WHOLE-GRAIN HERBED GARLIC BREAD

Whole-Grain Herbed Garlic Bread image

Provided by Food Network Kitchen

Categories     side-dish

Time 1h15m

Yield 4 servings

Number Of Ingredients 7

1/2 head garlic (horizontally split)
2 teaspoons olive oil
2 tablespoons chopped fresh parsley
2 teaspoons chopped fresh thyme
One 4-ounce whole-grain demi baguette or hoagie roll, halved lengthwise
1 1/2 tablespoons finely grated Parmesan
Kosher salt

Steps:

  • Preheat the oven to 375 degrees F. Place the garlic on a double-thick square of aluminum foil, drizzle with 1/2 teaspoon of the oil and fold up the foil to enclose the garlic securely. Place the garlic directly on the oven rack and bake until it is golden brown and meltingly soft, about 1 hour. Unwrap and set aside until cool enough to handle, about 5 minutes.
  • Combine the parsley, thyme and remaining 1 1/2 teaspoons olive oil in a small bowl. Remove the roasted garlic cloves from the white papery husks with the tip of a butter knife and place them in the bowl. Mash with a fork until smooth and spreadable. Spread the mixture evenly over the bread halves and sprinkle with the Parmesan and salt to taste. Place on a baking sheet and broil (about 6 inches from the heat source) until the top is just browned, about 2 minutes. Cut into 4 pieces and serve warm.

HERBED WHOLE GRAIN BREAD OR ROLLS

Herbed Whole Grain Bread or Rolls image

A high-fiber, nutritious, delicious alternative to mass-produced 'empty' bread, one that goes extremely well with salads, ethnic foods, grilled meats, and for gourmet sandwiches when made into rolls or sub/French rolls. I've experimented with dozens of variations of herbs and flour mixtures, and this one works great 'every time', so to speak.

Categories     Yeast Breads

Time 1h30m

Yield 2-4 medium or large loaves, 6-8 serving(s)

Number Of Ingredients 14

1 cup rye flour
1 cup whole wheat flour
4 -6 cups unbleached white flour
1 egg
1 cup water
1 cup whole milk
1 teaspoon salt
1/2 ounce dry active yeast
1/2 cup solid shortening
1 tablespoon sugar
3 teaspoons dried parsley
1 teaspoon thyme
1 teaspoon rosemary
2 teaspoons dried chives

Steps:

  • warm milk, water, shortening, sugar, and salt together in either a pan on the stove or a food processor in the microwave until it is very warm to the touch, but not hot. (if you can handle it/touch it without harming yourself, it's about right to hatch yeast).
  • stir in or process wheat flour and rye flour until well mixed and let stand five minutes to absorb moisture. (It's very important to allow this to stand for five minutes so that these high-fiber grains absorb as much moisture as they'll need to in order to prevent dry/grainy bread later).
  • blend in egg.
  • stir in or process *gently* the yeast and allow it to sit for ten minutes to soften.
  • Add small batches of white flour and process well until well incorporated until a manageable 'non-clinging' dough is formed. Do not add until stiff or dry.
  • Knead gently until semi-smooth and it holds its shape together.
  • Grease large 2 quart bowl with butter or shortening, press dough down into the greased bowl, then turn right side up and cover with a warm damp towel and let rise 20 minutes.
  • Knock air out of risen dough and shape into 4 small to medium loaves or two large loaves; grease four medium bread or two large bread pans. Press loaves down into greased pans, turn right side up, and cover again with warm damp towel. Let rise until double in bulk.
  • Bake large loaves or baguettes for 30 minutes at 350 degrees.
  • Bake medium loaves at 375 degrees for 30 minutes.
  • Bake bread rolls at 400 degrees for 25-30 minutes.
  • Bake French rolls at 375 degrees for 30 minutes.
  • When bread is browned on top and crust is browned, remove from pans, brush immediately with butter, and let cool. Brush again with butter when cool enough to handle with hands. (At this point, I usually take all my fresh-washed pans and put them back into the warm oven upside down to dry and prevent damage to my pans).

WHOLE WHEAT ZUCCHINI HERB BREAD-BREAD MACHINE

Whole Wheat Zucchini Herb Bread-Bread Machine image

This is a very good whole wheat zucchini yeast bread. The zucchini blends right into the dough, providing half of the moisture and subtle flavor. The bread is so light that a 1 1/2 pound loaf recipe will be the same size as a 2 pound loaf. We love this bread. Enjoy.

HEALTHY WHOLE WHEAT PITA BREAD (NO OIL OR SUGAR)

Healthy Whole Wheat Pita Bread (No Oil or Sugar) image

Just 4 ingredients...and the salt is optional! Please note that the cooking time includes a 30 minute rising. The kneading times given are for an electric mixer (I use my Bosch), so it will take a little longer if you do it by hand. You can easily turn these into herbed pitas by simply adding in some of your favorite herbs (fresh or dried) while you're kneading the dough. EDITED TO ADD: You need to add only the amount of flour necessary to clean the sides of the bowl. So, you might not need all of the flour listed. Also, this is a flatbread, so it will not rise a lot - not at all like regular yeast bread. It is also important to preheat the oven and just before you put the pitas in, flip them over. That is what causes them to puff. This recipe works very well, we use it all of the time and love it! But, it is one of those that really needs to be followed step by step. You're welcome to zmail me if you have any trouble!!

Categories     Yeast Breads

Time 55m

Yield 10 pitas

Number Of Ingredients 4

4 cups whole wheat flour (or 2 cups whole wheat flour and 2 cups all-purpose flour)
1 tablespoon dry yeast
1 1/4 cups warm water (120-130F degrees)
1/2 teaspoon salt (optional)

Steps:

  • Preheat oven to 500°F.
  • Sift together 2 cups of flour and the yeast.
  • Add water and salt and mix well.
  • Gradually add in the remaining flour just until the dough begins to clean the sides of the bowl. Once this happens, stop adding flour (so, you might not use all the flour the recipe calls for.).
  • Knead the dough for about 4 or 5 minutes, or until dough is smooth and elastic. (While you're kneading, you can get creative and add in some herbs or spices, but only if you want to do that). Be careful not to over-knead the dough.
  • Form dough into 10 balls.
  • On a floured surface, roll each ball into a 5-6 inch circle, about 1/4 inch thick. (Be sure to sprinkle a little flour on both sides to prevent sticking).
  • Place on a non-stick baking sheet and allow to rise 30 minutes, or until slightly raised.
  • Just before you place the pan in the oven, flip each pita over on its other side.
  • Bake on the bottom rack of the oven for 5 minutes. (The instant hot heat will help them puff up).
  • When the pitas come out of the oven they will be hard, but they will soften as the cool.
  • Store them, while they're still warm, in plastic baggies or an airtight container.
  • Cut the pitas in half crosswise and stuff with your favorite fillings (beans and rice, taco fixings, thick stews, curries - anything goes).
  • Pitas can be reheated in a 350°F oven or in the microwave.
