Categories     World Cuisine Recipes     Latin American     Mexican

Time 4h20m

Yield 8

Number Of Ingredients 10

1 cup finely crushed pretzels
¼ cup white sugar
⅓ cup margarine, melted
1 (14 ounce) can sweetened condensed milk
⅓ cup frozen limeade concentrate, thawed
2 tablespoons tequila
1 tablespoon orange liqueur
3 drops green food coloring, or as needed
1 cup heavy whipping cream
1 lime, sliced

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Mix pretzels and sugar together in a bowl; stir in margarine until evenly incorporated. Spoon mixture into a 9-inch pie plate; press into bottom and up sides of plate to form a firm, even crust.
  • Bake crust in the preheated oven until edges are lightly browned, about 5 minutes. Cool on a wire rack.
  • Mix sweetened condensed milk, limeade concentrate, tequila, orange liqueur, and green food coloring in a large bowl.
  • Beat cream in a glass or metal bowl until soft peaks form. Lift your beater or whisk straight up: the whipped cream will form soft mounds rather than a sharp peak. Fold whipped cream into sweetened condensed milk mixture. Spoon filling into cooled crust.
  • Cover pie with plastic wrap and freeze until firm, about 4 hours. Let stand for 10 minutes before serving; garnish with lime slices.

Yield Makes one 9-inch pie

Number Of Ingredients 12

1 1/2 cups graham cracker crumbs
6 tablespoons (3/4 stick) unsalted butter, melted
2 cans (14 ounces each) sweetened condensed milk
2 tablespoons finely grated lime zest
3/4 cup freshly squeezed lime juice
6 tablespoons tequila
4 teaspoons orange-flavored liqueur
Pinch of salt
1 cup heavy cream, chilled

Lime slices, for serving (optional)

  • In a medium bowl, stir together condensed milk, zest, juice, tequila, liqueur, and salt. Let stand for 5 minutes to thicken.
  • Pour filling into crust. Cover with plastic wrap, and refrigerate until firmly set, for at least 2 or up to 8 hours.

MARGARITA PIE

Categories     dessert

Time 7h50m

Yield one 9-inch pie

Number Of Ingredients 12

14 graham cracker sheets (2 sleeves)
3 tablespoons sugar
6 tablespoons unsalted butter, melted
1 tablespoon tequila
One 14-ounce can sweetened condensed milk
1/2 cup defrosted limeade concentrate
1/4 cup tequila
2 tablespoons fresh lime juice
2 tablespoons orange-flavored liqueur, such as Triple Sec
1/4 teaspoon kosher salt, plus more for garnish
1 cup heavy cream
Eight 1/2-inch lime wedges (from 1 or 2 limes)

Steps:

  • For the crust: Preheat the oven to 350 degrees F. Process the graham crackers and sugar in a food processor to a fine crumb. Add the melted butter and tequila, and pulse until moist. Press the crumbs into a 9-inch pie plate, and bake until firm, 12 to 15 minutes. Let the crust cool completely on a wire rack.
  • For the filling: Whisk together the condensed milk, limeade, tequila, lime juice, liqueur and salt in a large bowl until smooth and combined. Beat the cream with an electric mixer fitted with a whisk attachment on medium-high speed in another large bowl until stiff peaks form. Reduce the speed to low, and drizzle in the condensed milk mixture. Return the mixer to medium-high, and beat until the mixture is completely incorporated and fluffy, about 30 seconds, stopping to scrape down the side of the bowl if necessary. Transfer the filling to the cooled crust, cover loosely with plastic wrap and freeze until firm, at least 6 hours or overnight.
  • Transfer the pie to the refrigerator 30 minutes before serving. Garnish with lime wedges dipped in salt, and serve.

FROZEN MARGARITA PIE

Frozen Margarita Pie image

You'll need to freeze the pie for at least 8 hours, or preferably overnight, for the ideal texture, so be sure to plan ahead.

