- In a quart jar with a tight-fitting lid, layer a third of the cheese, peppers, thyme and garlic. Repeat layers twice. , In a small bowl, whisk the oil, rosemary, Italian seasoning and pepper flakes. Pour into jar; seal and turn upside down. Refrigerate overnight, turning several times. Serve with bread or crackers.

Create four 6-in.-long blocks of stacked cheeses, sandwiching 9 cream cheese slices between 10 cheddar slices for each stack. This a very tasty appetizer, served with toasted Italian bread and chopped tomatoes. I always have a jar of this in the refrigerator for when I have unexpected guests.

- Cut feta cheese into cubes. Slice garlic. Place peppercorns and corriander seeds in a mortar and crush lightly with pestle.
- Pack the feta cubes into a large preserving jar with bay leaf, interspersing layers of cheese with garlic, crushed peppercorns and corriander, capers, olives and the fresh oregano sprigs.
- Pour enough olive oil in jar, to cover. Close tightly and leave to marinate for 2 weeks in the refrigerator.
- Lift out the feta cubes and serve on toasted bread with chopped tomatoes and a little of the flavored oil.

Perfect to serve as an appetizer or a great way to add interest to a salad. Marinated in extra virgin olive oil, lemon, herbs, sun-dried tomatoes and garlic.

- At the bottom of the jar, add about half of the tomatoes, thyme, rosemary, chillis and garlic cloves.
- Put half of the feta cubes on top, then add the other half of the tomatoes, thyme, rosemary, chillis and garlic cloves on top of that. Fill the rest of the jar with the feta.
- Top up the jar with the olive oil, so that the feta is covered. Squeeze in the lemon juice, seal, and put in the fridge.
- Let the feta marinade for at least 4 hours.

This recipe was given to me by a friend. I have made it several times, and it doesn't last long! It does take a while to prepare, but it is worth it. Great presentation and delicious flavors.

- Cut cheddar cheese and cream cheese into 1/4 inch slices, then again in half.
- Using a small dish, place cheese slices on end alternating cheddar and cream cheese.
- Make the marinade by combining sugar, basil, salt, pepper, oil, vinegar, pimento, parsley, onion and garlic.
- Pour marinade over cheese, cover and refrigerate overnight.
- Serve with crackers.

- Carefully cut feta into cubes.
- Add garlic slices, peppercorns, coriander seeds, capers, bay leaf to your food processor and pulse. (Or use a mortar and pestle and crush).
- Put feta in a jar with a top, or use a bowl to add all ingredients together.
- Layer ingredients starting with feta, ingredients, topping with Thyme sprigs on top.
- Pour enough olive oil to cover cubes of cheese.
- Let marinate in refrigerator for 2 weeks for optimal taste, however; even overnight can be used with good results.
- At end of marinating time, just simply pick out the feta.
- Serve with fresh toast points and some chopped fresh tomatoes and it will be ummm -- ummm -- good.

- Mix the rest of the ingredients in a bowl or measuring cup and pour over cheese.

- In a jar with a tight fitting lid, combine the olive oil, wine vinegar, pimento, parsley, green onion, garlic, sugar, basil, salt and pepper. Shake vigorously to blend. Set aside.
- Cut the block of Cheddar cheese in half lengthwise. Cut crosswise into 1/4 inch slices to form squares. Repeat with cream cheese. Arrange cheese squares alternately in a shallow baking dish with slices standing on edge. You can arrange in a single long row, or 2 parallel rows depending on the size of your dish. Pour the marinade from the jar over the cheese slices, cover and refrigerate for at least 6 hours, or overnight.
- To serve, remove slices to a serving platter so they are still arranged in an alternating pattern. Spoon some of the extra marinade over the cheese, and serve with crackers.
