4 cups old-fashioned oats
½ cup chopped pecans
½ cup chopped walnuts
½ cup ground flax seed
2 teaspoons ground cinnamon
⅓ cup canola oil
⅔ cup pure maple syrup
1 teaspoon maple flavoring
¼ teaspoon salt

Steps:

  • Preheat the oven to 300 degrees F (150 degrees C).
  • Line a baking sheet with parchment paper.
  • Mix oats, pecans, walnuts, flax seed, and cinnamon in a large bowl.
  • Stir canola oil, maple syrup, maple flavoring, and salt together in a small bowl; pour over the oat mixture and stir to coat evenly.
  • Spread the resulting mixture evenly onto the prepared baking sheet.
  • Bake in the preheated oven until lightly browned, about 40 minutes.
  • Set granola aside to cool completely before breaking into chunks. Store in an air-tight container.

This Maple Pecan Granola is a perfect balance of sweet and salty. With brain healthy olive oil, pumpkin seeds, sunflower seeds, pecans, coconut, flax seeds and oats, it's amazing over Greek yogurt topped with fresh berries.

3.5 cups old-fashioned rolled oats
1 cup hulled raw pumpkin seeds
1 cup hulled raw sunflower seeds
1 cup unsweetened coconut chips
1 1/4 cups raw pecans (left whole or coarsely chopped)
1/4 cup ground flax seed
1/4 cup wheat germ ((optional))
1/2 cup pure maple syrup
1/2 cup extra-virgin olive oil
1/3 cup coconut sugar or packed light brown sugar
1 tsp coarse salt
serve over Greek yogurt and top with fresh berries

Steps:

  • Heat oven to 300°F.
  • Place oats, pumpkin seeds, sunflower seeds, coconut, pecans, flax, wheat germ, maple syrup, olive oil, sugar, and 1 teaspoon salt in a large bowl and mix until well combined. You'll need to mix it well to evenly coat everything with the wet ingredients.
  • Spread granola mixture onto a rimmed baking sheet lined with parchment paper. Transfer to oven and bake, stirring every 10 to 15 minutes, until granola is toasted, about 45 minutes.
  • Remove granola from oven and let cool. Stores up to one month in an airtight container.
  • Serve over Greek yogurt and fresh berries.

6 cups rolled oats (do not use quick-cooking or instant)
1 cup slivered almonds
1/2 cup hulled, raw pumpkin seeds (pepitas)
1/2 cup raw, unsalted sunflower seeds
2 cups pecan halves, broken by hand into bite-size pieces
1/2 cup maple syrup
1/2 cup olive oil
1 tablespoon ground cinnamon
1 tablespoon vanilla extract
2 teaspoons kosher salt
1 1/2 cups golden raisins (optional)
1 1/2 cups dried cherries, chopped (optional)

Steps:

  • 1 Position oven racks in the upper and lower thirds of the oven; preheat to 325 degrees
  • 2 Line two baking sheets with parchment paper
  • 3 Stir together the oats, almonds, pumpkin and sunflower seeds and pecans in a large mixing bowl
  • 4 Add the maple syrup, oil, cinnamon, vanilla extract and salt; toss well to coat
  • 5 Spread evenly between the two baking sheets; bake (upper and lower racks) for 15 minutes, rotating the sheets top to bottom and front to back halfway through
  • 6 Remove from the oven and immediately divide the golden raisins and dried cherries between the two baking sheets, if using, stirring them in well so the hot granola plumps the fruit
  • 7 Cool thoroughly before storing in an airtight container

This is my favorite granola recipe adapted from the joy of baking website. It's not too sweet, and tastes great with a variety of nuts and dried fruit. Makes a great gift!

Number Of Ingredients 9

3 cups old fashioned oats
1/2 cup shredded coconut (sweetened or unsweetened)
1 cup nuts, chopped (I like a mixture of almonds, pecans, cashews, and sunflower seeds)
1/2-1 teaspoon cinnamon (I use 1 teaspoon)
1/4 teaspoon salt
2 tablespoons vegetable oil
3 tablespoons honey
3 tablespoons maple syrup
1 cup dried fruit (I like a mixture of cranberries, raisins, chopped apples and apricots)

Steps:

  • Preheat oven to 300 degrees.
  • Line a baking sheet with parchment paper.
  • Combine rolled oats, coconut, nuts, cinnamon, and salt.
  • In a separate bowl stir together oil, maple syrup and honey.
  • Pour liquid mixture over the dry ingredients and stir together.
  • Spread onto the prepared baking sheet and bake for approx 20-25 minutes (stirring occasionally).
  • The longer you bake it the crunchier the granola will be. It may still be sticky when it comes out of the oven, but it will become crisp and dry as it cools.
  • Place baking sheet on a wire cooling rack.
  • Once cooled, mix in the dried fruit and store in an airtight container or plastic bag in the refrigerator.
  • It will keep for several weeks.
