This is very easy to make, and it's delicious too. Use pure maple syrup if possible. Makes ALL the difference. Serve as a light dessert or at a lazy Sunday brunch on pancakes.

Steps:
- Cut bananas in half crosswise then lengthwise.
- Melt the butter over medium-high heat in a large skillet and place the bananas in the butter, coating them using a pastry brush.
- Move the bananas to one side of the pan.
- Slightly tip the pan (with bananas on upper side), then add the maple syrup (or brown sugar), vanilla and lemon juice.
- Sprinkle the cinnamon and give the mixture a good stir.
- Lower the pan and blend the sauce with the bananas, spooning the sauce over the top.
- Cook for 5 minutes.
- Arrange 4 banana pieces on each dessert plate.
- Garnish each dish with mint sprig, and serve with a scoop of vanilla ice cream or any flavor ice cream of your choice.

BREAD PUDDING WITH WARM BANANA MAPLE SAUCE

- Grease shallow 3 1/2 to 4 quart ceramic casserole or 13-inch by 9-inch glass baking dish. Arrange bread slices, overlapping slightly, in dish. In a medium bowl, beat milk, salt, eggs and 1/4 cup sugar until well mixed. Slowly pour egg mixture over bread slices; prick bread slices with fork and press slices down to absorb egg mixture. Spoon any egg mixture that bread had not absorbed over bread slices.
- In a cup, mix cinnamon with remaining 1 tablespoon of sugar; sprinkle over top of bread pudding and dot with 2 tablespoons butter. Cover and refrigerate at least 30 minutes or overnight.
- Preheat oven to 325 degrees F. Remove cover from bread pudding and bake 45 minutes, or until knife inserted in the center comes out clean.
- For the sauce; melt remaining 2 tablespoons butter in a nonstick 12-inch skillet over a medium high heat. Add banana slices and cook about 3 minutes, until lightly browned. Pour maple syrup over bananas; heat to boiling. Boil 2 to 3 minutes, until mixture thickens slightly. Serve warm sauce in bowl with bread pudding
MAPLE SYRUP BANANA BREAD
The maple syrup makes this a truly French Canadian recipe. This bread is so tasty and moist! Perfect to have with your coffee, or give as a homemade present. If it's too hard to find, you can replace the maple syrup for corn syrup.

- Heat the oven (350F).
- Mix all dry ingredients.
- In another bowl, mix all moist ingredients.
- Blend the two mix until you don't see any more dry ingredients (don't overblend it or the bread will come hard!).

- Heat oven to 160C/140C fan/gas 3, butter a 20cm square cake tin and line the base with baking parchment. Pour in half the syrup, swirling to coat the bottom. Halve the 3 ripe bananas lengthways and lay, cut-side down, in the tin.
- Beat together the butter, sugar, eggs, vanilla paste and over-ripe banana with an electric whisk. Fold in the flour, ground almonds and bicarb of soda, then stir in the yogurt. Carefully spoon into the tin without dislodging the bananas. Bake for 45 mins-1 hr until a skewer poked in comes out with only moist crumbs. Poke all over with the skewer, about halfway into the cake, then pour over the remaining maple syrup. Let it soak in for a few mins, then carefully turn out of the tin upside-down, drizzling the banana-studded top with more syrup. Slice and serve warm.

Kids of all ages enjoy this...my DH loves this in the cooler months, and I could eat the whole thing myself, it is that good! Make certain to use a heavy-bottomed saucepan to make this, as it will scorch easily, or it also can be made in the microwave, but you will have to keep taking it out to stir it. You can also use pancake syrup in place of the maple syrup (store-bought or homemade). If you are a Cream of Wheat fan, then this is a recipe you are certain to enjoy!

- Heat oven to 160C/140C fan/gas 3. Grease a 20cm square cake tin and line the base with baking parchment. For the cake, pour in half the syrup, swirling to coat the bottom. Peel and halve the 3 ripe bananas lengthways and lay, cut-side down, in the tin.
- Beat together the butter, sugar, eggs, vanilla and overripe banana with an electric whisk. Tip the flour and pecans into a food processor and pulse until finely ground together. Stir into the butter mixture with the bicarbonate of soda and cinnamon, then stir in the yogurt. Carefully spoon into the tin without dislodging the bananas. Bake the cake for 45 mins-1 hr until a skewer inserted into the centre comes out with only moist crumbs.
- Meanwhile, make the sauce. Toast the pecans for 1-2 mins in a pan, add the remaining ingredients and cook until the butter has melted. Then bubble for 5 mins until it has thickened a little.
- When the cake is cooked, poke it all over with the skewer - inserting it about halfway into the cake each time. Pour over the remaining maple syrup and allow it to soak in for a few mins, then turn the cake out of the tin, upside-down, onto a serving plate. Reheat the sauce, and serve with Greek yogurt or vanilla ice cream.

- In a small saucepan, combine the maple syrup, cinnamon stick and cloves.
- Place over medium heat and bring to a boil.
- Remove from heat and let steep for 15 minutes.
- Remove the cinnamon stick and cloves with a slotted spoon.
- Set the syrup aside and keep warm.
- In a large microwave-safe bowl, combine the oats and water.
- Microwave on high until the oats are creamy and tender, about 3 minutes.
- Stir in the brown sugar and canola oil.
- Set aside to cool slightly.
- In a bowl, combine the flours, baking powder, baking soda, salt and ground cinnamon.
- Whisk to blend.
- Add the milk, yogurt and banana to the oats and stir until well blended.
- Beat in the egg.

- Place a nonstick frying pan or griddle over medium heat.
- When a drop of water sizzles as it hits the pan, spoon 1/4 cup pancake batter into the pan.

- Turn and cook until the bottom is well browned and the pancake is cooked through, 1 to 2 minutes longer.
- Repeat with the remaining pancake batter.
