BAKED BRIE BITES
Baked Brie Bites are perfect appetizers with 4 flavours to choose from! Maple Bacon, Garlic Butter Herb, Apricot Walnut and Cranberry Sauce!

Steps:
- Preheat oven to 375° (180°C). Lightly grease a mini muffin tin with cooking spray.
- On a lightly floured surface, roll out crescent dough and pinch together seams. Cut into equal 24 squares. Place squares into muffin tin holes.
- Cut brie into 24 small pieces and place inside the dough cups.
- Top as follows:
- CRANBERRY BRIE BITES:
- A spoonful of cranberry sauce. Season with salt and pepper.
- MAPLE BACON:
- A spoonful of cooked diced bacon, 2 pecan halves and a drizzle of maple syrup. Season with pepper.
- APRICOT WALNUT:
- A spoonful of preserves and crushed walnuts. Season with a pinch of salt.
- GARLIC BUTTER HERB:
- MIX the butter and garlic together. Top each bite with just over 1 teaspoonful of garlic butter mixture and 2-3 rosemary leaves. Season with salt and pepper.
- Bake until the crescent pastry is golden, (about 10-15 minutes).

- Preheat oven to 200 degrees F (95 degrees C). Place the unwrapped Brie cheese into a baking dish, sprinkle with walnuts, and pour maple syrup over the nuts and cheese.
- Bake in the preheated oven until the cheese warms and softens, about 10 minutes. Serve cheese with slices of baguette.

Steps:
- Unmold the cranberry sauce from the can, and slice into 1/4-inch-thick rounds. Trim the rounds into 1-inch squares.
- Remove the outer rind from the wheel of Brie, leaving the top and bottom rind intact. Cut across into 3/4-inch-thick slices, then cut the slices into 1-inch pieces.
- Put Brie squares on mini toasts and top with pieces of cranberry sauce, then wrap in prosciutto and secure with decorative toothpicks. Serve at room temperature.
WALNUT CRUSTED BRIE MAC AND CHEESE

- Preheat the oven to 375 degrees F. Grease an 8-inch square baking dish.
- Cook the pancetta in a small skillet until crispy, about 10 minutes. Set aside.
- Cook the pasta according to the package directions, reducing the cooking time by 1 minute. Drain and set aside.
- In a large saucepan, melt the butter over medium heat. Add the onion and a pinch of salt. Cook, stirring, until the onion is soft and translucent, 5 to 7 minutes. Stir in the nutmeg, paprika, cayenne, allspice and a few turns of pepper and cook for 2 minutes more. Increase the heat to medium-high and add the flour, whisking until combined, then cook for 1 minute. Add half the milk, whisking continuously, until thickened, about 5 minutes, then repeat with the other half of the milk. Add the Brie, Gruyere and pancetta and stir until the cheese is melted. Remove from the heat and add the pasta.
- Pour the mixture into the baking dish and top it with the walnuts and Parmesan. Bake until the top is browned, about 25 minutes. Cool for 5 minutes and enjoy!
CRANBERRY BRIE BITES
Baked Brie gets dressed up for the holidays, stuffed into little golden parcels of puff pastry, along with a hit of cranberry sauce and the crunch of walnuts.

Steps:
- Preheat the oven to 425 degrees F and line 2 baking sheets with parchment paper.
- Whisk together the egg with 1 tablespoon of water in a small bowl for an egg wash. Cut the side rind off the Brie, then cut the Brie into 32 even pieces. Set aside.
- Unfold a puff pastry sheet on a lightly floured surface. Roll out into a 13-inch square. Cut into 16 squares. Repeat with the second sheet so you have 32 squares total.
- Top a pastry square with about 1/2 teaspoon cranberry sauce, 1/4 teaspoon walnuts, a piece of Brie and a pinch of thyme.
- Use your finger or a pastry brush to brush the edges of the pastry square with egg wash until lightly coated and tacky. Pinch 2 opposite points together, then pinch the remaining 2 points together so that you have a little package. Repeat with the remaining pastry squares and filling.
- Transfer the pouches to the prepared baking sheets and brush with the remaining egg wash. Bake until puffed and golden brown, 15 to 20 minutes.
MAPLE WALNUT AND FIG BREAD
Steps:
- Position a rack in the center of the oven and preheat the oven to 350 degrees F.
- Put the diced figs in a medium bowl and add the warm water. Let soak until softened.
- Whisk the unbleached flour, cake flour, oats, baking powder, and salt together in a large bowl. Set aside.
- Put the maple syrup, milk, eggs, egg yolks, and canola oil in a medium bowl and stir with the whisk to combine. Add the mixture to the dry ingredients, stirring with a spoon just until all the flour is moistened. This should be a wet batter, because the oats absorb a lot of the liquid during baking.
- Fold the walnuts and figs into the batter (the figs do not need to be drained). Divide the batter evenly between two oiled 9- by 5-inch loaf pans. Bake for about 1 hour, until a toothpick inserted in the center comes out clean. (If your oven bakes unevenly, rotate the pans from left to right and front to back about halfway through the baking time.)
- Remove the pans from the oven and use a pastry brush to glaze the tops of the loaves with maple syrup. Set them on a rack to cool for about 10 minutes. Turn the loaves out of the pans and set them on the rack to cool completely before serving. Wrap any leftovers tightly in plastic wrap and store at room temperature. They may also be frozen, wrapped first in aluminum foil and then in plastic wrap or a heavy-duty freezer bag.
