Warm and soft pull-apart bread filled with raisins, brown sugar and of course, lots of cinnamon. Topped with sticky sweet glaze. These rolls are divine and perfect for breakfast, dessert, or any time of the day!

1 cup 2% milk
6 tbsp unsalted butter
1 large egg (room temperature)
3 3/4 - 4 cups all-purpose flour
3 tbsp sugar
1/2 tsp salt
1 tbsp instant yeast
3/4 cup raisins
butter (for greasing bowl)
1/2 cup salted butter (softened, NOT melted)
1/2 cup brown sugar
2 tbsp cinnamon powder
2 oz cream cheese (softened)
3/4 cup powdered sugar
1/4 cup 2% milk
1/4 tsp pure vanilla extract

Steps:

  • Warm milk to 90-100 degree F. Melt butter to 90-100 degree F. Crack and beat up a room temperature egg. Combine all ingredients into a bowl or a standing mixer.
  • Add dry ingredients to mixture: flour, sugar, salt, yeast and raisins. Use a dough hook to mix the dough if using a standing mixer. Or knead the dough with hand.
  • Dough should not be sticky. When touch with fingers, a large clump of dough should not stick to fingers. Add more flour to dough if dough is sticky. A lot of factors (humidity, temperature, size of egg etc) can make the dough more or less wet, so the amount of flour needed may differ.
  • Lightly butter large bowl (bowl must be twice or three times larger than dough) and bring dough to bowl. Cover with cloth, and let it rise for an hour, preferably in a warm spot.
  • Dough should rise to ~2-3 times its original size.
  • When dough has risen, use a rolling pin to flatten out dough into a 15"x12" rectangle.
  • In a bowl combine softened (not melted) salted butter, brown sugar and cinnamon. Mix well.
  • Spread cinnamon filling evenly onto the flattened dough.
  • Gently roll dough from the long side into a long tube.
  • Using a serrated knife, cut tube into 12 cinnamon rolls. Each roll will be a little over an inch thick.
  • Place rolls onto a 9"x13" casserole dish lined with parchment paper, or greased with butter.
  • Cover casserole dish with a towel and let rolls rise again for 30-45 minutes.
  • Preheat oven to 350 degrees F.
  • Remove towel. Cinnamon raisin rolls should be slightly bigger in size. Bake in oven for 22-25 minutes.
  • While rolls are baking, make the glaze by combining all the ingredients under "Icing/glaze" using a hand mixture or a whisk. Add more cream cheese to make thicken the glaze and add more milk to thin out the glaze based on your preference.
  • When rolls are done, let it cool for 10-15 minutes. Drizzle glaze onto the rolls.
  • Serve and enjoy!

11 to 12 cups all-purpose flour
3/4 cup sugar
3 packages (1/4 ounce each) active dry yeast
3 teaspoons salt
3-1/2 cups water
1 cup canola oil
3 large eggs
FILLING:
1/4 cup butter, melted
1 cup sugar
3 teaspoons ground cinnamon
1 cup chopped pecans
1 cup raisins
FROSTING:
1/4 cup butter, softened
3-3/4 cups confectioners' sugar
1 teaspoon vanilla extract
1/4 teaspoon lemon extract
3 to 4 tablespoons water

Steps:

  • In a very large bowl, combine 8 cups flour, sugar, yeast and salt. In a large saucepan, heat water and oil to 120°-130°. Add to dry ingredients; beat just until moistened. Add eggs; beat until smooth. Stir in enough remaining flour to form a soft dough (dough will be sticky)., Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Cover and let rest for 15 minutes., Turn onto a lightly floured surface; divide in half. Roll each half into a 24x15-in. rectangle. Brush with butter to within 1/2 in. of edges. Combine sugar and cinnamon; sprinkle over dough. Sprinkle with pecans and raisins. , Roll up jelly-roll style, starting with the long sides; pinch seams to seal. Cut each into 24 rolls. Place rolls, cut side up, in four greased 13x9-in. baking pans., Cover and let rise in a warm place until nearly doubled, about 30 minutes. Bake at 425° for 18-22 minutes until golden brown. , In a small bowl, combine the butter, confectioners' sugar, extracts and enough water to achieve spreading consistency. Spread over warm rolls. 1 ½ cups milk
1 cup warm water (110 degrees F/45 degrees C)
2 (.25 ounce) packages active dry yeast
3 eggs
½ cup white sugar
1 teaspoon salt

¾ cup white sugar
2 tablespoons ground cinnamon

Steps:

