BAKED CURRY TOFU
I didn't have much in the fridge for dinner one night, aside from tofu, ketchup and curry powder, and so I decided to put it all together. It ended up tasting great, and my daughter loves it!

- Preheat the oven to 425 degrees F and line a baking sheet with parchment paper.
- In a large bowl, mix together the ketchup, butter, maple syrup, curry powder, garlic powder and onion powder. Add the tofu and gently toss to combine, taking care not to break up the pieces, and season with salt and pepper.
- Arrange the tofu on the prepared baking sheet. Bake until the tofu is nicely browned and crispy and the sauce has caramelized, about 30 minutes. Serve over brown rice with steamed broccoli and fresh cubed mango.

- Slice tofu into 1/4 inch slices.
- Combine remaining ingredients and whisk until well blended.
- Marinate tofu 2-3 hours or over night.
- Drain tofu and bake at 350°F for 20 minutes.
CRISPY BAKED TOFU
From the Daily Herald. Joe Yonan is a food writer whose recipes I really like. I have not made this one yet, but am willing to bet it is good. Yonan says the freezing creates a much more satisfying texture to the tofu, and it also absorbs more of the marinade. The baked tofu can be eaten right away with veggie sides, or it can be cooled and used in salads, stir-fries or other dishes. Freezing time for the tofu is not included in the prep time.

- Leave the tofu in its packaging and freeze for at least 24 hours and up to 1 week. Transfer to the refrigerator and allow to defrost for one day. Once it has defrosted, remove it from the package and drain, then wrap in it paper towels, hold it over the sink and press with your hands to remove much of the liquid.
- Preheat oven to 350 deg.
- Cut the tofu into 1 inch cubes.
- Press or finely mince the garlic, mix together with all other ingredients in a 9 x 13 baking dish.
- Add the tofu cubes and gently toss to combine with the marinade.
- Bake for 45 minutes, turning the tofu three or four times, until the tofu is browned and most of the marinade is absorbed or evaporated.
- Serve immediately or cool and refrigerate for up to a week in an airtight container.

- Drain tofu and press for thirty minutes to remove excess water.
- To prepare marinade, mix the soy sauce and water, then add ginger, garlic, and cumin. 1 tsp cayenne pepper can be added for a spicy kick. Put marinade into a medium-sized, flat plastic container for marinating.
- Slice tofu into 6 equal-sized "cutlets" and lay flat, side-by-side, in marinade. The container should be small enough so that the marinade covers at least half of the tofu.
- Cover and refrigerate for 4 hours, turning the tofu pieces over halfway through.
- Cover a pan with tin foil and place marinated tofu on foil, brushing extra marinade over each piece.
- Bake at 350 for 20 minutes, remove and flip tofu, then bake for an additional 20 minutes, or until the edges appear golden brown.
- Serve warm or refrigerate and serve chilled later.

BASIC MARINATED AND BAKED TOFU

- Wrap the tofu in paper towels and press under a heavy skillet for 15 minutes. If it's still pretty wet, replace the towels and press it again.
- Mix the soy sauce, vinegar, and oil in a container that is small but big enough for all the tofu.
- Cut the tofu in half inch slices and place in marinade.
- Turn it over after about 15 minutes.
- Preheat oven to 350°F.
- Wipe some of the oil from the marinade on your baking sheet.
- Arrange the tofu slices in one layer and bake for 15 minutes.
- Turn them over and bake another 15 minutes.
MARINATED BAKED TOFU
I am addicted to baked tofu!! Thank you Mollie Katzen and The Enchanted Broccoli Forest for the excellent marinade recipe! The tofu never lasts long enough to make it into a stir-fry at my house. I end up eating it by itself. I love it hot or cold. And of course absolutely everything to do with this recipe can be adapted to taste or what you have in the kitchen. Enjoy!

- Drain tofu and cut into 1" cubes.
- Mix all other ingredients together except olive oil.
- Pour marinade over tofu and cover.
- Refrigerate overnight or longer (I've left it for 3 nights).
- Lightly grease baking pan or sheet with olive oil.
- Arrange tofu in single layer on sheet, making sure not to forget the garlic and ginger from the marinade dish.
- Bake at 350 degrees for 50-60 minutes, flipping tofu at least once during the process, until brown and slightly crispy.

- Follow my instructions HERE for pressing tofu and cut it into your desired shapes. I like to cube mine into bite sized pieces but really anything works! Set side.
- I like to whisk together my marinade directly in the dish/ bag that I plan to marinate the tofu in. A plastic baggie, stasher bag, or really any kind of shallow resealable container works well. Add all of the ingredients (minus the tofu) and whisk until fully combined.
- add in your tofu pieces and let marinate for 30 minutes or even overnight. See notes above for freezing. Ideally this will marinate for a good few hours but even just 30 minutes makes a big difference.
- and ENJOY! As desired, you can use the leftover marinade to make a sauce for your tofu (this works with all of the marinades EXCEPT the peanut marinade). Add it into a saucepan with a cornstarch slurry (2 tablespoons of water + 1/2 tablespoon of cornstarch) and cook over medium heat until thickened (about 3-5 minutes). It makes for a great sauce to put on top of the tofu!

- Place tofu container in the fridge for at least a few hours, one night is ideal (and up to 3 nights is okay as well). If you get a chance give the tofu a shake to get the marinade over all the tofu pieces.
- When you are ready to cook the tofu, drain away the excess marinade. Place the tofu onto a baking tray lined with either parchment paper or a silicone baking mat.
