This lemony garlic marinade is the perfect way to make any cut of lamb sing. Marinate at least one hour before cooking, but as long as overnight! If you're grilling, make sure to reserve some marinade for basting.

1/2 cup lemon juice
1 large head of garlic (about 12 large cloves, peeled)
1 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Combine all ingredients and blend until smooth. I like to use my immersion blender, but an upright would work well too.
  • Use half for marinade, and reserve second half for basting, dipping, and dressing.
  • Makes about 1 cup of marinade.
  • Enjoy!

1/2 cup extra-virgin olive oil
3 sprigs fresh oregano, leaves finely chopped
3 sprigs fresh dill, finely chopped
3 sprigs fresh mint, leaves cut into chiffonade
2 cloves garlic, smashed and finely chopped
1 lemon, zested and juiced
Pinch crushed red pepper flakes
Pinch kosher salt
4 thick (3/4-inch) lamb shoulder chops

Steps:

  • Whisk together the olive oil, oregano, dill, mint, garlic, lemon zest and juice, red pepper flakes and salt in a small bowl to form a thick paste. Slather on the lamb chops. Marinate the chops at room temperature up to 2 hours or in the refrigerator for up to 2 days.
  • If the lamb was in the refrigerator, let it come to room temperature before grilling.
  • Preheat the grill to medium. When the grill is hot, brush the grates with a wire grill brush to loosen any crud. Wipe the grates with an oiled side towel to pick up any loose soot or crud.
  • Arrange the lamb chops on the grill. Do not move the chops for 2 to 3 minutes to allow lovely grill marks to form. Rotate the chops 90 degrees to create cross-hatch grill marks and grill for another 2 to 3 minutes. Flip the chops and repeat the process. Remove the chops from the grill to a platter and let rest for 5 to 10 minutes before serving.

Steps:

  • For the Mint Yogurt Marinade - chop the mint, mince the garlic, squeeze the lemon juice and mix the ingredients together. Cover the lamb chops completely. This marinade also tenderizes, so do not use it overnight - 2 to 3 hours is ideal.
  • For the Spiced Dark Ale Marinade - first soak the star anise in the ale for 5 minutes then add the rest of the ingredients and whisk until combined. Cover the lamb chops with the marinade.
  • For the Greek Marinade - chop the oregano (or use the dried version) and mince the garlic. Mix all the ingredients and rub all over the lamb chops.

3 cloves garlic, finely chopped
zest and juice 1 lemon
2 tbsp finely chopped rosemary leaves
3 tbsp olive oil
800 g lamb chops (leg or shoulder chops, or cutlets)
1 lemon, halved
homemade or store-bought hummus*

Steps:

  • In a large dish, make marinade by mixing together garlic, lemon zest and juice, rosemary and olive oil. Pat lamb chops dry and add to dish. Spread and massage marinade all over lamb chops on both sides. Cover with cling film and place in the fridge to marinate for at least a few hours (or overnight).
  • When ready to cook, bring the marinated lamb to room temperature (about 30 minutes). Heat barbecue to high. Grill chops for about 4 minutes on each side for medium; grill lemon halves, cut side down, at same time. Cover lamb loosely with foil and rest for a few minutes before serving.
  • Serve lamb chops with hummus on the side and grilled lemon halves to squeeze over just before eating.

  • Mix Marinade ingredients in a bowl until salt dissolves. Add lamb, mix to coat, then marinate at least 2 hours, preferably overnight, up to 24 hours.
  • Brush BBQ bars with oil if required (Note 1) and heat to medium high (or heat 1/2 tbsp oil in skillet on stove on medium high).
  • Cook lamb to your taste. I had 4 x 150g/5oz lamb loin chops about 2cm/3/4" thick and 3 minutes on each side = medium. I also cooked smashed garlic cloves and rosemary sprigs for garnish.
  • Transfer lamb to plate, cover loosely with foil and rest for 5 minutes.

Skordalia is often made with mashed potatoes or bread soaked in water, but we feel the yogurt gives it more flavor. Skordalia is also good with grilled fish or chicken breasts.

Greek Marinade for Lamb:
1/3 cup olive oil
juice of 2 lemons
1/4 cup dried oregano, preferably Greek, or 1/2 cup chopped fresh
6 garlic cloves, chopped

3 1/2-4 1/2 pounds lamb loin or rib chops, 3/4-1 1/4 inch thick, trimmed, OR 4 pounds lamb for kebabs cut into 1 1/2-inch chunks, OR a 3 1/2- to 4 1/2-pound leg of lamb, fat trimmed and butterflied
If Making Kebabs:
1 large onion, cut into 1-inch pieces

Steps:

  • Mix all the ingredients together into a paste in a small bowl and rub it all over the lamb. Place the lamb in a shallow bowl and cover with any remaining marinade. Marinate for about 2 hours at room temperature, or, preferably, cover the lamb and marinate overnight in the refrigerator, turning the meat from time to time.
  • To grill lamb chops: Depending on their thickness, grill the chops over medium-hot coals for 3 to 5 minutes per side, turning once or twice. The chops should register 120° to 135°F at the thickest part for rare to medium rare. You can also broil them 3 inches from the flame for 3 to 5 minutes per side, or until cooked as above.
  • To grill kebabs: Skewer the marinated lamb chunks on wooden or metal skewers, alternating with chunks of onions or peppers, if desired. Grill until the meat reaches 130° to 135°F for medium-rare to medium.
  • To grill a lamb leg: You may want to insert long metal skewers crosswise in the butterflied leg to hold it flat. Grill the leg over medium-hot coals, turning often, for 20 to 30 minutes. At its thickest point, the meat should register 120° to 130°F for rare to medium-rare; thinner parts will them be medium-rare to medium. Let the lamb rest, covered loosely with foil, for 5 to 10 minutes before slicing on the diagonal and serving. The internal temperature will rise 5° to 10°F more.
  • Meanwhile make theSkordalia . Serve with the lamb.