  • Warm the milk in a small saucepan until it bubbles, then remove from heat. Let cool until lukewarm.
  • Dissolve yeast in warm water, and set aside until yeast is frothy. Mix in eggs, sugar, butter or margarine, salt, and raisins. Stir in cooled milk. Add the flour gradually to make a stiff dough.
  • Knead dough on a lightly floured surface for a few minutes. Place in a large, greased, mixing bowl, and turn to grease the surface of the dough. Cover with a damp cloth. Allow to rise until doubled.
  • Roll out on a lightly floured surface into a large rectangle 1/2 inch thick. Moisten dough with 2 tablespoons milk. Mix together 3/4 cup sugar and 2 tablespoons cinnamon, and sprinkle mixture on top of the moistened dough. Roll up tightly; the roll should be about 3 inches in diameter. Cut into thirds, and tuck under ends. Place loaves into well greased 9 x 5 inch pans. Lightly grease tops of loaves. Let rise again for 1 hour.
  • Bake at 350 degrees F (175 degrees C) for 45 minutes, or until loaves are lightly browned and sound hollow when knocked. Remove loaves from pans, and brush with melted butter or margarine. Let cool before slicing.

1 package (1/4 ounce) active dry yeast
1/2 teaspoon plus 1/4 cup sugar, divided

5 cups all-purpose flour

2 1/4 teaspoons yeast
1 teaspoon sugar
1/2 cup lukewarm water
3/4 cup room temperature/lukewarm unsweetened non-dairy milk ((I use almond))
1/2 cup oil
3/4 teaspoon salt
1 teaspoon ground cinnamon
1/4 cup sugar
3 1/2 to 4 cups all-purpose flour
1/2 cup brown sugar
2 teaspoons ground cinnamon
2 tablespoons melted coconut oil
1/2 cup raisins
1 apple (, chopped small and thin (I use a Gala apple))

Steps:

  • In your stand mixer bowl, add the yeast, 1 tsp of sugar, and lukewarm water. Let stand for a few minutes.
  • When the yeast has foamed up, add the room temperature/lukewarm milk, oil, salt, ground cinnamon, sugar and 1 cup of flour. Mix with a spoon to combine.
  • Put stand mixer bowl in place, add 2 more cups of flour and using the dough hook, allow the mixer to knead.
  • If the dough is sticky, add flour 1/2 cup at a time.
  • Let mixer knead dough for about 4 minutes and until it is no longer sticky.
  • Remove dough from mixer bowl and oil the inside lightly. Place dough back in bowl, cover with a towel and let it sit in a warm spot until it has doubled in size, about 1 hour.
  • After the hour has passed, punch the dough down and let it sit for a few minutes while you prepare the pan and filling.
  • Line an 9" x 13" pan with parchment paper. Allow an overhang on each side so they can be easily removed from the pan when done.
  • Slice apples into 3/4" pieces (see images above to get an idea of how they should look).
  • Prepare raisins (see tip above).
  • In a small bowl, mix the brown sugar and the cinnamon.
  • Lightly flour your work surface, stretch and roll your dough into a rectangle that is approximately 12" x 18".
  • Brush melted coconut oil over the entire surface.
  • Sprinkle brown sugar/cinnamon mixture onto dough.
  • Sprinkle raisins and then apples onto the dough.
  • From the long side, firmly roll the dough. Roll slowly to ensure it is tight as can be.
  • Pinch the entire length of the seam to seal and turn the entire roll seam side down so it's at the bottom.
  • Slice off an inch of dough from each end.
  • Slice the roll into 12 slices.
  • Place each slice into the parchment lined pan. It's OK if they are close together.
  • Cover with a towel and place in a warm spot. Let rise for 30 minutes.
  • Preheat oven to 375°F.
  • After the rolls have rested, bake for about 20 minutes or until they are lightly browned.
  • Remove from oven and let sit for a few minutes in pan.
  • Remove using parchment paper overhang and place on a cooling rack.

Steps:

  • Proof the yeast by dissolving the yeast, and the two teaspoons of sugar in the warm milk stir well and set aside for about 5 minutes.
  • In another large bowl, combine the flour, salt, Cinnamon, and sugar. Make a well at the center and add the proofed yeast, eggs, melted butter, and raisins. Mix until a soft and sticky dough is formed.
  • Cover the dough and leave to rest for 15 minutes
  • Transfer the dough to a lightly floured surface and knead for about 5 minutes until a soft, smooth, and elastic dough is formed.
  • Divide the dough into twelve pieces. Use your fingers to flatten it out and roll it up tightly (as you would roll up a mat and place the rolls on a parchment-lined baking tray.

16 ounces loaf frozen bread dough, thawed
3 tablespoons butter, melted and divided
1/2 cup light brown sugar, packed
2 teaspoons cinnamon
3/4 cup raisins
1/2 cup powdered sugar

2 -3 teaspoons milk

Steps:

  • Roll dough out to an 18x8 inch rectangle on a floured surface.
  • Brush dough with 2 Tbs. melted butter.
  • Combine brown sugar, 2 tsp cinnamon and raisins. Sprinkle over dough leaving 1/2 inch border on sides.
  • Roll up long side of dough jelly roll fashion. Pinch seam to seal.
  • Cut dough into 12 1 1/2 inch slices.
  • Brush a round baking pan with remaining butter. Place rolls cut side down in pan. Let rise in warm place till doubled, 45 minutes.
  • Bake 22-25 minutes at 350 degrees. Immeadiately turn onto serving platter.
  • Combine powdered sugar and cinnamon, add just enough milk to make a thick glaze. Drizzle over rolls.

