Ice cubes
3 ounces tequila
2 ounces freshly squeezed lime juice
1 ounce Simple Syrup, recipe follows
1/2 to 1 teaspoon orange liqueur
1 tablespoon Lime-salt-sugar, recipe follows
1 cup sugar
1 cup water
Zest of one lime
2 tablespoons kosher salt
2 tablespoons sugar

Steps:

  • Fill a cocktail shaker with ice. Add tequila, lime juice, Simple Syrup and orange liqueur. Cover and shake until mixed and chilled, about 30 seconds. (In general, the drink is ready by the time the shaker mists up.) Place Lime-salt-sugar on a plate. Press the rim of a chilled rocks or wine glass into the mixture to rim the edge. Strain margarita into the glass.
  • Put the sugar and water in a small saucepan. Cook over low heat, stirring, until the sugar dissolves. (Alternatively, heat in the microwave.) Store in a sealed container in the refrigerator for up to 1 month.
  • Blend together lime, salt and sugar in a small blender or mini food chopper.

Mastering the margarita requires a certain amount of practice, but once you dial-in your perfect ratio, it's a really easy cocktail to replicate. The classic recipe is 3 parts tequila, 2 parts triple sec, and 1 part freshly squeezed lime juice, and you should probably start off pretty close to that, but my personal favorite proportions are 4-3-2.

1 pinch coarse sea salt to taste
1 large ice cube
ice
2 fluid ounces white tequila
1 ½ fluid ounces triple sec
1 fluid ounce freshly squeezed lime juice
1 slice lime

Steps:

  • Moisten the rim of a glass with a lime wedge. Sprinkle salt onto a plate. Lightly dip the moistened rim into the salt. Place a large ice cube in the glass and freeze the prepared glass until ready to serve.
  • Fill a cocktail shaker with fresh ice. Add tequila, triple sec, and lime juice. Cover and shake vigorously until outside of the shaker has frosted. Strain into the prepared glass and garnish with a slice of lime.

2 tablespoons sugar
1 tablespoon chopped fresh cilantro
1 teaspoon lime zest
2 cloves garlic, minced
1/2 teaspoon salt
2 tablespoons lime juice
1 -2 jalapeno pepper, seeded and chopped
2 steaks, about 1 inch thick (You can use T-bone, rib-eyes, or even sirloin steaks if you like)

Steps:

  • In a glass baking dish combine all the ingredients except steaks, mix well.
  • Place steaks in mixture turning to coat both sides.
  • Cover and refrigerate at least 4 hours to marinate, turning steaks over occasionally.
  • Fire-up the grill, when ready, remove steaks from marinade, reserving marinade.
  • Grill steaks to desired doneness, turning once and brushing occasionally with marinade.

1 (1 1/2 lb) round steaks, fat trimmed
1/4 cup tequila
1/2 cup lime juice
1 cup vegetable oil
4 tablespoons liquid smoke
1 teaspoon Worcestershire sauce
1/4 teaspoon pepper
1/2 teaspoon salt
3/4 teaspoon paprika
1/2 cup chopped green bell pepper
1 cup chopped green onion, tops and bottoms
1 cup chopped tomato
flour tortilla

Steps:

  • Slice partially frozen round steak into thin, long strips.
  • Marinate 2 hours in flat dish with mixture of tequila and lime juice.
  • Mix cooking oil, liquid smoke, Worcestershire sauce, pepper, salt and paprika and marinate meat, covered, in refrigerator for four days.
  • Heat a heavy cast iron skillet over medium high heat; drizzle marinade into the skillet. When hot, add steak strips, stirring occasionally.
  • Three or four minutes before meat reaches desired doneness, stir in onion and green pepper.
  • When done, ladle onto hot plates, and top with chopped tomato.
  • Serve with warmed flour tortillas.