Salt and pepper to season
2 tbsp extra virgin olive oil (to fry)
1 tbsp fresh thyme (, finely chopped)
1 tbsp dried oregano (, Greek oregano preferably)
1 tbsp fresh rosemary (, finely chopped)
½ tbsp fresh mint (, finely chopped)
2 garlic cloves (, minced)
4 tbsp extra virgin olive oil
lemon wedges (to serve)

Steps:

  • Season your chops liberally with coarse salt and freshly ground pepper.
  • Prepare the marinade: combine the thyme, oregano, rosemary, mint, garlic and olive oil in a small bowl.
  • Rub the marinade over the lamb, massaging it into the meat, and leave for up to 20 minutes at room temperature.
  • Heat a large skillet over high heat for 30 seconds. Add the olive oil and heat until it slides easily around the skillet.
  • Reduce heat to medium-high and add the chops. Sear until they are well browned on the first side, about 3 minutes. They should be cooked medium rare 57°C (135°F) if checked with a meat thermometer.
  • Flip the chops over and cook for another 3-5 minutes (depending on thickness).
  • Transfer the chopes to a warm plate and leave them to rest for 5 minutes. This will allow the proteins in the meat to relax for maximum juiciness!
  • Serve with lemon wedges on the side and a green salad or choose from your favourite side dishes.

Just like a Greek restaurant or even better! Whether you decide to grill them or fry them in a cast iron skillet (or regular pan), these homemade Greek Lamb Chops are a family favourite! Once you try these you will never look back!

1/4 cup olive oil
Juice of 1 lemon ((about 1/4 cup lemon juice))
2 tsp dried oregano (preferably Greek, or 1/2 cup chopped fresh)
4 cloves garlic (minced)
1 tsp salt
1/2 tsp freshly ground black pepper
8 lamb chops
1 tbsp olive oil (for cooking)

Steps:

  • Using paper towels, pat dry chops and discard any shards or bone fragments.
  • Mix all of the ingredients together in a small jug or bowl.
  • Arrange lamb chops in a large baking dish or on a large plate, and pour the marinade all over the lamb, rubbing it into the meat. Cover with plastic wrap and marinate for half an hour, or for a deeper flavour, marinate overnight in the refrigerator, turning the chops from time to time (before cooking, let lamb chops sit at room temp 30 minutes).
  • Heat oil in a pan (cast iron preferably or grill plates) over high heat until just starting to smoke. Fry or grill lamb in 2 batches for 3-4 minutes each side, depending on thickness until done to your liking. (Usually, at 3 minutes per side they are medium, and at 4 minutes they are medium-well.)
  • Let rest for 5 minutes before serving.Sprinkle with a little extra dried oregano for added flavour and a little extra lemon juice (optional).

This marinade is enough for eight 1-inch thick lamb chops, if you are making more than eight chops I suggest to increase the ingredients. I made this on my indoor grill, it usually takes about 4 minutes per side for medium-rare using 1-inch thick chops, if you are grilling outdoors they will be done slightly faster, you can also broil these in your oven.

4 Large Boneless Lamb Loin Chops
1/4 Cup Olive Oil
1 Tablespoon Fresh Thyme, Chopped
1 Tablespoon Fresh Parsley, Chopped
2 Teaspoons Fresh Mint, Chopped
2 Cloves Garlic, Minced
Zest Of 1 Lemon
1 Teaspoon Salt
1/4 Teaspoon Black Pepper

Steps:

  • Mix together all of the marinade ingredients and place in a shallow casserole dish along with the lamb ensuring the marinade coats the lamb well.
  • Refrigerate for at least two hours or up till 6 hours.
  • Remove from the refrigerator 45 minutes before you are ready to cook to allow the meat to come to room temperature.
  • Preheat the oven to 400 degrees F.

1 cup Nicoise or Kalamata olives, pitted
1/2 cup green or Castelvetrano olives, pitted
1/2 cup fresh parsley leaves
1/4 cup extra-virgin olive oil, plus more for oiling the grill
2 tablespoons capers, rinsed and drained
2 to 3 anchovy fillets
1 clove garlic
12 lamb chops, preferably American, about 1 inch thick
1 lemon, sliced into wedges

Steps:

  • Combine the Nicoise olives, green olives, parsley leaves, olive oil, capers, anchovy fillets and garlic in a food processor. Pulse until finely chopped and the mixture is tight. Set aside.
  • Combine the lamb chops and half of the tapenade in a large bowl (reserve the remaining tapenade for garnish). Refrigerate and allow to marinate for 2 hours or up to overnight.
  • Preheat the grill or a grill pan to medium-high. Lightly oil the grill grates.
  • Add the lamb to the grill and turn up the heat slightly. Grill the lamb on each side for around 3 minutes for medium-rare, with an internal temperature of 130 to 135 degrees F. Serve with the reserved tapenade and a wedge of lemon.
