DARK CHOCOLATE ORANGE BISCOTTI

No more dry or bland biscotti, this dark chocolate orange biscotti has so much flavor!

Number Of Ingredients 14

2 and 1/3 cups (291g) all-purpose flour (spoon & leveled), plus more for work surface + hands
1 cup (200g) packed light or dark brown sugar
1 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/2 teaspoon salt
zest from 1 orange (about 2 scant Tbsp)
1/4 cup (60g) unsalted butter, cold and cubed
3/4 cup (95g) chopped walnuts*
3 large eggs
2 Tablespoons (30ml) fresh orange juice
1 Tablespoon (15ml) canola or vegetable oil (or melted coconut oil)
1 teaspoon pure vanilla extract
egg wash: 1 large egg beaten with 1 Tablespoon (15ml) milk or water
two 4 ounce (226g) semi-sweet or bittersweet chocolate bars, coarsely chopped*

Steps:

  • Preheat oven to 350°F (177°C). Line two large baking sheets with parchment paper or silicone baking mats. (Always recommended for cookies.) Set aside.
  • Whisk the flour, brown sugar, baking powder, cinnamon, salt, and orange zest together in a large bowl until combined. Using a pastry cutter or 2 forks, cut in the butter until the mixture is crumbly. Stir in the walnuts. Set aside. In a medium bowl, whisk the eggs, orange juice, oil, and vanilla extract together. Pour into the flour/butter mixture and gently mix together until everything is just barely moistened.
  • Turn dough out onto a lightly floured surface and with floured hands, knead lightly until the dough is soft and slightly sticky, about 8-10 times. If it's uncontrollably sticky, knead 1-2 more Tablespoon(s) of flour into the dough. Divide the dough in two and place each half onto a baking sheet. Shape each half into an 8×4-inch long rectangle, patting down until each is about 1/2 inch thick. Using a pastry brush, lightly brush the top and sides of each biscotti slab with egg wash.
  • Bake for 25-26 minutes, or until the top and sides of the biscotti slabs are lightly browned. Remove from the oven, but do not turn off the heat. Allow to cool for 10 minutes. Once the slabs are cool enough to handle, cut each into 1 inch thick slices. Set slices cut sides upright, ¼ inch apart, on the baking sheets. Return to the oven to continue baking for 8 minutes. Turn biscotti over and bake other side for 8 minutes. The cookies will be slightly soft in the centers with harder edges. Remove from the oven and allow to cool for 5 minutes on the baking sheet. Transfer to a wire rack to cool completely before dipping in chocolate. The biscotti becomes crunchy as it cools. Save the baking sheets for the next step.
  • Melt the chopped chocolate in a double boiler or (carefully!) use the microwave. For the microwave, place the chocolate in a medium heat-proof bowl. Melt in 15 second increments, stirring after each increment until completely melted and smooth. Dip each biscotti cookie in the melted chocolate and place back onto the baking sheets. Sprinkle with any additional orange zest if desired. Allow chocolate to set in the refrigerator or at room temperature.
  • Biscotti will stay fresh covered at room temperature or in the refrigerator for 1-2 weeks.

110g self-raising flour
1 tbsp cocoa powder
60g ground almonds
75g golden caster sugar
50g dark chocolate chips
40g candied peel
1large orange , zested
1 large egg and one egg yolk, beaten
1 tsp vanilla extract
¼ whole nutmeg , grated (optional)

Steps:

  • Heat oven to 180C/160C fan/gas 4. Put the flour, cocoa, ground almonds, sugar, chocolate chips, candied peel, orange zest and a pinch of salt into a large bowl, and mix well. Make a well in the centre, then add the nutmeg (if using), egg and vanilla extract. Use your hands to bring the mix together, kneading it firmly.
  • Shape the biscotti dough into a log approximately 15cm x 5cm x 2.5cm deep. Transfer to a baking tray lined with baking parchment, then bake for 30 mins until firm to the touch (the log will split and crack a little on the top).
  • Remove from the oven and cool for at least 10 mins. Use a sharp serrated knife to cut the log into slices 1-1.5cm thick.
  • Put the biscotti back on the baking tray and reduce oven to 150C/130C fan/ gas 2. Bake for 30 mins or until the biscotti are completely hard to touch. Cool completely, then wrap in baking parchment or store in an airtight container.

