CITRUS MARINATED OLIVES

1 pound large green olives with pits
1 clove garlic, minced
1/2 cup extra-virgin olive oil
1 tablespoon red wine vinegar
1 lemon, zested and juiced
1/2 teaspoon dried red pepper flakes
1/2 teaspoon dried tarragon
1/4 teaspoon curry powder

Steps:

  • Drain the olives of any brine and rinse thoroughly with cool water. Cover in cool water and allow to soak for at least 5 minutes and up to 5 hours.
  • In a 1 to 1 1/2-quart container combine the garlic, olive oil, vinegar, lemon zest and juice, red pepper flakes, tarragon, and curry powder. Add the olives and stir or shake to combine. Make sure the olives are submerged in the marinade.
  • Allow to sit in a cool dry place for 1 day. Place in the refrigerator for another day or 2 before serving.

I have used this recipe for a number of years, and most often marinate enough steak for a few meals. After the marinade time, the steak can be frozen in meal-sized portions for quick meals later. The flavor of this carne asada is much better, and the meat much more tender, than any I have had in Mexican restaurants. If cut in strips, this meat also works very well for fajitas. Serve with tortillas, Mexican rice, and beans.

1 pound broccoli crowns
1 medium zucchini, chopped into 1/2-inch pieces
1 pint cherry tomatoes, sliced
One 15-ounce can chickpeas, rinsed and drained
2 medium cobs sweet corn, shucked and kernels shaved off (about 2 cups)
1 cup fresh cilantro leaves
1 cup fresh parsley leaves
1/4 cup rice wine vinegar
1 tablespoon Dijon mustard
1 tablespoon chopped Hatch peppers
1 tablespoon honey
2 cloves garlic
1 medium navel orange, juiced (about 1/4 cup)

Steps:

  • For the broccoli and chickpea salad: Prepare a large pot of boiling salted water and fill a large bowl with ice water. Remove the broccoli stalks and set aside for another use. Trim the broccoli crown into florets. Add the broccoli florets to the pot of boiling water and blanch for 2 to 3 minutes, until bright green and just fork-tender. Remove the broccoli florets with a slotted spoon and plunge them in the bowl of ice water. Drain the broccoli when fully cooled.
  • Place the zucchini in a colander or on paper towels and salt generously. Let stand for 10 minutes, until some water is released.
  • Place the broccoli, zucchini, tomatoes, chickpeas and corn in a large bowl; set aside.
  • For the citrus-herb marinade: Place the cilantro, parsley, rice wine vinegar, Dijon, Hatch peppers, honey, garlic and orange juice in a food processor and pulse a few times until the herbs and garlic are finely chopped. The mixture will be loose.
  • Pour over the vegetables in the bowl and toss to dress. Place in the fridge and chill for 1 hour. Season to taste with salt and pepper before serving.

3 oranges
3 garlic cloves, chopped
7 tablespoons extra virgin olive oil
1/4 teaspoon cayenne pepper, plus
1 pinch cayenne, for the dressing
salt & freshly ground black pepper
4 (6 -8 ounce) boneless skinless chicken breast halves
1 large head radicchio
1 small red onion, thinly sliced
1 bunch arugula, stemmed and thoroughly cleaned
3 sprigs fresh oregano, stripped of leaves then chopped
2 tablespoons honey
1 tablespoon Dijon mustard
4 slices crusty bread

Steps:

  • Preheat a grill pan or outdoor grill on high.
  • Zest 2 of the 3 oranges and put the orange zest in a large, shallow dish. Juice half an orange and add to the zest.
  • To the zest and juice, add the garlic, 3 Tbs EVOO, 1/4 t. cayenne, salt, and pepper, and stir to combine.
  • Add the chicken breasts, toss to coat thoroughly, and let marinate for 5 minutes.
  • While the chicken is marinating, with a paring knife cut the skin and white pith from the 2 remaining whole oranges, being sure to remove it all. Slice the oranges into disks and place in a salad bowl.
  • Cut the radicchio in quarters through the core, cut the core off from each quarter, and then thinly shred the radicchio and add to the oranges.
  • Add the red onions and arugula.
  • To make the dressing, juice the other half orange into a small bowl and add the pinch of cayenne, the oregano, honey, and mustard. In a slow, steady stream, whisk in the 4 remaining Tbs of EVOO.
  • Transfer the marinated chicken to the grill and cook on each side for 5 to 6 minutes, or until cooked through.
  • Remove from the grill and let rest for a few minutes. Lightly toast the bread.
  • Thinly slice the grilled chicken on an angle, add to the salad, and then pour the dressing over. Toss to combine and serve with the toasted bread.

2 oranges - peeled, segmented, and chopped
2 stalks celery, sliced

Steps:
