Steps:
- Make the simple syrup: Heat the sugar with 1/4 cup water in a small saucepan over medium-high heat, stirring, until the sugar dissolves; let cool.
- Combine the gin, lemon juice, cherry syrup and 1/4 ounce simple syrup in a shaker with ice; shake well. Strain into a coupe glass. Top with the sparkling wine. Garnish with a lemon slice and maraschino cherry.

- In a blender, combine the vanilla ice cream, milk, green food coloring, and peppermint extract, and process until smooth, about 30 seconds. Pour the shake into a glass and top with the whipped cream and maraschino cherry.

- Add the ice cream, cherries with juice, cream soda and milk to a blender and pulse until well mixed, but slightly chunky. Pour into float glasses. Garnish with whipped cream and maraschino cherries. Serve with a straw and enjoy.

Steps:
- Place 1 lb. frozen pitted sweet cherries in a large heatproof bowl. Bring 2 cups (400 g) granulated sugar, ¼ cup fresh lemon juice, 2 tsp. vanilla extract, 1 tsp. almond extract, and 1 cup water to a boil in a small saucepan, whisking occasionally to help dissolve sugar, about 4 minutes. Immediately pour syrup over cherries and let cool (keep uncovered).
- Place a small plate on top of cherries to keep them submerged, then cover tightly with plastic wrap and chill at least 12 hours before serving. Do Ahead: Cherries can be made 4 weeks ahead. Remove plate and keep covered (or transfer to an airtight container) and chilled.