Provided by Andy Baraghani

Categories     Bon Appétit     Dessert     Frozen Dessert     Pie     Milk/Cream     Lime Juice     Tequila     Margarita     Summer     Soy Free     Peanut Free     Tree Nut Free     Vegetarian

Yield 8 servings

Number Of Ingredients 8

6 Tbsp. unsalted butter
10 graham crackers
3 Tbsp. sugar
1/2 tsp. kosher salt, divided
3/4 cup chilled heavy cream
4 limes, halved
1 (14-oz.) can sweetened condensed milk
3 Tbsp. tequila blanco

Steps:

  • Melt butter in a small saucepan over medium heat. Let cool slightly.
  • Crumble graham crackers into a food processor. Add melted butter, sugar, and 1/4 tsp. salt and process until mixture resembles wet sand. Transfer mixture to a shallow 9"-diameter pie dish. Using the bottom of a measuring cup, press crust firmly and evenly across bottom and up sides of dish. Freeze 20 minutes.
  • Meanwhile, whisk cream in a medium bowl until stiff peaks form, about 4 minutes.
  • Finely grate zest from 1 lime half into a small bowl; set aside. Squeeze juice from all of the limes into a fine-mesh sieve set over a glass measuring cup (you should have about 1/2 cup juice).
  • Pour lime juice into another medium bowl. Add condensed milk, tequila, and remaining 1/4 tsp. salt and whisk until mixture is smooth. Gently fold in half of the whipped cream just to combine, then add the remaining whipped cream and gently fold until no streaks remain (be careful not to overmix; you want to keep as much air in the whipped cream as possible).
  • Remove pie dish from the freezer and scrape filling into crust. Use a spoon to gently spread filling evenly all the way to the edges. Sprinkle with reserved lime zest and freeze until filling is set, at least 8 hours.
  • Do Ahead: Pie can be made 3 days ahead. Cover; keep chilled. Let soften in fridge 30 minutes before slicing.

FROZEN KEY LIME PIE MARGARITAS

Frozen Key Lime Pie Margaritas image

This frozen margarita was inspired by the flavors of a cool and creamy Key lime pie. Whip up a batch of these easy frozen margaritas for Cinco de Mayo or anytime you want a sweet and refreshingly tart treat! Use Key limes--which have a wonderful floral aroma and flavor--if you can find them, but common limes work as well. Freshly squeezed juice will have the best flavor, but you can also find bottled Key lime juice--just be sure to buy unsweetened juice if you go for packaged juice. If you prefer a mocktail, simply replace the tequila with water.

MARGARITA PIE

Margarita pie image

All the flavors that make margaritas so beloved are reinterpreted in this tequila-spiked dessert. This pie is a welcome addition to almost any occasion, just like its namesake drink, but is particularly refreshing in the heat of summer. The pretzel crust provides a nice salty, crunchy contrast to the smooth, tart lime filling, and a splash of orange-flavored liqueur adds another sweet, citrusy dimension to the pie. We used frozen limeade to give us a jumpstart and added vanilla ice cream to give it wonderful richness. One lime will provide enough fresh zest for this dessert. Give the pie at least 2 hours before slicing it so it can firm up properly.

Categories     Dessert

Time 2h40m

Yield 8 servings

Number Of Ingredients 8

2.333 oz Pretzel(s) miniature twists (about 2 cups)
1 Tbsp Sugar
2 Tbsp Light butter at room temperature
6 oz Frozen limeade concentrate slightly thawed, divided
4 cup(s) Light vanilla ice cream
1.5 fl oz Tequila (3 Tbsp)
0.5 fl oz Orange-flavored liqueur (1 Tbsp)
1 tsp Lime zest or to taste

Steps:

  • Preheat oven to 375°F. To make crust, in a food processor or blender, process pretzels into crumbs; add sugar and pulse until combined. Add butter; mix well. With machine running, add 2 tablespoons limeade concentrate; process until well-mixed.
  • Spoon crust mixture into an ungreased 9-inch pie plate. With back of a spoon, press mixture firmly into bottom and up sides of pan to form a pie shell. Bake until set, about 5 minutes; place in freezer for 10 minutes to cool.
  • Meanwhile, in a clean food processor or electric mixer, combine ice cream, remaining limeade concentrate, tequila and liqueur; process or mix until just blended. Spoon ice cream mixture into cooled pie shell and sprinkle with lime zest. Freeze for 2 hours before cutting into 8 pieces. Yields 1 slice per serving.

