WHITE MAPLE BROWNIES

These are so wonderful and highly addictive. Cutting them into smaller portions or freezing some help with portion control.

BROWNIES
1 c sifted flour
1/2 tsp baking powder
1/8 tsp baking soda
1/8 tsp salt
1/2 c walnuts chopped
1/3 c unsalted butter, melted
1 c brown sugar, packed
1 large egg, lightly beaten
1 Tbsp pure vanilla extract
1/2 c white chocolate or vanilla baking chips
FROSTING
1/4 c maple syrup (any good kind)
1/4 c unsalted butter
1/3 c brown sugar, packed
1 pkg (8oz) cream cheese, softened
1/2 tsp vanilla extract or maple extract/flavoring if you prefer

Steps:

  • 1. Combine flour, baking powder, baking soda, and salt. Add nuts, mix well, and set aside. Preheat oven to 350° F.
  • 2. Melt 1/3 cup butter, add 1 cup brown sugar, and stir well. Add egg and vanilla and mix well. Gradually combine with flour mixture, mixing well. Fold in white chocolate or vanilla baking chips. Pour into a 9-inch square pan and bake at 350° F for 20-25 minutes.
  • 3. To make the Sauce: Combine the syrup and butter, cook over low heat until butter is melted. Stir or gently whisk in brown sugar until dissolved and remove from heat. Add in cream cheese and vanilla or maple extract whisk until smooth. Return to heat until it reaches desired consistency.

1-1/3 cups heavy whipping cream
3 large egg yolks
1/2 cup packed brown sugar
1/4 teaspoon ground cinnamon
1/2 teaspoon maple flavoring
TOPPING:
1-1/2 teaspoons sugar
1-1/2 teaspoons brown sugar

Steps:

  • In a small saucepan, heat cream until bubbles form around sides of pan. In a small bowl, whisk the egg yolks, brown sugar and cinnamon. Remove cream from the heat; stir a small amount of hot cream into egg mixture. Return all to the pan, stirring constantly. Stir in maple flavoring., Transfer to three 6-oz. ramekins or custard cups. Place in a 6-qt. slow cooker; add 1 in. of boiling water to slow cooker. Cover and cook on high for 2 to 2-1/2 hours or until centers are just set (mixture will jiggle). Carefully remove ramekins from slow cooker; cool for 10 minutes. Cover and refrigerate for at least 4 hours., For topping, combine sugars and sprinkle over ramekins. Hold a kitchen torch about 2 in. above custard surface; rotate slowly until sugar is evenly caramelized. Serve immediately., If broiling the custards, preheat broiler and place ramekins on a baking sheet; let stand at room temperature for 15 minutes. Broil 8 in. from heat until sugar is caramelized, 3-5 minutes. Refrigerate until firm, 1-2 hours.

1 box (1 lb 2.3 oz) Betty Crocker™ fudge brownie mix
Water, vegetable oil and eggs call for on brownie mix box
1 teaspoon maple flavor
4 bars (1.75 ounces each) chocolate-covered peanut and maple candy, coarsely chopped
1/4 cup chocolate sundae syrup or regular chocolate syrup
2 cups Cool Whip frozen whipped topping, thawed
2 teaspoons maple flavor

Steps:

  • Heat oven to 350°F. Grease bottom only of 13x9-inch pan with shortening or cooking spray. Make brownie mix as directed on box, using water, oil and eggs and adding 1 teaspoon maple flavor. Spread batter in pan. Bake as directed on box. Cool completely in pan on cooling rack, about 1 hour.
  • Meanwhile, mix Maple Cream Frosting ingredients until well blended; refrigerate. Spread frosting over cooled brownies. Cover and refrigerate until serving.
  • Cut dessert into 4 rows by 3 rows. Sprinkle each serving with chopped candy bars; drizzle with syrup. Store covered in refrigerator.

1 cup pure maple syrup
2 eggs
1 cup butter (no substitutes)
1 cup brown sugar
2 cups flour
1 teaspoon baking powder
1 cup ground walnuts (measure first, then grind)

Steps:

  • Preheat oven to 350 degrees.
  • Grease and flour a 13x9"pan.
  • Cream together butter and brown sugar.
  • Beat in eggs until well mixed, and then beat in the maple syrup until blended.
  • Beat in flour and baking powder.
  • Mix in ground walnuts. ( Note: I don't like to grind the walnuts to powder - leave a few little nuggets for texture.).
  • Spread batter evenly in pan.
  • Bake at 350 degrees for 30 min., or until a wooden pick inserted in center comes out clean.
  • Cool and cut into squares. (How many depends on the size you cut them).

