⅓ cup pure maple syrup
⅓ cup light brown sugar
4 teaspoons vanilla extract
½ teaspoon salt
½ cup vegetable oil
5 cups old-fashioned rolled oats
2 cups whole raw almonds (coarsely chopped)
1 cup dried cranberries
1 cup chopped dried apricots

Steps:

  • Adjust oven rack to upper-middle position and preheat oven to 325 degrees F. Line a rimmed baking sheet with parchment paper; set aside.
  • In a large bowl, whisk together the maple syrup, brown sugar, vanilla extract and salt. Whisk in the vegetable oil to combine. Add the oats and almonds and fold the mixture together with a rubber spatula until all of the oats and almonds are thoroughly coated.
  • Turn the oat mixture onto the prepared baking sheet and spread into a thin, even layer. Using a stiff metal spatula, compress the oat mixture until very compact.
  • Bake until the top is lightly browned, 40 to 45 minutes, rotating the sheet halfway through baking. Remove the granola from the oven and let cool on a wire rack to room temperature, about 1 hour. Break the cooled granola into pieces as large or as small as you like. Stir in the dried cranberries and dried apricots. The granola can be stored in an airtight container at room temperature for up to 2 weeks.

1/4 cup sunflower seeds
Nonstick cooking spray
1/3 cup maple syrup
2/3 cup packed brown sugar
1/2 cup unsweetened cranberry juice
1 1/2 teaspoons ground cinnamon
2 cups old fashioned rolled oats
1/2 cup chopped roasted and salted almonds
1/4 teaspoon fine sea salt
1 cup dried cranberries

Steps:

  • Preheat the oven to 350 degrees F.
  • Spread the pumpkin seeds and sunflower seeds on a baking sheet. Bake for 8 to 10 minutes until lightly toasted. Set aside to cool.
  • Reduce the oven temperature to 325 degrees F. Spray a baking sheet with nonstick cooking spray. Set aside.
  • In a small saucepan, combine the maple syrup, brown sugar, cranberry juice, and cinnamon over medium heat. Cook, stirring constantly, until the sugar has dissolved.
  • In a medium bowl, mix together the oats, almonds, pumpkin seeds, sunflower seeds, and salt.
  • Pour the maple mixture over the oat mixture and stir until combined. Spread the mixture onto the prepared baking sheet. Bake for 20 minutes. Remove the baking sheet from the oven. Stir in the cranberries and bake for an additional 10 to 15 minutes until the mixture begins to brown. Cool completely. Store airtight in a plastic container for up to 1 week.

1 cup walnut halves
1 cup whole almonds, with skins
8 cups old-fashioned rolled oats
2 sticks (1/2 pound) unsalted butter, melted
1/3 cup honey, at room temperature
1/2 teaspoon salt
1 1/4 cup salted, roasted green pumpkin seeds (see tip, below)
1 cup dried currants
1 cup chopped dates
3/4 cup chopped dried strawberries or dried sour cherries

Steps:

  • Preheat oven to 375°F. Line 2 large shallow baking sheets with foil. Place walnuts and almonds on one sheet and toast until golden brown, about 10 minutes. Let cool, then coarsely chop and set aside.
  • Reduce oven temperature to 300°F. Divide oats between baking sheets. In medium bowl, melt butter in microwave. Stir in honey and salt. Drizzle mixture onto oats and stir well with rubber spatula.
  • Spread oats in even layer and bake, stirring once and switching positions of pans halfway through, until golden, about 30 minutes (mixture will crisp as it cools). Transfer to large bowl, cool, add remaining ingredients, and toss well.
  • Store airtight at room temperature up to one month.

The protein and fat combination of the nut helps to make the granola more filling, providing lasting energy. Granola takes a little while to bake and makes your entire house smell good. This is a good granola for breakfast." NOTE: Add fruit to granola only after the baking is done to avoid drying out the fruit and avoid making it tough to chew and less flavorful.

2 tablespoons wheat germ
1 heaping tablespoon ground cinnamon

3 tablespoons canola or coconut oil
3 tablespoons honey
3 tablespoons brown sugar
1 tablespoon pure vanilla extract
1 cup dried cranberries

Steps:

  • Preheat oven to 300°F. Spray a sheet pan (rimmed baking sheet) with nonstick cooking spray.
  • In a large mixing bowl, combine oats, sunflower seeds, walnuts, pecans, almonds, coconut, flaxseed, wheat germ, ground cinnamon and salt. Stir to combine.
  • In a 2 cup microwave-safe measuring cup (or small bowl), mix oil, honey, brown sugar, and vanilla. Heat in microwave for 45 seconds on 50% power. Stir to combine. If using coconut oil, continue to heat in 30 second increments until coconut oil is completely melted. Pour over dry ingredients and stir until everything is coated. Spread into an even layer on prepared baking sheet.
  • Place in preheated oven and bake for 15 minutes. Remove from oven, stir, and continue to bake for 15-20 minutes or until golden brown. If you like big chunks, press down with spatula and let cool completely on pan. If you prefer not to have large chunks, stir 3-4 times as granola cools. Stir in cranberries once cooled.
