8 slices thick-cut bacon
1/3 cup pure maple syrup, plus extra for drizzling
1 cup pecans, chopped

Steps:

  • Line a rimmed-baking sheet with foil and place a wire rack inside.
  • Dredge the bacon in the maple syrup and lay out on the wire rack.
  • Press finely chopped pecans into surface.
  • Bake at 400 degrees for 25-30 minutes.
  • Drizzle a small amount of additional maple syrup over the top and let cool for 5 minutes.

Steps:

  • Position wire racks on 2 rimmed baking sheets. Lay 1 pound bacon in a single layer on the racks and bake 7 minutes at 375 degrees F. Brush with maple syrup and continue baking until caramelized, about 25 minutes, flipping, brushing with syrup and seasoning with pepper every 5 minutes. Let cool 5 minutes on the racks.

  • Preheat oven to 375°. Place bacon in a single layer in a foil-lined 15x10x1-in. baking pan. Bake until lightly browned, 16-18 minutes., Remove bacon from pan. Discard drippings from pan, wiping clean if necessary., In a shallow bowl, mix remaining ingredients. Dip both sides of bacon in brown sugar mixture, patting to help coating adhere; return to pan., Bake until caramelized, 8-10 minutes longer. Remove immediately from pan.

Steps:

  • Preheat the oven to 350 degrees F.
  • Spread the pecans in a shallow baking dish. Brush the top of the bacon slices with maple syrup. Press the bacon into the pecans and lay the slices on a wire-rack-fitted sheet tray. Bake until crisp and golden, 25 minutes.

1/2 cup light brown sugar, lightly packed
1/2 cup chopped or whole pecans
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1/8 teaspoon ground cayenne pepper
2 tablespoons pure maple syrup
1/2 pound thick-sliced applewood-smoked bacon (such as Nodine's)

Steps:

  • Preheat the oven to 375 degrees F. Line a sheet pan with aluminum foil (for easy cleaning) and place a wire baking rack on top.
  • Combine the brown sugar and pecans in a food processor and process until the pecans are finely ground. Add the salt, black pepper and cayenne pepper and pulse to combine. Add the maple syrup and pulse again to moisten the crumbs.
  • Cut each bacon slice in half crosswise and line up the pieces on the baking rack without touching. With a small spoon, evenly spread the pecan mixture on top of each piece of bacon, using all of the mixture. Bake for 25 to 30 minutes, until the topping is very browned but not burnt. If it's underbaked, the bacon won't crisp as it cools.
  • While it's hot, transfer the bacon to a plate lined with paper towels and set aside to cool. Serve at room temperature. (The caramelized bacon can be made early in the day and stored at room temperature.)

400 g (14oz) pecan halves
200 g (7oz) streaky bacon
1 tsp fresh rosemary (finely chopped )
1 tsp chilli flakes
1/3 cup maple syrup
2 tsp olive oil

Steps:

  • Preheat the oven to 180°C/350°F.
  • Cook the bacon until crisp and golden.
  • Remove the bacon from the heat and allow to cool to room temperature. Chop into pieces approximately half the size of the nuts.
  • Toss pecans, crispy bacon, maple syrup, finely chopped rosemary and chilli flakes in a mixing bowl and mix well.
  • Stir in the olive oil. Transfer the nut mixture to a parchment paper lined rimmed baking sheet in a single layer.
  • Place the pecans in the oven and allow to roast for 10-15 minutes until golden brown and fragrant.
  • Remove from the oven then allow to cool for 10 minutes and serve.