4 oz. (113g) 65% or higher dark chocolate, roughly chopped
10 tbsp (145g) unsalted butter, evenly cubed
3/4 c (150g) granulated sugar
1/2 c (118ml) pure maple syrup
1/2 tsp salt
1 tbsp espresso powder
2/3 c (55g) dutch process cocoa powder
2 (106-114g) large eggs, room temperature
3/4 c (90g) all purpose flour
2/3 c (75g) chopped pecans or walnuts, optional
2 oz. (57g) 65% or higher dark chocolate, melted
2 tbsp dutch process cocoa powder
2 tbsp (30ml) pure maple syrup
1-2 tbsp (15-30ml) room temperature milk, as needed

Steps:

  • Preheat the oven to 325 F (165 C). Move the middle rack to the lower third of the oven.
  • Line a 8x8" (22cm) pan with parchment paper along the bottom and two sides, creating a slight overhang on the two sides. This makes removing the brownies from the pan easier.
  • Place a small or medium pot filled with about 1" of water on the stove. Heat over medium heat to a gentle boil. Place a heat safe bowl on top of the pot, making sure the bottom of the bowl doesn't touch the water.
  • Place the chopped chocolate and butter into the heat safe bowl. Over medium high heat, allow the chocolate and butter begin to melt. Once each has started melting, stir to ensure even melting.
  • When the chocolate and butter mixture started melting, pour in the sugar, maple syrup and salt. Stir well to fully combine the ingredients. Continue stirring frequently to ensure all ingredients are melting evenly and are well combined.
  • Once the sweetened chocolate/butter mixture has fully melted, remove the bowl from the heat. Immediately, stir in the cocoa powder and espresso powder until well combined. Cool the mixture until warm, but not hot to the touch, about 10 minutes.
  • Pour the cooled mixture into the bowl of a stand mixer with paddle attachment. On low, beat in one egg at a time, waiting about 20-30 seconds before adding the next.
  • Scrape the sides and bottom of the bowl. Beat on medium low for an additional 30-60 seconds. The batter should be shiny and somewhat thick.
  • Sift in the flour. Beat on low to incorporate. Scrape the sides and bottom of the bowl as needed.
  • Beat on medium-low for an additional 1-2 minutes. The brownie batter should pull slightly away from the sides of the bowl. If the paddle is lifted, a ribbon of brownie batter should fold down into the batter.
  • If adding chopped nuts to the brownie batter, fold them in now.
  • Evenly pour/scoop the brownie batter into the prepared pan.
  • Bake at 325 F (165 C) in the lower third of the oven for 25- 40 minutes. The brownie is baked when the edges are set and slightly pulling away from the edges of the pan. The center will still be slightly underbaked. A toothpick inserted into the center will yield some moist crumbs.
  • Cool the brownie in the pan on a cooling rack for 30-45 minutes or until room temperature. Once the brownies are completely cooled, pour on the chocolate maple frosting.
  • In a small bowl, whisk together the melted chocolate with the cocoa powder, maple syrup and 1 tbsp milk. If needed, add 1-3 tsp. more milk until a pourable consistency is achieved.
  • Pour on top of the cooled brownies. Spread the frosting across the brownies.
  • Freeze the brownies in the freezer for 20-30 minutes to fully set the frosting.
  • Using the overhangs, remove the chilled and frosted brownies from the pan. Slice and enjoy!

MAPLE SYRUP CREME BRULEE

1/2 vanilla bean
1 small egg
3 large egg yolks
7 tablespoons Grade B maple syrup
4 tablespoons demarara sugar, for topping
6 (4-ounce) brulee molds

Steps:

  • Preheat the oven to 325 degrees F.
  • Pour the heavy cream into a non-reactive saucepan and place over medium heat. While the cream is heating, slice the vanilla bean in half lengthwise, using a sharp paring knife. Separate the seeds from the skin by scraping the bean with the knife. Place the seeds and skin in the heating cream. Scald the cream by heating it until bubbles start to form around the edge of the pan. Remove from the heat.
  • In a large mixing bowl, whisk together the whole egg, egg yolks, and maple syrup until well blended. Continue to whisk while slowly pouring the hot cream into the egg mixture and whisk until the mixture is smooth and homogenous in color. Pour the mixture through a fine-mesh sieve to remove the vanilla bean pieces and overcooked eggs. Your next step will be made easier if you strain the mixture into a large measuring cup with a spout.
  • Place the molds on a baking sheet with 1-inch-high sides. Fill the molds half-full with the custard and set the sheet in the oven (it?s much easier to transfer the sheet with the molds only half-full).
  • Now, finish filling the molds to the top. It is important to fill the molds to the top, as the custard will lose volume as it bakes. Traditionally, creme brulee is baked in a hot water bath to insulate the custard from the direct heat of the oven and to keep the eggs from cooking too fast, which would cause them to separate. Using hot water from the tap, pour enough water into the baking sheet to reach halfway up the sides of the molds. If you are using a convection oven, however, a water bath is not needed because the even circulation of the air insulates the custard from the direct heat.
  • In either case, baking time is approximately the same, about 40 minutes. When baked correctly, the custard should tremble slightly when gently shaken. If you detect any liquid under the skin, the custard is under baked. Put them back in the oven and shake them every 5 minutes or so until they are ready.
  • Remove the molds from the water bath and place on a cooling rack for 30 minutes. Then refrigerate for 2 hours (or for to 3 days) before serving; the custards will finish setting in the refrigerator. Let the water bath cool before removing it from the oven.
  • Preheat the broiler.
  • If condensation occurs during chilling, carefully blot with a paper towel to remove moisture. Place the molds on a clean baking sheet. Sprinkle 2 teaspoons of the sugar over the top of the custards. It is important to spread the sugar evenly; if it is too thick or too thin in places, the caramelization will not be even across the top. When the broiler is hot, place the sheet about 4 inches under the broiler and broil until the sugar is caramelized. Keep a close eye on the creme brulee during broiling. They are finished when they are light brown. Place each mold on a small dessert plate and serve immediately.