175 g sugar
1/4 teaspoon salt
rind 1 orange, only
200 g self raising flour
250 g walnuts, roughly chopped
250 g dates, roughly chopped
2 teaspoons almond extract

Steps:

  • Heat oven to 180 degrees Celsius.
  • Beat eggs, sugar, salt, almond extract and orange rind till fluffy and pale in colour.
  • Mix in the flours, chopped nuts, chopped dates and chopped chocolate.
  • divide into 2 equal sized lots and form into logs.
  • Put onto greased baking tray and cook for 15 to 20 minutes until just golden.

2 3/4 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1 tablespoon freshly ground black pepper
Pinch kosher salt
1/2 cup (1 stick) unsalted butter, softened
1 cup sugar
3 large eggs, at room temperature
2 teaspoons grated orange zest
1 1/2 teaspoons vanilla extract
1/4 teaspoon almond extract
1 1/2 cups chopped walnuts, lightly toasted (see Cook's Note)

Steps:

  • Sift together the flour, baking soda and baking powder in a medium bowl. Stir in the pepper and salt. Set aside.
  • In the bowl of a stand mixer fitted with the paddle attachment, beat the butter on high speed until pale and light. Add the sugar and beat until light and fluffy, about 7 minutes. Reduce the speed to low and add the eggs one at a time, beating well after each addition. Add the orange zest and vanilla and almond extracts.
  • Fold in the flour mixture, then fold in the walnuts. Cover the dough with plastic wrap and refrigerate for 30 minutes.
  • Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper or nonstick silicone liners.
  • Divide the dough in half, place 1 piece on each sheet and shape each piece into a 12-inch log, about 2 inches across and 1 inch tall. Bake until the logs are baked through and lightly browned, about 35 minutes.
  • Let the logs cool for about 10 minutes on the baking sheets (leave the oven on), then transfer them carefully to racks to cool 10 minutes more. Using a serrated knife, slice each log on the diagonal into 3/4-inch-thick slices. Arrange the slices cut-side down on the baking sheets and return to the oven until well toasted, 15 to 20 minutes more. Transfer the biscotti to cooling racks to cool completely. They will keep, tightly covered, up to 1 week.

VEGAN CHOCOLATE WALNUT BISCOTTI

As much as it had pained my jaw muscles to gnaw on the rock hard god-only-knows-how-old-it-was chocolate biscotti at Starbucks, I really missed the stuff after going vegan. After trying various recipes I finally came up with this. It tastes great, and doesn't hurt my jaw as much as the biscotti from Starbucks did. The end result should be crispy and slightly dry, but not burnt or too hard to chew.

2/3 cup sugar
1/4 cup cocoa powder
2 teaspoons baking powder

  • Preheat the oven to 375 degrees (f).
  • Grease a cookie sheet and set aside.

1/4 cup butter or 1/4 cup margarine, softened
2/3 cup sugar
2 eggs
1 teaspoon vanilla
2 cups all-purpose flour
2 teaspoons baking powder

1 cup chopped walnuts
1 cup raisins

Steps:

  • Preheat oven to 350.
  • Grease a large cookie sheet.
  • In a large bowl, beat the butter, sugar, eggs and vanilla together.
  • Stir in the flour, baking powder and cinnamon.
  • Add the raisins and walnuts, and stir to blend.
  • Divide the dough in half.
  • Shape each half into a long loaf, about 1 1/2 inches thick.