NO-BAKE PIE: MARGARITA PIE WITH A PRETZEL CRUST

No-Bake Pie: Margarita Pie with a Pretzel Crust image

No-bake pie that tastes like a frozen Margarita with a salted pretzel and graham cracker crust. Keep it in the freezer until needed!

Provided by Susan Pridmore

Categories     Dessert

Time 10h25m

Number Of Ingredients 10

¾ cup finely crushed salted pretzels
½ cup finely crushed graham crackers
¼ cup sugar
1 stick unsalted butter, (melted)
1 14-oz can sweetened condensed milk
1/3 cup defrosted limeade concentrate
2 tablespoons tequila
2 tablespoons Triple Sec
1 cup whipping cream (whipped to soft peaks)
Zest from 1 lime

Steps:

  • Stir the Pie Crust ingredients together until well moistened. Line the bottom and sides of a 9-inch pie plate or springform baking pan, and press down lightly to stick the crumbs together. Slide into the refrigerator.
  • Whisk together the sweetened condensed milk, limeade concentrate, tequila, and Triple Sec in a large bowl. Whip the whipping cream to soft peaks. Fold the whipped cream into the milk mixture. This is easier if you first fold in only 1/3 of the whipped cream, and then fold in the rest. Pour into the chilled Pie Crust, and smooth with a knife. Cover and slide into the freezer overnight.
  • When ready to serve, sprinkle lime zest over the top, and sit on the counter for 10 minutes before slicing. Completely clean the knife between each slice to get a clean cut or use dental floss to cut the pie filling and finish with a sharp knife.

MARGARITA PIE

Margarita Pie image

What a lovely, refreshing pie! I love salty and sweet desserts. Thanks to the condensed milk and the pretzel crust, this super creamy pie has the right flavor balance. Can't wait to make this again soon.

Provided by Terrie Hoelscher

Categories     Pies

Time 25m

Number Of Ingredients 10

CRUST
1 1/4 c finely crushed (coarsely salted) pretzels
1/2 c butter or margarine, melted
1/4 c sugar
FILLING
1 can(s) fat-free sweetened condensed milk [not evaporated milk], 14 oz.
3 tsp lime zest (grated lime peel, the green part only, not the white pith)
1/4 c lime juice (I use two whole limes for the juice)
1/4 c orange juice
8 oz container of fat-free Cool Whip topping, thawed

Steps:

  • 1. Pour about 2 cups (or more!) of small pretzel twists into the bag liner of a cereal box or a resealable bag.
  • 2. Fold over the top edge of the bag so the crumbs won't escape, and crush pretzels to get 1-1/4 cups of rather finely crushed pieces. You might have to repeat this step using more pretzels, to get the 1-1/4 cups of crumbs. You can do this part in your food processor or with a food chopper, too.
  • 3. For the crust: Combine all crust ingredients in a medium bowl; toss well with a fork to combine all the butter with the crumbs.
  • 4. Press onto bottom and up the sides of a 9" pie plate. Set aside (I put mine in the refrigerator for several minutes, while I prepare the ingredients for the filling).
  • 5. Remember, the 'zest' is only the green outer layer of the lime skin... not the white, pithy part underneath the skin. Don't go too deep! Before zesting the lime, cut some tiny lime curls to use as a garnish on top of the pie later. Using a zester, or the small teeth on your box grater, zest the limes, to get 3 teaspoons. Set aside 2 tsp for the filling and leave 1 tsp out to use for garnish later.
  • 6. Using the same limes, prick holes in each with a fork. Set them in the microwave for about 20 seconds. Roll them gently on the countertop, then cut in half and squeeze the juice into a 1/4-cup measuring cup. Microwaving them will make them yield much more juice! Set juice aside.
  • 7. Pour 1/4-cup of orange juice; set aside.
  • 8. For the filling: combine milk, lime zest, and juices in a medium bowl. Stir well with a whisk to combine while pouring.
  • 9. GENTLY fold in the whipped topping; folding to combine them thoroughly.
  • 10. Spoon into crust. Garnish with your lime curls and a few small pinches of extra lime zest sprinkled on top.
  • 11. Refrigerate until well-chilled, at least 30 minutes. Serves 8.

