

GRILLED MUSHROOM SKEWERS

Grilled Mushroom Skewers image

To keep the mushrooms from falling through the grates, I skewered them (everything is better on a stick, or at least my 3-yr old thinks so).

Provided by Natasha of NatashasKitchen.com

Categories     Easy

Time 1h1m

Number Of Ingredients 11

16 oz 1 lb Baby Portabello Mushrooms (crimini or button work too)
1/4 cup olive oil
1/4 cup lemon juice
small handful of parsley
1 tsp sugar
1 tsp salt
1/4 tsp pepper
1/4 tsp cayenne pepper
1-2 garlic cloves
1 Tbsp balsamic vinegar
10 10-inch bamboo/wood skewers

Steps:

  • Place 10 medium skewers into a baking dish and cover with water. It's important to soak the skewers for at least 15 minutes (more is better) or they will burn too quickly on the grill.
  • Place all of the marinade ingredients in a food processor and pulse several times until marinade is nearly smooth.
  • Rinse your mushrooms and pat dry. Cut each mushroom in half, so each piece has half of the mushroom stem.
  • Place the mushroom halves into a large gallon-size ziploc bag, or a medium bowl and pour in the marinade. Shake the bag until all of the mushrooms are evenly coated in marinade. Refrigerate and marinate for 30-45 minutes.
  • Preheat your grill about 300˚F
  • Skewer the mushrooms snugly onto the bamboo/wooden skewers that have been soaking (no need to dry the skewers). Skewering the mushrooms was a little annoying at first until I got the hang of things. I've found that it's easiest to skewer them by twisting them onto the stick. If you just push the stick through, it may cause the mushroom to crack.
  • Place the skewered mushrooms on the hot grill for about 3 minutes per side, making sure the mushrooms do not burn to the grill. The mushrooms are done when they are soft; as mushrooms should be :) Remove from the grill. Cover with foil to keep them warm until ready to serve.

GRILLED PORTOBELLO MUSHROOMS

Grilled Portobello Mushrooms image

How to make the best Grilled Portobello Mushrooms. Simple recipe that's perfect for a portobello steak, grilled portobello mushroom burger, or easy side.

Provided by Erin Clarke / Well Plated

Categories     Main Course     Side Dish

Time 25m

Number Of Ingredients 10

4 large portobello mushrooms (stems and gills removed, wiped clean)
1/4 cup balsamic vinegar
1 tablespoon extra virgin olive oil
1 tablespoon low sodium soy sauce
1 tablespoon chopped fresh rosemary (or 1/2 teaspoon dried)
1 teaspoon garlic powder
1/2 teaspoon black pepper
1/8 teaspoon cayenne pepper (optional, plus additional to taste)
Canola or vegetable oil (for grilling)
Optional for serving: Herby Avocado Sauce; these also make delicious mushroom burgers

Steps:

  • In a shallow baking dish, whisk together the balsamic vinegar, olive oil, soy sauce, rosemary, garlic powder, black pepper, and cayenne. Taste and adjust seasonings if you like. Add the mushrooms and turn to coat. Let sit for 5 minutes on one side, then flip and let sit 5 additional minutes. While the mushrooms marinate, prep the grill and anything you'd like to serve with them. You can let them sit for up to 30 minutes, so feel free to take your time-the longer they sit, the more intense the flavor will be.
  • Heat a grill or a large skillet over medium heat (about 350 to 400 degrees F). Brush the grill with oil to prevent sticking. Remove the mushrooms from the bowl, shaking off any excess marinade and reserving the marinade for basting. Cook on each side for 3-4 minutes, or until caramelized and deep golden brown. Brush the remaining marinade over the mushrooms several times as they cook.
  • To serve, top the portobello mushrooms with the avocado sauce or any topping you like.

MARINATED GRILLED MUSHROOMS

MARINATED GRILLED MUSHROOMS image

Categories     Mushroom     Vegetarian     Quick & Easy

Yield 2 people

Number Of Ingredients 11

0.5 kg of mushrooms (portabella are the best, but we also use 'funghi pleurotus'... just get big, pretty ones... not the champignon white guys)
for the marinade (you can double this if you want them super saucy!):
4-5 tablespoons extra-virgin olive oil
4 tablespoons chopped fresh rosemary
2 tablespoons chopped fresh thyme
2 tablespoons finely chopped shallots
2 tablespoons balsamic or red wine vinegar
2 tablespoons mustard (whole grain is better)
2 teaspoons of finely chopped garlic
2 teaspoons kosher salt
2 teaspoons black pepper

Steps:

  • 1. mix the marinade together 2. add it to a bowl of the fresh mushrooms and gently toss them so that they're covered in the marinade. 3. set your table, because they don't take long to cook - let the mushrooms marinade for about 15 - 20 minutes. 4. spread the mushrooms out on a stove top grill (if you don't have a grill, I suppose you could just do it in a frying pan 5. Depending on the size of the mushrooms, they usually only need 10-15 minutes. Don't let them dry out - use a spoon to cover them with the marinade. Helps to heat the plates in the oven before you eat, otherwise they cook off pretty quickly.

  • Marinate the mushrooms. Combine all ingredients in a gallon zip-top bag. Close the lid and gently shake to coat each mushroom with the marinade. Place in the refrigerator and marinate for 1 hour. Don't marinate for longer than 1 hour, or the salt and vinegar will start to change the texture of the mushrooms.
  • Preheat the grill. Preheat your grill to 450 degrees F. This recipe works on all types of grills and would even work in the oven.
  • Grill! Transfer your mushrooms to a grill pan with holes in the bottom. Pour gently so you don't dump marinade into the pan and through the holes. Reserve the marinade to use during the grilling process. Grill the mushrooms. Place the grill pan on the grill grates and close the lid to your grill. Cook the mushrooms for about 12 minutes, stirring the mushrooms and drizzling in the reserved marinade every 3 minutes.