100g caster sugar
250g plain flour , plus extra for dusting
½ tsp bicarbonate of soda
zest 1 orange
25g toasted hazelnuts , roughly chopped
25g chocolate chips

Steps:

  • Heat oven to 180C/160C fan/gas 4 and line a large baking sheet with baking paper. Whisk together the eggs and sugar until light and fluffy. Sift the flour and bicarbonate of soda into a bowl, then add the orange zest, hazelnuts and chocolate chips. Fold into the egg mix to make a soft dough. Tip onto a lightly floured surface, shape into a 25cm sausage shape with lightly floured hands, then transfer to baking sheet. Flatten to a 3cm thickness, then bake for 30 mins until lightly browned on top.
  • Remove and slide onto a chopping board, then reduce the oven to 160C/140C fan/gas 3. Cut the log into 1cm thick slices and return to the baking sheet, cut-sides up. Bake for 10-15 mins until crisp, then cool on a wire rack. Will keep in a tin for 3 weeks.

I love biscotti of all sorts, and this recipe, packed with walnuts in a double chocolate dough, is just delicious. Adopted from Mean Chef in September 2006, I have left the original directions intact, but added my comments and notations in parentheses. As presented, this yields about 30 six inch long cookies. If you want smaller biscotti, divide the dough into 3 logs, and reduce your baking time accordingly.

4 ounces semisweet chocolate, coarsely chopped (try a dark chocolate for a more intense chocolate flavor)
1 cup granulated sugar
1 3/4 cups all-purpose flour
1/3 cup unsweetened cocoa powder
1 teaspoon baking soda
1/4 teaspoon salt
3 eggs
1 teaspoon vanilla extract
2 1/4 cups coarsely chopped walnuts

Steps:

  • Preheat oven to 300°F Line a large baking sheet with parchment paper (waxed paper will not work, it will smoke.).
  • In a food processor fitted with the metal blade, combine the chocolate and sugar and grind until the chocolate is very fine. Set aside.
  • In a bowl, sift together the flour, cocoa powder, baking soda and salt. Set aside.
  • In a mixing bowl combine the eggs and the vanilla. Beat at medium speed to blend.
  • Reduce the speed to low, add the chocolate and flour mixtures and mix until a stiff dough forms, adding the walnuts when about half mixed.
  • Transfer the dough to a floured surface and gather it together. Divide in half. Form each half into a log 12 inches long. (Give the logs plenty of space on both sides as the width of the logs doubles during baking.).
  • Carefully transfer the logs to the prepared baking sheet, spacing them evenly.
  • Pat to even up the shapes. Bake until almost firm to the touch, about 50 minutes. (I have found that 40 minutes was sufficient).
  • Let cool for 10 minutes. (Do not let it cool for longer as the logs will become brittle and more difficult to slice without breaking.).
  • Leave the oven set at 300°F.
  • Using a spatula, transfer the logs to a work surface. Using a serrated knife, cut on the diagonal into slices 1/2 to 3/4 inch thick. Return the slices cut side down to the baking sheet.
  • Bake for 25 minutes. (I baked mine 15 minutes and the biscotti were very crispy).
  • Turn the slices over and bake until crispy and dry, about 25 minutes longer. (Again, I found 15 minutes to be good).
  • Transfer the cookies to wire racks to cool.
  • Store in an airtight container at room temperature for up to 1 month.

4 ounces butter, melted

Steps:

  • Preheat oven to 350 degrees F In a large bowl, combine all of the dry ingredients (first 7 ingredients on list above).
  • In a small bowl slightly beat eggs& egg yolk together, and add to the dry ingredients along with the extract& the melted butter.
  • Mix by hand with a wooden spoon or with hands.
  • If dough is too stiff, add some juice from the zested orange.
  • Turn dough out onto work surface; knead lightly and form into two logs.
  • Place logs on lightly greased cookie sheet& flatten slightly.
  • Brush logs with beaten egg white.
  • Bake 30 minutes; let cool completely, then slice each log diagonally into 1" slices with serrated knife, using a sawing motion.
  • Stand the slices on the cookie sheet and return to the oven.
  • Bake an additional 7-10 minutes or until crisp.
