The natural sweetness of carrots goes well with maple flavors in this easy side dish.

1/4 cup chicken broth
1/4 teaspoon salt
2 lb ready-to-eat baby-cut carrots
1/4 cup real maple or maple-flavored syrup
2 tablespoons butter or margarine
1/4 cup coarsely chopped pecans

Steps:

  • In 12-inch skillet, heat broth and salt to boiling over high heat. Add carrots; reduce heat to medium. Cover; cook 10 to 12 minutes or just until crisp-tender. Drain if necessary.
  • Add syrup and butter to carrots in saucepan. Cook over medium-high heat 3 to 4 minutes, stirring frequently, until carrots are glazed. Sprinkle with pecans.

Sunny's Easy Maple and Lemon Pan-Roasted Carrots image

1/2 cup maple syrup
2 tablespoons salted butter, melted
Zest of 1 lemon plus 2 tablespoons fresh lemon juice
1/2 teaspoon red chile flakes
Kosher salt
2 tablespoons olive oil
1 1/2 pounds rainbow carrots, scrubbed, stems trimmed and halved lengthwise
Kosher salt and freshly cracked black pepper
Flakey salt, for garnish
Chopped fresh Italian parsley or chopped carrot greens, for garnish

Steps:

  • For the glaze: In a medium bowl, whisk the maple syrup, butter, lemon zest and juice, chile flakes and a pinch of kosher salt.
  • For the carrots: In a large saute pan on medium to medium-high heat, add the olive oil and when it begins to swirl, add the carrots cut-side down and season with kosher salt and pepper. Cook to sear and caramelize, 5 to 10 minutes, then flip. On the flip, add the glaze and allow it to bubble and reduce, about 2 minutes. Pour everything onto a serving platter. Top with a sprinkle of flakey salt and chopped parsley or carrot greens.

¼ cup butter
⅓ cup maple syrup

Steps:

  • Place carrots into a pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, 15 to 20 minutes. Drain and transfer carrots to a serving bowl.
  • Melt butter in a saucepan over medium-low heat. Stir maple syrup into melted butter and cook until warmed, 1 to 2 more minutes. Pour butter-maple syrup over carrots and toss to coat; season with salt and pepper.

1kg carrot , quartered
1 tbsp olive oil
4 tbsp maple syrup
25g pecans , chopped

Steps:

  • Heat oven to 220C/200C fan/gas 7. You can do this while the turkey is resting. Place the carrots on a large baking tray, toss with the oil and plenty of salt, then spread out in an even layer. Cover with foil and roast for 10 mins, then remove the foil and cook for 20 mins more.
  • Drizzle with the syrup and scatter over the nuts, then return to the oven for a final 10 mins until the carrots are soft and golden and the pecans toasted.

2 lbs baby carrots
1 3/4 cups low sodium beef broth
1/2 cup maple syrup
1/4 teaspoon salt
1/4 teaspoon fresh ground pepper
1/2 cup roasted pecan, chopped

Steps:

  • In a non-stick skillet melt butter. Add carrots and stir to coat with butter. Add broth through pepper. Bring to a boil, cover and cook for 6 minutes.
  • Uncover and cook, stirring often until the carrots are tender and the liquid has reduced to a glaze (about 12 to 15 minutes).
  • Stir in pecans and serve.
  • To reheat if prepared in advance, add 1/4 cup water and heat gentley until water evaporates.

  • Place a rack in the center of the oven and preheat to 425 degrees. Trim both ends of each carrot and cut in half. Split the bottom (the thinner end) in half lengthwise, and cut the top (the thicker end) into quarters lengthwise. (Essentially, you are making the whole carrot into equally sized carrot sticks.)
  • Place the carrot sticks onto a large baking sheet and drizzle over the olive oil. Sprinkle the carrots with salt and toss the carrots until completely and evenly coated in the olive oil and salt. Shake the carrots into a single layer and cover the baking sheet with foil.
  • Bake 10 minutes, then remove foil and cook 10–15 minutes more, turning the carrots once halfway through. Remove from the oven, drizzle with maple syrup and sprinkle with chopped pecans. Return the pan to the oven for an additional 5 minutes or until the carrots have reached the desired level of tenderness and the pecans are nicely toasted.
  • Transfer the carrots to a serving dish, scooping up the excess syrup and nuts from the roasting pan and spooning it over the carrots. Enjoy!
