Steps:
- Sprinkle pork chops with thyme, salt and pepper. In a large skillet, brown chops in oil. Remove and keep warm., Add remaining ingredients to skillet. Bring to a boil; cook until liquid is reduced by half., Return pork chops to skillet. Reduce heat; cover and simmer until meat is tender, 10-12 minutes, turning once. Serve with sauce.

MAPLE-GARLIC MARINATED PORK TENDERLOIN

- Combine mustard, sesame oil, garlic, pepper, and maple syrup. Place pork in a shallow dish and coat thoroughly with marinade. Cover, then chill in the refrigerator at least eight hours, or overnight.
- Preheat grill for medium-low heat.
- Remove pork from marinade, and set aside. Transfer remaining marinade to a small saucepan, and cook on the stove over medium-low heat for 5 minutes.
- Brush grate with oil, and place meat on grate. Grill pork, basting with reserved marinade, for approximately 15 to 25 minutes, or until interior is no longer pink. Avoid using high temperatures as marinade will burn.

MAPLE-DIJON-MARINATED PORK CHOPS
Don't poke holes in the meat while marinating, as this allows juice to seep out during cooking, and never reuse marinade that has been in contact with raw meat without first boiling it for a few minutes to kill any bacteria.

- In a large resealable plastic bag, combine marinade and pork chops. Marinate for at least 1 hour and up to 4 hours.
- Preheat a grill or grill pan to medium-high heat. Remove pork chops from bag, and discard marinade. Grill pork chops until the internal temperature reaches 160 degrees on an instant-read thermometer, 5 to 6 minutes per side.
PORK TENDERLOIN WITH MAPLE PECAN MARINADE
This can be made on the grill or broiled in the oven, I most always prepare 4 pork tenderloins so I will have leftover pork for the following day, sliced thinly served on crusty buns as sandwiches topped with BBQ sauce and chopped onions, plan ahead the pork needs to marinade for 8 hours or up to 24 hours --- this is very good!

- Cut slits in the pork tenderloins to absorb more marinade, and place in a shallow glass pan.
- Top with onions and garlic (if using) with hands, distribute the onions and garlic over the pork.
- In a separate bowl combine olive oil, maple syrup, honey, pecans, mustard, chili powder, thyme, salt and red pepper flakes; mix to combine.
- Pour over pork and refrigerate for a minimum of 8 hours or overnight.
- When ready to cook, place the pork on the grill or broil in the oven (reserve the marinade).
- If grilling, cook the tenderloins on a medium-low heat (covered grill) for about 10 minutes on each side, or until done.
- Let the tenderloin rest for 15 minutes before slicing.
- *NOTE* When the pork is on the grill heat the marinade, and simmer for about 10-15 minutes, and serve over the tenderloins.

- Stir together the brown sugar, pepper, salt, onion powder, and paprika in a bowl. Coat the pork chops with this mixture on both sides. Cover and place in the refrigerator 6 hours to overnight.
- Place oven rack in it's highest position. Set oven to Broil.
- Place pork chops onto a slotted, two-piece broiler pan. Stir together the maple syrup and spicy mustard. Broil pork chops for 5 minutes, then turn over, and broil for another 5 minutes. Brush the tops with the mustard glaze, and cook for 1 minute. Turn the chops over, brush again, and broil for an additional minute, or until cooked to your desired degree of doneness. Remove pork chops to serving plates and top with additional glaze, if desired.

- Preheat oven to 400 degrees F. Season pork chops with salt and pepper. Combine remaining ingredients (olive oil, maple syrup, dijon mustard, garlic and thyme) in a large bowl and mix to combine. Add pork chops and rub marinade evenly over flesh.
- Heat a large oven-safe skillet over medium-HIGH heat. If using a cast-iron, add a tiny dab of butter or coconut oil. Once hot, add pork chops and cook for ~5-6 minutes, until flesh has caramelized. Flip on opposite side and cook for another 1-2 minutes. Place skillet in oven and bake for ~5 minutes. Remove from oven, slice into pork to assure flesh is no longer pink. Transfer to plate and top with juices from pan. Add additional thyme, if desired, and serve!
