OLD-FASHIONED HAM WITH BROWN SUGAR AND MUSTARD GLAZE

- Preheat oven to 325°F. Place ham in large roasting pan. Pour apple juice over ham. Cover ham completely with parchment paper, then cover ham and roasting pan completely with heavy-duty foil, sealing tightly at edges of pan. Bake ham until instant-read thermometer inserted into center of ham registers 145°F, about 3 hours 45 minutes. Remove ham from oven. Increase oven temperature to 375°F.
- Remove foil and parchment from ham. Drain and discard liquids from roasting pan. Cut off rind and all but 1/4-inch-thick layer of fat from ham and discard. Using long sharp knife, score fat in 1-inch-wide, 1/4-inch-deep diamond pattern. Spread mustard evenly over fat layer on ham. Pat brown sugar over mustard coating, pressing firmly to adhere. Drizzle honey evenly over. Bake until ham is well glazed, spooning any mustard and sugar glaze that slides into roasting pan back over ham, about 30 minutes. Transfer ham to serving platter; let cool at least 45 minutes. Slice ham and serve slightly warm or at room temperature.
BROWN-SUGAR-GLAZED HAM

- Preheat oven to 325°F If desired, score ham by making diagonal cuts 1-inch apart in fat in a diamond pattern. Place on rack in a shallow roasting pan. Insert meat thermometer. Thermometer should not touch bone. Bake until thermometer registers 125°F For rump, allow 1-1/4 to 1-1/2 hours; for shank, allow 1-3/4 to 2 hours.
- Meanwhile, for glaze, in a medium saucepan stir together sugar, vinegar, and mint sprigs. Bring to boiling. Reduce heat. Boil gently, uncovered, about 30 minutes or until reduced to 1 cup. Remove from heat. Remove and discard mint. Brush ham with some of the glaze.
- Baked ham for 20 to 30 minutes more or until thermometer registers 135°F, brushing three more times with additional glaze. Sprinkle with pepper. Let stand 15 minutes before carving. (The meats temperature will rise 5 degrees during standing to the safe temperature of 140°F.) Serve meat on a platter layered with green tops of uncooked leeks and green onions, if desired. Sprinkle with pepper, if desired. Bring any remaining glaze to boiling and serve with ham. Makes 16 to 20 servings.

- In a big casserole with thick bottom, bring to boil the maple syrup. Reduce heat and let simmer 5 minutes.
- Meanwhile, in a bowl, dilute cornstarch in water. Add heavy cream and mix. Pour the cream mixture in one shot in the casserole and let simmer, stirring, until mixture has thickened. Remove the casserole from the heat. Add rum and stir. Serve with fresh fruits.
CROCK POT MAPLE HAM
This is like a poor man's maple glazed ham. We love the spiral sliced maple/honey glazed hams, but they are soooo expensive. This is a great way to make one without spending a fortune.

Steps:
- Put ham into crock pot (make sure it fits!) Put syrup, applesauce and cinnamon into a measuring cup and whisk them together to form a glaze.
- Pour the glaze over the ham in the crock pot.
- Turn the crock pot on high for 1 hour to seal in heat.
- Turn down to low after first hour and cook for 4 more hours.
- When done take out, slice and enjoy!

- Mix together maple syrup, vinegar and mustard in small bowl.
- Brush one side of ham steak with mixture and place glazed side down in skillet over medium heat.
- Brush top of ham steak.
- Cook over medium heat, turning frequently, until cooked through and glaze has thickened.
