- Preheat the oven to 400 degrees F.
- Place a baking rack on a sheet pan and arrange the bacon in 1 layer on the baking rack. Bake for 15 to 20 minutes, until the bacon begins to brown. Remove the pan carefully from the oven; there will be hot grease in the pan! Brush the bacon slices with maple syrup and bake for another 3 to 5 minutes, until the bacon is a warm golden brown. Transfer the bacon to a plate lined with paper towels and serve warm.
BAKED APPLES WITH BACON STREUSEL AND MAPLE CREAM
Macintosh apples are mounded with a sweet and savory streusel of oats, cinnamon and bacon and baked until tender and golden. And then drizzled with a maple cream.

- Preheat the oven to 350 degrees F. Put the oats, flour, sugar, cinnamon and bacon in a food processor and pulse until the bacon is finely chopped and the ingredients are well combined. Add the butter and pulse until incorporated and the topping starts to clump together.
- Mound clumps of the streusel on the cut-side of the apples and place in a small baking dish. Add about 1/2 inch water to the dish, and then bake until the apples are tender and the topping is golden brown and crisp, about 45 minutes (loosely cover with foil if the topping is getting too brown before the apples are cooked).
- Whisk the cream and maple syrup together. Serve the apples with the maple cream and garnish with mint if desired.

GRILLED CHEESE WITH APPLE AND BACON

- Spread dijon mustard on 4 slices country white bread. Top with sliced cheddar cheese, cooked bacon and sliced Granny Smith apple, then top with 4 more slices bread. Butter the sandwiches, then cook in a skillet over medium-low heat until the cheese melts and the bread is golden, about 3 minutes per side.
- Serve with Roasted Tomato Soup, recipe follows.
- Preheat the oven to 450 degrees F. Core and halve the tomatoes (leave the cherry tomatoes whole). Heat a flameproof roasting pan over medium-high heat. Drizzle with the 1/2 cup olive oil, then spread all of the tomatoes, the garlic and onions in the pan. Cook, stirring gently, until the garlic is browned, about 5 minutes. Season with salt and pepper. Transfer the pan to the oven and roast until the tomatoes are caramelized, 20 to 30 minutes.
- Remove the roasted tomatoes, garlic and onions from the oven and transfer to a large stockpot (set aside the cherry tomatoes for garnish). Add 3 cups chicken stock, the bay leaves and butter. Bring to a boil, then reduce the heat to medium and simmer until the liquid is reduced by one-third, 15 to 20 minutes. Remove the bay leaves.
- Add the basil to the pot. Use an immersion blender to puree the soup until smooth (or puree in a regular blender and return to the pot). Reduce the heat to low, add the heavy cream and adjust the consistency with the remaining 1 cup chicken stock, if necessary. Season with salt and pepper. Divide among bowls and top with the roasted cherry tomatoes; drizzle with olive oil.
MAPLE BACON CHICKEN
This is a great way to make delicious chicken quickly and with very few ingredients. It's my husband's favorite. This recipe is one of the results of many experiments with different ways of cooking low cost chicken meals when the price of beef went through the roof, and whole chicken was all we could afford. You can use your oven, counter top rotisserie, grill or campfire to make this. It's very easy.

- Preheat the oven to 375.
- Rinse the chicken, and remove the giblets. You can discard them, use them to make gravy for mashed potatoes or freeze them for later.
- Cut the apples into wedges, and sprinkle them with the Apple Pie Spice. Make sure you get the spice on every slice.
- Put the chicken into a roasting pan, and stuff it with the apples.
- Layer the Maple Bacon on top of the chicken, covering the enitire top of the chicken.
- Drizzle with half of the Maple Syrup, and set the other half aside for later.
- Cover and bake for 1-2 hours, depending on the size of your bird.
- Uncover and drizzle with the rest of the syrup.
- Put the chicken back in the oven, and set it to broil for about 10 minutes or until the top looks brown and the bacon looks done.
- Remove from the oven and serve hot with your favorite sides.

GRILLED MAPLE-CHIPOTLE BACON
If you've never grilled bacon before, you'll be amazed by the flavor! Not only does it save cleaning up a mess on the stove, the charred flavor is out of this world! Add to that the sweet-heat kick of maple and chipotle and you've got yourself quite the breakfast treat. You may just want to double the recipe! Using a leaner, thick-cut bacon will reduce chances of flare-ups.

- Preheat an outdoor grill for medium-high heat and lightly oil the grate.
- Combine maple syrup and chipotle powder in a small bowl.
- Place a disposable aluminum pan on the upper rack of your grill or over one burner on indirect heat.
- Place bacon strips directly on the hot grate and reduce heat to low. Grill bacon, turning frequently, until evenly browned and crisped to your liking, 4 to 6 minutes. Transfer cooked bacon to the prepared pan to keep warm.
- Return all cooked strips to grill and brush with maple-chipotle glaze on both sides and cook for 1 minute more. Serve immediately.

- Cook the bacon to preferred doneness; chop or crumble. Toss the bacon with the breadcrumbs, cheddar cheese, 1/4 cup of the BBQ sauce and onion until combined; set aside.
- Preheat the grill to medium-high. Cut the apples in half, corsswise. Use a melon baller to scoop out the seeds and create a hollow in each of the apple halves. Brush the apples with the remaining BBQ sauce; season with salt and pepper to taste.
- Stuff an equal portion of the filling into the hollow of each apple half; mound filling as needed,. Transfer to a well-greased grate. Grill for 5 minutes without moving. Turn off the burner directly under the apples and adjust remaining burners to low. Cook, with lid closed, for about 12 minutes or until apples are just fork tender.

- Preheat the oven to 400°F. Lay the bacon in an even layer in a 12” cast-iron skillet. Roast in the oven for 18-20 minutes, or until crispy. Transfer the bacon to a plate line with paper towels and let drain.
- To the bacon fat, add the shallots over medium heat on the stovetop. Saute for 2-3 minutes until beginning to caramelize. Add the sliced apples. Cook for about 8 minutes, stirring often, until tender.
- Add the maple syrup, thyme, rosemary, a good pinch of salt, and a few cracks of black pepper. Bring to a simmer. Reduce the heat to medium-low and simmer for about 5 minutes until the syrup has reduced and the apples have caramelized. Transfer the apples to a plate and wipe out the skillet.
- Combine the shredded cheddar and gruyere in a small bowl. Toss to combine. Assemble the sandwiches by laying out the slices of bread. Distribute the cheese between four of the slices. Top with the apples (reserve about ¼ cup). Cut the bacon strips in half and lay over the apples. Close with the remaining bread and press down firmly.
