MARINATED COLESLAW

Marinated Coleslaw image

Great for cookouts and picnics (when you don't want to use a mayo-based dressing) as well as for any time. Definitely a family favorite. The recipe makes a bunch but is easily cut in half.

MARINATED COLESLAW

Marinated Coleslaw image

This recipe was given to my mother by a dear friend. I use pre-packaged slaw mix that has the carrots already in it and just add the onions. Also, I use Canola oil instead of Crisco. This can be made "days" in advance as it gets better as it sits.

Time 2h

Yield 6-8 serving(s)

Number Of Ingredients 7

2 (1 lb) packages coleslaw mix
1 medium onion, chopped
3/4 cup sugar
2 tablespoons salt
1 tablespoon garlic powder
1 cup cider vinegar
2/3 cup Crisco cooking oil (I use canola oil)

Steps:

  • Bring to boil, cider vinegar, oil, sugar, salt & garlic powder, stirring.
  • Pour the hot dressing over the 2 lbs of cabbage mixture and onions and stir (It will look like there is not enough dressing for the amount of cabbage, but as the cabbage breaks down, you will have plenty).
  • Cover tightly.
  • Let sit on the counter for 2 hours (stirring occasionaly during the 2 hours while it marinates), then refrigerate.

ZOE'S FETA COLE SLAW

Zoe's Feta Cole Slaw image

This is a little different from most coleslaws because it is vinegar based and has feta cheese in it. I love the slaw at Zoe's so I tried to re-create it and think I came pretty close. Not sure of the exact measurements so I just estimated them on here. Great for as a side for a BBQ. The cook time includes refrigeration.

Yield 8-10 serving(s)

Number Of Ingredients 8

1 small head of cabbage, thinly sliced
1 (6 ounce) package crumbled feta
6 -7 green onions, chopped
1/4 cup red wine vinegar (I used a splash of white vinegar along with this)
1/2 cup extra virgin olive oil
salt
pepper
1 -2 teaspoon sugar

Steps:

  • Combine shredded cabbage, feta and chopped green onions in a large bowl.
  • In a separate bowl whisk together vinegar, salt, pepper, sugar, and EVOO.
  • Pour over the slaw and toss.
  • Refrigerate until ready to serve. It's best if you let it refrigerate for a few hours so you may want to make it the day before.

MARINATED SLAW

Marinated Slaw image

This is a delectable dish that looks as good as it tastes. Mother usually saved this recipe for special occasions, but when she did make it, we sure enjoyed it. The best part is the mouthwatering dressing that even tempted us while it cooked.-Mary McGuire, Graham, North Carolina

MARINATED COLESLAW

Marinated Coleslaw image

In 1973 I lived on the lake in North Summerton, SC (Santee). We were always having cookouts -fish fries, etc. One of the neighbors gave me this recipe back then for Marinated Coleslaw. Some of my friends, as well as my son, do not like mayonnaise based coleslaw; but they really like this coleslaw. I usually make it using...

Time 20m

Number Of Ingredients 9

1 head of green cabbage, grated or shredded -i sometimes combine and add red and green cabbage*
1 1 onion, slicde in thin rings - cut rings 1 or 2 times (if you like the flavor of onions -but not the onions, leave the rings whole and remove before serving)
3/4 c sugar
1 tsp sugar
3/4 c salad oil
3/4 - 1 c white vinegar
1 tsp salt
1 tsp celery seed
1 tsp dry mustard (or 3 teaspoons prepared mustard)

Steps:

  • 1. Combine first two ingredients and sprinkle 3/4 cup of sugar on top.
  • 2. Mix together 1-teaspoon sugar, celery seed, vinegar, mustard and salt in a saucepan. Heat to boiling. Add salad oil; again bring to a boil and then simmer for two minutes.
  • 3. Pour over slaw mixture; mix well. Cover tightly and refrigerate for several hours or overnight. Enjoy!
  • 4. * If desired, add 1 grated carrot and 1 cup diced celery to slaw.
  • 5. NOTE 1: You may add Onion or Italian Dressing -instead of the oil and vinegar (or 1/4 pkg. Onion Dressing), if desired. I like the original recipe -above, myself.
  • 6. NOTE 2: This will keep up to a week in the refrigerator -if it lasts that long.

KITTENCAL'S MARINATED OIL AND VINEGAR COLESLAW

Kittencal's Marinated Oil and Vinegar Coleslaw image

I make this quite often for BBQ parties and everyone loves it! plan ahead, this salad must be prepared a day ahead and left in the fridge overnight to blend the flavors, it will take on a completely different flavor --- I have even added in lightly blanched broccoli and/or cauliflower florets to the veggies, feel free to add in whatever you want to --- remember to add in the white sugar to suit taste if you prefer a sweeter coleslaw adjust the sugar amount, I have added up to about 1 cup, taste the dressing before adding to the salad if you think it needs more sugar then add it into the dressing before mixing into the slaw just make certain to whisk very well so that the sugar is mixed in completely.