RAISIN CINNAMON ROLL WREATH

Perfume the house and decorate the table with this whimsical wreath made of buttery, sweet cinnamon rolls. Arranging the rolls into a ring makes it easy to tear away individual servings. The extra protein in bread flour yields a sturdier dough that's easier to shape, but all-purpose flour works too. If you assemble these a day ahead and refrigerate them overnight before baking them the next morning, be sure to let the rolls rise three-quarters of the way before placing them in the fridge. A few hours before baking, allow them to come to room temperature on the counter. Have fun, and complete the wreath decoration with dehydrated orange wheels, cinnamon sticks, sugar-dusted cranberries or even a red ribbon bow.

  • Prepare the dough: In the bowl of a stand mixer fitted with the dough hook attachment, combine the flour, granulated sugar, yeast and salt. Toss with your hands to mix.
  • In a small saucepan, melt the butter over medium heat. Once it's melted, add the milk and remove from the heat. The mixture should register 125 to 130 degrees on an instant-read thermometer, so let it cool or warm it as needed. It should feel warm to the touch, but not be hot. Pour the warmed milk mixture into the flour mixture, along with the beaten eggs. Turn the mixer to medium-low speed, and knead until the flour has been fully incorporated and you're left with a smooth, supple dough that's firm to the touch, about 5 minutes. (When you press it with your thumb, the dough should spring back gradually.)
  • Gather the dough and shape it into a round ball in your hands, then transfer to a large, lightly buttered bowl, turning over a couple times to coat with the butter. Cover the bowl tightly with plastic wrap or a damp kitchen towel and let rise in a warm place until doubled in size, about 1 hour.
  • While the dough is rising, prepare the filling: Place the raisins in a large heatproof bowl and cover with boiling water. Allow to sit for 10 minutes to plump, then drain, and return to the bowl. Add the almond extract and toss with a spoon to coat. Set aside to cool, about 20 minutes.
  • Meanwhile, in a medium bowl, combine the almond flour, brown sugar, cinnamon and salt mixing with a fork or your hands to remove any clumps. Set aside.
  • Fill and assemble the dough: Lightly flour a clean working surface, and a large baking sheet lined with parchment paper nearby. Cut the risen dough in half with a pair of kitchen shears. Place one half of the dough on the floured surface, keeping the other half covered in the bowl. Lightly flour a rolling pin and roll the dough out to a 12-by-9-inch rectangle (about 1/4 inch thick), picking up the dough to stretch and turn it with your hands to make the edges as straight and even as possible. Spread 4 tablespoons of butter evenly over the entire surface using the back of a spoon. Evenly sprinkle over half the almond mixture, spreading with your hands to cover every inch. Firmly pat the mixture down to help it adhere to the butter. Evenly sprinkle over half of the raisins, pressing down firmly to help keep them in place.
  • Starting with one of the longer edges, tightly roll the dough into a log ending with the seam side down on the counter pressing the log down firmly to help seal the seam closed. The log will feel very stuffed. Wipe down and re-flour the work surface, then repeat with the other half of the dough and the remaining 4 tablespoons butter, almond mixture and raisins.
  • Carefully transfer the two rolled logs, seam side down, to the lined sheet pan and arrange together to form an oval or circle with their ends barely touching. Using kitchen shears with the point of the shears facing down toward the counter, cut slits into the ring roughly 1 inch apart, being careful not to cut all the way through the ring by leaving a 1/2 inch dough still attached at the bottom. One by one, lean every other rolled piece outward away from the center of the ring, creating a staggered look. Make any final adjustments to the shape that you like, turning some rolls up slightly to create air between them and filling out the baking sheet, being sure to keep a rough circular or oval shape.
  • Loosely cover the entire pan with plastic wrap and allow it to rest on the counter until slightly puffed, 30 to 40 minutes. (At this point, you can refrigerate the dough overnight: Wrap the entire pan of slightly proofed rolls very well in plastic wrap, being sure not to squish the rolls, but ensuring the wrapping is airtight. Chill for up to 12 hours. Remove the pan from the fridge and place them on the counter for an hour or so before you're ready to bake them, so they come to room temperature.)
  • Heat the oven to 350 degrees. In a small bowl, stir the milk and the granulated sugar with a spoon until the sugar dissolves. Uncover the risen rolls. Using a pastry brush, brush the tops of the rolls with the milk wash.

  • When the rolls are almost done cooling, make the icing: In a medium bowl, using a fork, mix the cream cheese and butter.
