MAR FAR CHICKEN
This was my favorite chicken when I was a child over 30 years ago. It calls for "Funya" bean curd (a fermented tofu product) which can be found at asian markets. This is a key ingredient, and well worth the search. Cook time does not include marinating time.

One dish that's easy to make and doesn't require a lot of culinary expertise is Mar Far Chicken.

Steps:
- Cut the chicken into equal pieces. For great results, let the slices be 1-inch wide and 1.5 to 2 inches long.
- Using a medium-sized bowl, sift the flour. Add salt, and baking powder and mix them thoroughly with the flour. Use another bowl to whisk the egg, soy sauce, and milk to make the batter. Mix the content thoroughly. Put them into a row to make it easy to use.
- Take the chicken slices and dip them into the flour first. Make an even coat that is thin. Making the coat thin makes your chicken crispy. Taking the floured pieces, dip them into the wet batter. Make the pieces into rolls. Gently shake each slice to remove the excess batter.
- Heat the oil. Deep fry the batter-dipped chicken slices until they are well cooked. The ideal temperature for cooking Mar Far Chicken is 365 °F. When using a stove, the above temperature is equivalent to setting the heat at medium-high. Drain the excess oil by using an absorbent paper.
- Your Mar Far Chicken is ready for serving after draining the oil. You can serve it with rice and veggies. If you want you can sprinkle it with some chopped parsley.

MAR FAR CHICKEN
Steps:
- Cut chicken in pieces 1 1/2 to 2-inches long about 1-inch wide. Prepare batter: sift flour with salt and baking powder into beaten egg, milk and soy sauce. Mix thoroughly.
- Dip chicken in flour first, and then dip into batter. Add more milk to batter if it seems too thick on chicken.
- Fry 365 degrees F in deep fry until cooked through. Drain on absorbent paper.