  • Place the lime, zest, egg yolks, cornstarch, sugar, butter, vanilla and salt in a saucepan. Whisk to combine. Heat over medium heat while whisking continuously until the butter melts. Change over to a spatula and stir continuously to prevent the mix from curdling/scrambling. Heat the mixture further until it thickens and coats the back of the spatula. Make sure to stir at the edges of the saucepan as well, so that the lime curd doesn’t catch the bottom. This should take no more than 10 minutes.
  • Line a bread pan (loaf pan) with parchment paper (leaving some parchment paper hanging off the sides for easy removal). Set aside.

Be careful not to let the water contaminate the egg whites.
  • Once the crust is frozen, pour the chilled margarita filling on top. Return to the freezer to let it completely harden (preferably overnight).

  • In a food processor, pulse the pretzels and graham crackers until crushed. You will need enough to measure 1 1/4 cups of crushed pretzels and crackers. Combine the melted butter and sugar. Add the crushed pretzels and crackers, mix well. Press the mixture into the bottom and up the sides of the prepared pie plate. Do not press too hard or it will be difficult to eat with a fork once frozen. Bake for 7-10 minutes in a preheated oven at 350F. Cool completely. If the crust slumps in the pan while baking, use a spoon to press the hot crust up the sides of the pan. Again, don't press to hard as it is best not overly compacted.
  • In a medium mixing bowl combine the condensed milk, lime juice, tequila and triple sec. Add the food coloring if desired (I did not use). Gently fold the whipped cream into the condensed milk mixture until blended. Do not beat or whisk.

  • Preheat the oven to 350°F. Lightly grease a 9" pie pan with non-stick baking spray., In a large mixing bowl, add the sugar, melted butter, and pretzel crumbs, tossing to combine. (If you've used a food processor to grind your pretzels into crumbs, you can add the sugar and butter and combine the mixture in the food processor.), Press the mixture into the bottom and up the sides of the prepared pan., Bake for 8 to 10 minutes; the crust won't change color much, but will firm up.
  • Remove from the oven and make the filling., Whisk together the egg yolks and condensed milk., Add the lime juice (and zest, if you're using it).
  • The mixture will thicken almost immediately., Pour into the crust and smooth with a spatula., Bake the pie for 28 to 32 minutes, until the filling is set, with a small spot in the middle still soft-looking.
  • Cool for several hours (or overnight) before serving., To serve, top with slightly sweetened whipped cream and a garnish of crumbled pretzels.

  • Line the bottom of a 9" spring form pan with parchment paper. Cut a seperate strip of parchment paper to line the side of the pan. Set aside.
  • To prepare the crust: Place whole preztels in a food processor. Process until the consistency of sand. Add in the brown sugar and lime zest. Pulse to combine. Melt the butter in a microwave safe bowl. Stir in most of the melted butter. Reserve 1-2 tablespoons to add in if needed. Once combined, the crust should stick together when pressed between your fingers. If not, add 1-2 tbsp more melted butter. Press the crust into the bottom of the lined pan. Chill in the freezer for 20 minutes while you prepare the filling.
  • To prepare the filling: Pour the cold heavy cream into a stand mixer fitted with whisk attachment. Whisk on low-medium for 1 minute. Gradually increase to medium-high until stiff peaks form. Look for a peak that doesn't collapse when the whisk is held upright.
  • Using another mixing bowl, pour the sweetened condensed milk, lime juice, tequila, lime or lemon extract and salt. Using a large spoon or spatula, stir the ingredients together until well combined. Taste and adjust flavors as needed. (If adding more tequila, do not exceed more than 4 tbsp/2.5 shots/ 1/4c)
